I remember when I first started sharing recipes on here, I tried to incorporate the white chocolate and macadamia marriage in as many things as possible.

I wholeheartedly blame Subway for it….and their 3 for $2 cookie special I treated myself to on many occasions during high school and university.

Looking through my recipe archives, I’ve included this magic duo in their original COPYCAT form (cookies), in no bake cookies and also in my favorite- Creamy oatmeal pudding

…It was only a matter of time before they got some protein added to it and be given a grain free makeover!

These cookies are probably my favorite protein cookie to date and one I’ve made my friends sample too. In fact, just before I left California, I made my Indian buffet buddy Cassie sample it too. I mean, she is a protein cookie guru so if she gave it the seal of approval, you KNOW it’s a winner.

Furthermore, it’s the time of the month where I share a recipe using Growing Naturals protein powder AND include a giveaway too! The last two months, I’ve shared these cookie dough stuffed bites and these chocolate fudge cookies and now, these white chocolate and macadamia beauties.

What I LOVE about these monthly recipe/giveaway posts is that I get to physically SHARE the recipe made with two readers. In February and March, four of you received a batch of both recipes created and got to taste the final creations for yourself- Today will be no different.

My friends at Growing Naturals will send TWO readers a protein powder pack and I’ll send you guys these cookies! Seeing as it’s single serve, I’ll be sending a batch of 12 cookies because dozen sounds better than single…in this situation.

Anyway, before we get into the actual recipe, it’s also Wednesday so let’s see what made my plate this week…

Breakfast- I made a batch of my 3 ingredient Flourless Blender Brownies for a friend to show them the minimal ingredient magic, leaving a serving for myself. That constituted breakfast. Snack/Lunch- Cookbook testing = Constantly eating. I also had some flatbreads on their last leg so I made these baked Cinnamon Chips, where I also sprinkled some of this vanilla protein powder, mixed with cinnamon. As mentioned in Monday’s post, I had to satisfy a ‘wake up from nap’ snack which was the ‘Escargot’ (Raisin twisted pastry). Dinner- Met my friend at a wine bar and we shared this smashed pumpkin and pesto pizza. It was pretty epic.

Now time for some cookies…

I’ve mentioned on here before, but I LOVE making my protein cookies.

The market right now is saturated with protein cookies and while I’ve tried a myriad of them, their ingredient list is enough to put me off. Sure, they taste decent but when you can’t even pronounce two-thirds of the additions in it- No thanks, I’ll make my own. Cinnamon bun, chocolate brownie and birthday cake had their time in their spotlight, so time for a newbie!

Healthy White Chocolate and Macadamia Nut Protein Cookies made with NO grains, butter, oil, sugar and SO much better than store bought! {vegan, gluten free, paleo recipe}-

These healthy white chocolate and macadamia nut protein cookies are chewy, delicious and literally take under 20 minutes to make, from plate to…mouth? Unlike traditional cookies with this amazing texture, they contain NO butter, oil, grains or sugar! Coconut flour lends an amazing texture, a cross between a cake and a cookie, which only amplifies with the vanilla protein powder. They are also naturally gluten free, grain free, vegan, dairy free (thanks to these amazing baking chips) and come with a tested paleo option!

HACK! I tried several times to make this using my standby homemade white chocolate chunks which are paleo friendly. Unfortunately, they did NOT come out whatsoever. If you opt for the paleo option, follow the instructions for adding in the white chunks, which will be at the VERY end.

Make these healthy Grain Free White Chocolate and Macadamia nut protein cookies and seriously, stink eye the store bought ones!

