To say the last few days have been humid and hot would be an understatement. The apartment I’m sharing with two other guys lacks air conditioning so we’ve got fans situated throughout the place. It’s gotten to the stage that it’s become so hot, the fans are useless- They are merely cycling the hot air over and over again! This results in sleepless nights which in turn leads to one thing- Coffee.
Iced Coffee.
As mentioned yesterday, this week will be dedicated to all things coffee and tiramisu related and today’s recipe is no different. I’ve also got 3 friends and 1 goat Niki to answer 3 questions relating to….
You guessed it. Coffee.
We’ll let the goat Niki take the stage now.
1. What you think of coffee, you think of…….?
Coffee is gross. I prefer hot chocolate or if it’s hot outside, hot chocolate but like, cold.
So you mean Iced chocolate?
Well, hot chocolate but with ice.
2. What is your favourite caffeinated beverage?

I’ll tell you about my weekend instead. I worked on Saturday and then Saturday night I stayed home with mum. Mum wanted to watch the Middle but I didn’t want to. We watched a Horror Movie instead (it was Japanese) but mum closed her eyes the whole time then told me off to making her watch it.
Why didn’t mum just watch something else?
I told her to watch it with me so I wouldn’t get scared.
…We don’t need to add the necessary meme here so let’s look at the almonds instead.
3. Where is your favourite place to get coffee?
Let’s change the question to favourite place to get cake. I actually like the Mars Bar cake- You know, the ones they have at Gloria Jeans (a chain coffee shop). Linda (her friend) and I sussed out all the Gloria Jeans coffee shops near us and the one in (LOCATION OMITTED FOR SAFETY OF STAFF) is the best.
Why is it the best?
They have this new employee who cuts the slices too big that all the other stores. She might get fired soon though.
Okay, so maybe getting my sister to be the first person to answer the coffee inspired questions was a silly idea. Okay, it was a really dumb idea. Let’s just gloss over all of that and focus on something useful, like the recipe!
It wasn’t until I came to America that I was introduced to the myriad of flavoured almonds. In Australia, you were pretty much limited to unsalted, salted and oven roasted. Actually, if you were lucky, you could also get oven roasted AND salted. Every grocery store I go to is filled with various flavours- Cinnamon, cocoa roasted and my two favourites- Sriracha and Cocoa roasted. When I declared doing a week of tiramisu or coffee inspired recipes, of course the almonds had to get the coffee treatment- Tiramisu style!
These Tiramisu roasted almonds are impressive, delicious and so darn simple to whip up. When it comes to almonds, as much as I love raw ones, roasting them lightly in the oven takes it to another level. Not only are these tiramisu roasted almonds delicious tasting, they are also naturally gluten free, vegan and paleo. I also tried it using two different sweeteners so you have some extra options. In terms of the ‘baking’ process, I first tried making them with the ‘tiramisu’ coating prior to the roasting but the results were less than stellar. The almonds came out too gritty and the espresso was over powering. I found the best method was to give it the ‘tiramisu’ treatment AFTER roasting the almonds.
For those who can’t be bothered roasting your almonds prior, feel free to start with pre-roasted almonds and just give them the ‘tiramisu’ treatment.
Make these Tiramisu Roasted Almonds and let’s find a way to change Niki’s terrible taste in beverages. Maybe if we make her an iced coffee she’d change her mind.

Tiramisu Roasted Almonds
Ingredients
- 2 cups raw unsalted almonds
- 1/4 cup dark cocoa powder
- 2 tablespoon dutch processed cocoa powder
- 1/4 cup granulated sweetener of choice I tried coconut palm sugar and a stevia baking blend
- pinch sea salt
- Oil spray optional but recommended
Instructions
- Preheat your oven to 180 degrees Celsius. Spread out your almonds on a large baking tray and bake for 10-12 minutes, stirring occasionally. Remove from oven and allow to cool completely.
- In a large bowl, combine the dark cocoa powder, dutch processed cocoa powder, sweetener of choice and sea salt and mix well.
- Lightly spray the almonds and pour it into the cocoa mixture. Mix very well, until almonds are fully coated. Remove and store in an airtight container and enjoy!
Notes
If you don't pre spray the almonds, you'll find them the cocoa to be more messy when consuming (they stick but they are more crumbly).

Haha…I like these new Niki interviews! Now I just need to hear Niki’s take on your apartment in NYC. (I bet she is way beyond jealous that you are living in NYC right now…well minus the heat, of course.) So tiramisu almonds. We both know I love tiramisu. And we both know I love almonds. So it just stands to reason that this recipe would be right up my alley! Along with a cup of hot coffee of course…just to spite Niki. And Panda.

I’m thinking we have it slightly better here in Canada than you did in Australia, but it still pales in comparison that what the States has. We have salted, unsalted, and roasted… and then thinks like BOLD and salt & vinegar. But who eats salt & vinegar?! 😯 Also… try not to be jealous when I tell you it cold down to the low 20’s here. I kind of love it.

I’ve never been much of a coffee drinker, but I do love tea. I also love tea with ice, except not iced tea because that’s just silly. The town/city (I honestly don’t know what it is) I live in looks pretty empty except when you go to the mall on the weekend- then you’re just asking for your death wish because theres a high probability you will get trampled on in Michael Kors. Or Sears ;).
If you said you didn’t like tea, I MAY have had to question your Persian-ness.

Yup the UK is exactly like Australia – roasted, salted and unsalted is all you get. Although I have spotted some honey macadamia nuts since being here… I don’t know what that coating is made from, and I probably don’t want to know! But I know one day I will give in and try them! Too tempting!
Also the price of macadamia nuts over here is mind blowing – sooo much cheaper than the UK! Actually all nuts are! Guess that’s because you can actually grow them!

Ah, yes…that is New York for you! Our apartment didn’t have air conditioning, but we installed little air conditioners in the windows. Even then, it didn’t always help a lot! Those almonds look great though! Anything with chocolate and coffee, I’m in!
