These healthy grain free cinnamon bun protein cookies take barely any time to whip up and have no butter, oil or sugar too! They are also naturally gluten free, paleo, vegan, dairy free and refined sugar free!
“I had the biggest craving last week for avocado toast, minus the avocado.”
“So you craved toast?”
“No. I craved avocado toast, minus the avocado.”
“What is wrong with you? You make absolutely no sense whatsoever.”
“Well, I woke up on Saturday with an intense craving for avocado toast from ‘The Village’. I went with Linda and I got avocado toast, minus the avocado.”
“Um, okay. I hope you didn’t pay full price for it.”
“Of course I did! It wasn’t normal toast. It had seasonings. Well, sea salt and black pepper.”
I hope the sea salt and black pepper was coated in truffle oil first.
Seriously, I think I’m going to include exerts from my weekly conversations with my sister on here. From an outsider’s view, it’s easy to assume that Niki is joking when she says these things but trust me- She’s being completely serious here. It’s similar to the time she gave me a half hour long explanation about how her wedding cake would be a carrot cake with cream cheese frosting- Swap the carrot cake for chocolate and the frosting for ganache.
I didn’t think much of my sister’s thought process until I experienced something similarly myself. I found myself with the biggest craving for a cinnamon bun….minus the bun.
It always seems to happen as I walk through a mall which has a food court. This one had a copycat Cinnabon (it wasn’t Cinnabon…they also sold sushi) and had a display which had delicious looking buns with the most simple cinnamon/sugar topping on top. While the bun didn’t say ‘EAT ME’, the cinnamon/sugar crumble had other ideas. I was THIS close to ordering one, purely to lick the cinnamon/sugar off the top.

Channing Tatum Lookalike classy gentleman I am, I did no such thing. I did, however, go home and make French Toast for dinner, sprinkled liberally with a homemade cinnamon sugar. Commercial cinnamon sugar blends tend to use white table sugar but seeing as I used maple syrup with my brinner, I opted to use my favorite granulated sweetener- Norbu. For those of you unfamiliar with Norbu, it’s a granulated sweetener based off monk fruit! It’s an all-natural calorie-free sweetener but unlike most stevia blends I’ve tried, this one has no metallic aftertaste! Anyway, it allowed me to go a little cray-cray with my sprinkling while satisfying the epic cinnamon/sugar craving!
In this post, I mentioned how I was recreating all the Lenny and Larry Protein Cookie flavors. This was supposed to be inspired by their snickerdoodle flavor, but after tasting another of their cookies, it tasted more like a cinnamon bun topping than snickerdoodle. In fact, I had several of these no bake snickerdoodle bites in my freezer and the tastes were completely different. So as such, these healthy grain free cinnamon bun protein cookies were made!
These healthy cinnamon bun protein packed cookies are chewy and have the BEST texture- Thanks to the combination of correct protein powder with coconut flour. They can be more soft or firm, depending on whichever you prefer! Unlike traditional cinnamon or snickerdoodle cookies, these are made without grains, butter, oil or sugar but you’d never tell! The recipe below is single serve but can easily be made in a bigger batch! Not only are they grain free, these cookies are also paleo, vegan, dairy free and can be completely sugar free!
HACK! If you don’t have access to Norbu or Monk fruit sweetener, I’d definitely recommend using coconut sugar! I’ve tried some stevia blends and they taste like soap meets porcupines. If you do have a stevia blend you DO enjoy, then go for it!

….For the avocado. FOR THE AVOCADO!
- 1 scoop vanilla protein powder (32-34 grams)
- 3 T coconut flour, sifted
- 1 T granulated sweetener of choice (I used a monk fruit blend)
- Pinch sea salt
- 2 T cashew butter (can sub for any nut butter, but cashew is best)
- 1 T pure maple syrup*
- pinch vanilla extract
- 1-2 T dairy free milk of choice**
- 1/2 tsp cinnamon
- 1/2 tsp granulated sweetener of choice (I used a monk fruit blend)
- Preheat the oven to 350 degrees. Line a cookie sheet or baking tray with grease proof paper and set aside.
- In a small mixing bowl, combine your coconut flour with your protein powder, granulated sweetener and sea salt and mix until there are no clumps.
- In a small microwave safe bowl or stovetop, melt your nut butter with maple syrup until combined, adding in the vanilla extract at the end. Pour the wet mixture in with the dry mixture and mix until a crumbly texture remains. Using a tablespoon at a time, add dairy free milk until a thick batter is formed.
- Form the batter into a ball and transfer to the lined cookie sheet. Press firmly and spread out into a cookie shape. Sprinkle with cinnamon and granulated sweetener of choice and bake for 8-12 minutes- 8 minutes for extra soft and chewy or 12 or so for a firmer cookie.
- Remove from oven and allow to cool completely.
- * You can omit the maple syrup or sub for brown rice or agave. If you do omit, you may need a dash more dairy free milk.
- ** Depending on the brand of coconut flour and protein powder you use, you may need more- Adjust accordingly.
