These chocolate oatmeal bars need just 5 ingredients to make and yield thick, chewy, and delicious bars that require no baking! Watch the video below to see how I make it in my kitchen!
Line an 8 x 8-inch baking dish or deep baking tray with parchment paper and set aside.
Add rolled oats into a large mixing bowl and set aside.
In a microwave-safe bowl or on the stovetop, combine the chocolate chips, peanut butter, maple syrup, and coconut oil, and heat until melted. Remove from microwave and whisk until completely incorporated.
Pour the chocolate/peanut butter mixture over the oats and mix until combined.
Transfer the mixture into the lined baking dish and refrigerate for at least 30 minutes to firm up. Remove and cut into bars.

Notes
Peanut butter sub: I've had success with almond butter and cashew butter.
Nut-free: Use sunflower seed butter or tahini.
Gluten-free: Use certified gluten-free rolled oats.
Leftovers: Bars keep at room temperature for up to one week, covered. They can be refrigerated for up to four weeks or in the freezer for up to 6 months.
