These healthy no bake superfoods breakfast cookies are loaded with delicious ingredients and require no baking! A quick, easy and delicious recipe which takes less than 10 minutes to whip up and is packed with protein, fiber and healthy fats! It’s also naturally gluten-free, vegan, dairy-free and refined sugar-free!
It’s officially after Christmas now so we ALL need to go on a diet and lose all those pounds we gained on the 25th. We all need to do fasted cardio, eat romaine lettuce with mustard sauce and replace our milk in smoothies with diet coke. We then will replace our snacks with chewing gum and do 1000 burpees every hour, on the hour. Before we sleep, we’ll quote fitness idol ‘Kate Moss’ and say-
“Nothing tastes as good as skinny feels.”
The above paragraph, my friends is a load of rubbish. Let’s not even get started on that statement from Kate Moss either….
While many of us may have eaten a little extra on Christmas day, we need to remember it’s just ONE day a year (unlike our birthdays, which we can totally dedicate a week to, or if we’re being fancy here- An entire month!), and that straying away from your typical eats or exercise isn’t going to cause havoc.
While we may have enjoyed some delicious Christmas cookies the days leading up to Christmas on the day itself- It does NOT mean that they are now MIA until December 2016. Cookies for breakfast are going to be a staple in your diet and I’ll do everything in my

So which ‘superfoods’ did I pick?
Pumpkin seeds- Because I’m over canned pumpkin, but not their seedy counterparts.
Cranberries- Because Goji berries tried to steal their thunder.
Rolled oats- Because Ryan Gosling was quoted saying he ate oats for breakfast.
Shredded coconut- Because anything coconut clearly means it’s superior to everything out there.
Chocolate chips- Because my sister said in the movie ‘Legally Blonde’, the main character said that chocolate has endorphins and endorphins make you happy.
Please don’t judge my sister on her movie taste. She was deprived as a child.

These healthy no-bake superfoods breakfast cookies will become your new favorite breakfast and could not be any easier to whip up! They require just one bowl and ten minutes to some delicious, no bake cookies! These cookies are soft, chewy but firm and are packed full of the good stuff to keep you satisfied for hours- Protein, fiber and healthy fats! These healthy cookies are also suitable for those following a gluten-free, vegan and dairy-free lifestyle!
HACK! These no bake breakfast cookies are freezer friendly. I’d totally recommend you make a batch of them and freeze some for future breakfasts. The day you want to enjoy them, simply thaw in the fridge the night before or leave out the day of and voila- Breakfast in no time!
Make these healthy no bake superfoods breakfast cookies and repeat after me.
Nothing tastes as good as skinny……margaritas with a side of chips, guacamole and salsa.
- 4 cups gluten free rolled oats
- 1 cup smooth nut butter of choice (I used cashew butter)
- 1 cup brown rice syrup (can sub for honey/agave/maple syrup)
- 1 scoop protein powder (optional)
- pinch sea salt
- 1/4 tsp cinnamon
- 1/2 cup pumpkin seeds
- 1/4 cup dried unsweetened cranberries
- 1/4 cup dairy free chocolate chips
- 1-2 T unsweetened coconut flakes
- Line a large plate or baking dish with baking paper and set aside.
- In a large mixing bowl, combine the oats, cinnamon, sea salt and protein powder if using it and set aside.
- In a microwave safe bowl or stovetop, melt the nut butter with the brown rice syrup until fully combined. Pour the wet mixture into the dry mixture and mix until fully combined. Stir through the cranberries, pumpkin seeds and coconut flakes until fully incorporated.
- Using your hands, form into golf sized balls and place on lined plate/tray. Press firmly into a cookie shape and top with chocolate chips. Refrigerate for 30 minutes, or until firm.
- Cookies and freezer friendly and can be kept at room temperature.
