You won’t believe this delicious single-serve recipe has no butter, oil, grain flour or sugar- It tastes THAT good! Bursting with cherries and chocolate, this cake is naturally paleo, vegan, gluten free, sugar free and dairy free!
My sister and I have a negative childhood association with the infamous Black Forest Cake. In fact, we’d call it the ‘doom cake.’
In our (young and ridiculously naive) eyes, if either of us saw a Black Forest Cake at home, we’d know that one particular set of ‘family friends’ were coming over.
For some odd reason, whenever these family friends came over, we’d end up buying a Black forest cake to ‘celebrate’ because it was their favorite. While there was nothing wrong with the cake per se, the family members were another story.
These family friends of ours had two kids who were both a year older than Niki and I, respectively. When you first met these kids, you’d think they were laced in sugar and spice and everything nice. Pity that the sugar ended up being splenda and the spice was cayenne mixed with charcoal.
Some of their antics include but are not limited to-
- Mixing our crayola markers so that EVERY single one would have a black mark against it
- Pouring my mum’s perfume down the sink and blaming my sister (that was funny)
- Drawing moustaches on all the women in my Persian language book
- RESTARTING MY POKEMON GAME
- Telling my sister to put gum in her hair (that was funny)

The thing that frustrated us about them most was the perception they gave others- You’d seriously think they were model children who would actually wait until they were 13 to watch a PG13 rated movie. Every time they left our place, my sister and I would complain and then we’d get into trouble for their actions. We’d both give the remaining slices of black forest cake the stink eye I’d go back to starting Pokemon for scratch.
Wait, after it was returned a week later as punishment.
Luckily, we’d only ever have the ‘doom cake’ situation 2-3 times a year, and then once we grew a few years older, they kids stopped accompanying their parents because they were ‘studying’. Still, when you’re an impressionable young child, you can’t forget the past and seeing black forest cake just reminded us of moustaches on women and expensive perfume down the sink.
These days, we’ve matured and by matured, we realise that we should not associate
geese our family friends with delicious cake and perhaps find something more fitting like bird food. Black Forest Cake is one of the most delicious cakes for those who love flavor and texture- Tart cherries, dark cocoa and a sweet, fluffy cake with a dash of whipped cream = Bliss. Today’s recipe has all of those and more- It’s healthy and ready in just one minute (or 12-15 minutes, if you don’t use a microwave!) and without any of the traditional heavy ingredients! Okay, enough fluffy- Let’s get into this healthy one minute black forest cake (NOT doom cake!).
This healthy black forest cake is soft, fluffy and light on the inside yet tender on the outside! It’s bursting with cherries and chocolate flavor and the perfect healthy dessert or snack to enjoy anytime! Unlike traditional black forest cake, this healthy version has no butter, grain flour, oil or sugar but I promise, you can’t tell! It takes one minute to whip up in the microwave, or between 12-15 minutes if you use a toaster oven.
HACK! While fresh cherries are ideal (and something I wish was available year round!), these work beautifully with canned unsweetened cherries or thawed frozen berries! In fact, I prefer the latter- Once baked into the cake, when you dig in, they burst and spread through all the chocolate and it’s pretty epic.
Make this healthy one minute black forest cake and don’t ever let cake be associated with negative
Cake > people.
- 1 T almond flour
- 1 1/2 T coconut flour, sifted
- 1 T cocoa powder
- 1- T granulated sweetener of choice (I used a monk fruit blend)*
- pinch vanilla extract
- 1/2 tsp baking powder
- 1 large egg or egg white (sub for 1 flax egg to keep it vegan)
- 1/4 cup + dairy free milk of choice**
- 4-5 large cherries, pitted
- Handful of dairy free or sugar free chocolate chips, optional
- Whipped cream of choice to top, optional
- In a mixing bowl, combine the dry ingredients and mix well.
- In a separate small bowl, combine the dairy free milk with the egg (or flax egg) and whisk with the vanilla extract. Add the mixture to the dry mixture and mix until just combined. If batter is still crumbly, continue adding dairy free milk one tablespoon at a time, until a thick batter is formed. Stir through the cherries.
- Grease a microwave or oven safe bowl and generously and pour the batter. Top with optional chocolate chips and microwave for at least 50 seconds, depending on the microwave.
- Remove and allow to cool slightly before topping with optional whipped cream and enjoy!
- Follow directions as above but bake in a preheated toaster oven or oven for 12-15 minutes, or until a toothpick comes out clean.
- * Adjust sweetness to taste. I found one tablespoon sufficient.
- ** Depending on the brand of coconut flour, almond flour and cocoa powder you use, you may need more. Adjust accordingly.
