Ingredients
1 3/4cupsblanched almond flour
1/4cupcoconut flour
2tablespoonssugar
1/4teaspoonsalt
1/2teaspooncloves
1/2teaspoonnutmeg
1/4cupcashew buttercan sub for any nut butter
1/4cupmaple syrup
1/4cupeggnog homemade or store-bought
1tablespoonsugarto coat
Instructions
In a large mixing bowl, combine the dry ingredients and mix well.
In a microwave-safe bowl or stovetop, heat your nut butter with your sticky sweetener until combined. Pour your wet mixture to the dry mixture and mix well. Add the eggnog until a thick batter is formed- If the batter is too thin, add a dash more coconut flour.
Using your hands, form into small microwave-safe balls. Roll balls in extra granulated sweetener and place on a baking tray or plate. Refrigerate for at least 10 minutes to firm up.
Notes
TO STORE: Bites need to be stored in the refrigerator in an airtight container. They keep well for up to four weeks. TO FREEZE: Place leftovers in a ziplock bag and store them in the freezer for up to 6 months.
