It’s evident I’ve been a smoothie kick lately, and I have to thank the Whole30 challenge for that. Who knew that smoothies could taste great without protein powder? Who knew that smoothies could seriously have a thick, creamy and almost ice cream like texture?
I’m five days into it and must say, I’m impressed with how it’s all being handled. I’ve probably eaten more fresh produce in these 5 days than I did during the festive season. Granted, much of that was due to cookbook testing, too many meals out and the fact that I got over apples, pears, and citrus VERY fast.
Fortunately, I’ve embraced the frozen variety, which works perfectly when thrown in a blender. Blueberries, raspberries, strawberries, and blackberries are now on rotation. Until these winter months are over, we will be sticking with the frozen berries then switch over to fresh ones.
…or will we?
For these ice-cream like smoothies, frozen takes precedence over fresh. However, there is one other KEY component to giving them this consistency and texture.
Rain drop, drop top, white chia seeds …. rock?
I’ve always had a love/hate relationship with these fiber and protein-packed seeds. I love the nutrients they provide, along with the texture it lends to both baked and no bake recipes (or even used as an egg replacement in these English muffins!). However, I am not a fan of them having the spinach effect.

What is the spinach effect?
Well, it’s having spinach stuck in your tooth, and you strut around like a goofball until someone points it out. Same deal with chia seeds. Although to be quite frank, those are even worse and get stuck in MULTIPLE teeth.
I was beyond stoked to find the white variety in the local Whole Foods…right next to their black counterparts.
I swear I’m smart.
This means you can load your smoothies (or any other recipe!) with the white chia seeds and go grinning like a Cheshire cat, even with seeds embedded on your teeth!

This healthy mixed berry breakfast smoothie needs just four ingredients and less than 2 minutes from blending to glass (or bowl!). It has a thick and creamy consistency, it’s similar to melted soft serve or ice cream! It’s the kind of stick-to-your-ribs smoothie, loaded with good-for-you ingredients and keeps you satisfied for hours- A rare feat amongst sweet breakfasts! They are naturally sweetened, packed with protein and fiber (without an ounce of protein powder!) and are perfect for a snack or post-dinner something too! Because of the minimal, wholesome ingredients used, this mixed berry smoothie is naturally paleo, vegan, gluten free, dairy free, sugar free and whole30 compliant!
The best part of this smoothie is just how customizable it is- You can literally use any berries you have on hand, or do what I did. I used a mix of blackberries, blueberries, and some strawberries, mainly for the sweetness. For those of you who prefer a much sweeter smoothie, consider swapping half the amount of berries with a frozen banana. Personally, I found using super-ripe strawberries to be perfectly fine!
Bonus HACK! The chia seeds have thickening powers so if you want to enjoy your smoothie later, just let it sit in the fridge!
PS- For those who don’t believe this to thick and ice-cream like, I placed blueberries on them and they didn’t sink.
Make this healthy four ingredient Mixed Berry Breakfast Smoothie and no longer fear the chia-toothed smiles.
- 1 cup frozen mixed berries
- 1/2-3/4 cup dairy free milk of choice*
- 1-2 T cashew butter (can substitute for any nut or seed butter of choice)
- 1 T chia seeds
- 1 frozen banana (optional)
- Add all ingredients into the blender and blend until desired consistency- For a thicker, ice cream like smoothie, blend less. If smoothie is too thick, add more milk of choice.
- * For thinner smoothies, add more milk as needed
- For an even thicker smoothie, this smoothie can be chilled for 30 minutes or so.
