Start by preparing your mock graham cracker crust and refrigerate it while you prepare the filling.

In a small saucepan, add your coconut milk and allulose and heat until the allulose has dissolved.

Add the cooled milk/allulose mixture into a blender, along with the cashews, coconut oil and vanilla extract. Blend. Add the cream cheese and blend once more until everything is combined.

Transfer the filling into the refrigerated crust and place it in the freezer for three hours or overnight.

Remove it from the freezer, then slice it up and serve.
