This air fryer potato wedge recipe yields golden-brown, crispy wedges with a fluffy, tender interior. Ready in 20 minutes, they’re the perfect side dish or snack.

Cooking potatoes in the air fryer is my jam, and my crispy air fryer potato wedges might just be my new favorite way to cook them (famous last words!). 

It’s truly the only way to guarantee crispy, crunchy potatoes with a buttery soft center, at least without the need for excess oil or an hour-plus in the oven.

There is a misconception that potatoes must be soaked to turn out crispy, but I disagree- in testing, I compared them side by side, and surprisingly, the non-soaked potato wedges cooked more evenly and didn’t leave a few stragglers soggy and soft

The trick is to use just a hint of oil and a bold spice mix, then spread the wedges in a single layer so the hot air can circulate properly. The result? Crispy golden edges, fluffy centers, and potato wedges that, as my partner says, rival any pub or diner.

Why I love this recipe

  • Simple ingredients. Just potatoes, oil, and some seasonings. 
  • Quick. I love how much faster air frying is compared to roasting potato wedges in the oven.
  • Lighter than deep frying. You get crispy wedges with just a tablespoon of oil, without the heaviness or greasy texture.
  • Perfect texture. The wedges turn out extra crispy on the outside while staying fluffy and soft in the middle.

Ingredients needed

  • Russet potatoes. I prefer russets over Yukon Gold potatoes for wedges because they become extra fluffy and soft in the center while crisping up beautifully on the outside.  
  • Olive oil. Or any neutral-flavored oil.
  • Spices. I’m using a mix of sea salt, black pepper, garlic powder, and smoked paprika.

Recipe variations

Switch up the spices. I sometimes use onion powder, ranch seasoning, or chili powder for extra heat. 

Toss the wedges in Parmesan cheese and garnish with fresh parsley for a fancy schmancy appetizer. 

How to air fry potato wedges

I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

Step 1- Prep. Preheat the air fryer to 200C/400F and grease the air fryer basket.

Step 2- Season. In a large bowl, add the olive oil and spices. Add the potato wedges and toss until the potatoes are seasoned.

Step 3- Air fry. Add a single layer of potato wedges to the basket and air fry for 20-25 minutes, shaking halfway through.

Arman’s recipe tips

  • Don’t worry about soaking the potatoes. I tested soaked and non-soaked wedges side by side and actually preferred the non-soaked version because they cooked more evenly and crisped up better.
  • Work in batches if needed. The wedges need enough space for the hot air to circulate properly; otherwise, they steam instead of crisping. I’d rather cook two smaller batches than one overcrowded one.
  • Cut the wedges evenly. I try to keep all the wedges roughly the same size so they cook evenly and finish at the same time.

Storage instructions

To store: Leftover potato wedges can be stored in the refrigerator, covered in an airtight container, for up to three days. They’ll soften slightly in the fridge but crisp back up well when reheated.

Reheating: I highly recommend reheating the wedges in the air fryer, as they turn crispy again and taste freshly made. About 4 minutes at 400°F is usually perfect.

To freeze: Once the wedges have cooled, place them in a ziplock bag and store them in the freezer for up to two months. Thaw in the fridge overnight before reheating.

Frequently asked questions

Can I use sweet potatoes?

Yes, you can use sweet potatoes instead of regular potatoes. Keep in mind that sweet potato wedges won’t become quite as crispy because they contain more moisture and less starch, but they’ll still turn out delicious. If you want something truly crispy, try my air fryer sweet potato fries instead.

Can I make them ahead of time?

You can cook the wedges up to 3 days in advance and store them in the refrigerator. When you’re ready to serve them, simply pop them back in the air fryer for a few minutes until hot and crispy again.

Ingredients  

  • 2 medium russet potatoes 500-600g
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Instructions 

  • Preheat the air fryer to 200C/400F. Grease the air fryer basket. Pat dry the potatoes and slice them into equal-sized wedges, about 8 wedges per potato.
  • In a large bowl, add the olive oil, salt, pepper, garlic powder, and smoked paprika. Add the potato wedges and mix until all the potatoes are seasoned.
  • Add a single layer of potato wedges into the air fryer basket and air fry for 20 minutes, shaking halfway through. The wedges should be deeply golden and crisp around the edges.

Notes

    Easiest Air Fryer potato recipe I’ve found that actually delivers crispy potatoes! I did rinse and dry the potatoes but other than that — followed the directions as written. This is a keeper.

    1. Hi Paula! I recently got one of these air fryers (I have 5 now… haha!) so I tested it on there. Look, it works, but it’s a little more hands on, and you’ll need to flip them several times 🙂
