Chewy and delicious protein packed cookies which taste like a chocolate brownie! These healthy grain free chocolate brownie protein cookies take barely any time to whip up and have no butter, oil or sugar too! They are also naturally gluten free, paleo, vegan, dairy free and refined sugar free!
Friends, I’ve tried a ton of protein powders in my time.
Some are actually incredibly versatile and delicious and have slowly become a dietary staple.
Others….well, not so much.
Prior to coming to America, due to import regulations, there were very few American or European branded protein powders available. There were, however, multiple Australian branded ones on our shelves or able to be ordered online.
These Australian made protein powders were…..not the greatest. Their consistency, when made into basic shakes were sub-par. When I attempted to use it in baked goods or desserts, they often resulted in hockey pucks or bricks.
The thing that drove me bonkers was their multiple ‘flavors’. One brand, for example, has the following flavors which I (stupidly) sampled- Chocolate fudge, chocolate brownie, chocolate ice cream and chocolate milkshake.
Did they taste like brownies, fudge, ice cream and milkshakes?
They did not taste like any of those.
They tasted like lies.
Thankfully, I’ve gone through a ton of brands and now have my standbys. In my eyes, for a protein powder to get my seal of approval, it needs to fill several criteria-
- Does it taste good straight up mixed with water?
- Does it taste good straight up mixed with milk?
- Does it work in a no-bake recipe?
- Does it work well in baked goods?
If they tick all those boxes AND are well priced, they become staples. While
While there are multiple flavors available for purchase (apparently one brand does a seasonal pumpkin one….um, okay), I stick to the classic vanilla and chocolate ones. They can be used interchangeably in recipes and can easily be adapted, especially the vanilla one! For today’s recipe, the one’s pictured are using Growing Natural’s versions, tested in both Vanilla and Chocolate.

Let’s talk cookies now…
These healthy grain free chocolate brownie cookies are chewy, slightly dense and have a similar texture to shortbread! Unlike most cookies which use butter, oil, flour and sugar to give it a delicious taste, these brownie cookies need none of those but taste just as good! They use a tiny ingredient list and are perfect to enjoy pre or post workout or even as a healthy dessert! These cookies are naturally gluten free, vegan, grain free, dairy free and come with a tested paleo option (Check out here for my favorites!)
HACK! Prefer your cookie to be on the softer and chewier side? That’s do-able! Instead of cooking it for the 10-12 minutes recommended, remove them around the 8-minute mark. The cookie may seem super soft, but once allowed to cool, it will firm up to achieve the texture we all love!
Make these healthy Grain Free Chocolate Brownie Cookies and let’s raise a (protein shake) glass that there are some protein powders out there which won’t leave you with pucks.
- 1 scoop chocolate protein powder- Pictured is using Growing Naturals Brown Rice protein (32-34 grams)
- 3 T coconut flour, sifted
- 1 T dark cocoa powder
- 1 T granulated sweetener of choice (I used a monk fruit blend)
- 2 T almond butter (can sub for peanut, cashew or even nutella)
- 1 T pure maple syrup*
- pinch vanilla extract
- 1-2 T dairy free milk of choice**
- Handful of dairy free chocolate chips
- Preheat the oven to 350 degrees. Line a cookie sheet or baking tray with grease proof paper and set aside.
- In a small mixing bowl, combine your coconut flour with your protein powder, granulated sweetener and cocoa powder and mix until there are no clumps.
- In a small microwave safe bowl or stovetop, melt your nut butter with maple syrup until combined, adding in the vanilla extract at the end. Pour the wet mixture in with the dry mixture and mix until a crumbly texture remains. Using a tablespoon at a time, add dairy free milk until a thick batter is formed. Stir through dairy free chocolate chips, reserving a few to top.
- Form the batter into a ball and transfer to the lined cookie sheet. Press firmly and spread out into a cookie shape. Top with a few more chips and bake for 8-12 minutes- 8 minutes for extra soft and chewy or 12 or so for a firmer cookie.
- Remove from oven and allow to cool completely.
- * You can omit the maple syrup or sub for brown rice or agave. If you do omit, you will likely need more dairy free milk AND your cookie will be slightly more crumbly.
- ** Depending on the brand of coconut flour and protein powder you use, you may need more- Adjust accordingly.