Write a review
  1. 1 scoop Growing Naturals vanilla brown rice protein powder (32-34 grams)
  2. 3 T coconut flour, sifted
  3. Pinch sea salt
  4. 2 T cashew butter (can sub for any nut butter, but cashew is best)
  5. 1 T pure maple syrup*
  6. pinch vanilla extract
  7. pinch natural butter extract (optional)
  8. 2 T + milk of choice**
  9. 1 T macadamia nuts, chopped
  10. 1 T white chips/chunks of choice***
  1. Preheat the oven to 350 degrees. Line a cookie sheet or baking tray with grease proof paper and set aside.
  2. In a small mixing bowl, combine your coconut flour with your protein powder and sea salt and mix until there are no clumps.
  3. In a small microwave safe bowl or stovetop, melt your nut butter with maple syrup until combined. Stir in your vanilla extract and butter extract. Pour the wet mixture in with the dry mixture and mix until a crumbly texture remains. Using a tablespoon at a time, add dairy free milk until a thick batter is formed. Stir through the macadamia nuts and white chocolate chips (NOT for paleo option).
  4. Form the batter into a ball and transfer to the lined cookie sheet. Press firmly and spread out into a cookie shape. Top with extra chips and nuts and bake for 8-12 minutes- 8 minutes for extra soft and chewy or 12 or so for a firmer cookie.
  5. Remove from oven and allow to cool before digging in!
  1. * You can omit the maple syrup or use sugar free- Sugar free maple syrup was difficult to bind (it was like water) but still gave a subtle hint of sweetness. If you omit, your cookie will be much more crumbly.
  2. ** Depending on the brand of coconut flour, you'll most likely need more milk.
  3. *** If you go the paleo route and use my homemade chunks/chips, don't add or stir through the mixture- Once you remove the cookie from the oven, top with the chunks/chips as the cookie cools.

  1. These look awesome! I love almost any chocolate nut combo in a cookie and the white chocolate macadamia is such a classic. I need to try these cookies. I think subway might be putting something illegal in their cookies though, even cookies aren’t that moorish (seriously, it’s the only thing I like at subway!).

  2. Oh please don’t force me to choose only one favorite cookie. I love them all like my (future) children – chocolate, chocolate chips, soft and chewing… Just gimme some cookies and I will be happy bird?

  3. I’m a sucker for any cookie with chocolate in it, and the presence of mint is a glorious bonus (well hello, deliciously vegan Thin Mints!).

  4. The idea of coconut flour and cashew butter and white chocolate just sounds perfect. Maybe its the “white” thing. Subway White Mac cookies were my evvvverything in high school. What made them SO GOOD. Thanks for sparking the mad raving.

  5. I love cookies- may be my favorite dessert. And my favorite is white chocolate macadamia! But since being pregnant I’ve grown fond of chocolate peanut butter cookies and anything of that combo.

  6. I don’t blame you – white chocolate macadamia is a solid combo!! I used to love those from Subway, too. Other than that, Sugar cookies are next in the line of flavors Kim can’t resist.

  7. White chocolate macadamia nut is SO underrated and delicious. These look perfect. Favorite cookies ever… I mean, why don’t you just ask me to pick my favorite (future?) child. 😛 Honestly, probably Max & Erma’s chocolate chip cookies. They’re buttery without being greasy and they have a ton of chocolate.

  8. That pizza looks amazing. You know how I love my pizza! My favorite cookies are actually the ones made by the catering staff on campus where I work haha. They make amazing white chocolate macadamia (not healthy like yours) and there’s also a reese’s cookie that’s amazing.

  9. White chocolate macadamia nut is a combo that I’ll always flip for (pun intended lol)! I’m sick of seeing all those protein cookies on the market that cost like 5 dollars a piece. Don’t they know they could make these and easily save 4.50 per cookie!?

  10. Wait. I can go from just drooling over these cookies to actually eating them now? Heck yeah! That’s what I call next-level service, mate. But if you mail them from Australia, does that mean they will arrive before they ever get baked? This whole time zone thing is messing with me. Of course, that could also be the lack of sleep. Talk about Twilight Zone… 🙂

  11. I’m really lame, but I love Oreos. I’ll eat any flavor of them and my favorite is actually strawberry milkshake hahahaha. The last time I ate out….oh my God I can’t remember. I guess I eat at a restaurant everyday at my job, but I think the last time I went out was in February. Embarrassing… These look great Arman!

  12. Ha. I was thinking before I even read through this article that you had done the Subway cookies before. I’m with you – I freaking ride hard for this combo! Add in the protein and I think I can call this a breakfast cookie without too much issue. So… thanks bud!

  13. If I was closer to my mom, I would make her these for Mother’s Day. She was totally addicted to those white chocolate-macadamia cookies! We got them at the mall from The Cookie Company. I opted for a slice of the cookie cake… because icing.

  14. I’ve never had a macadamia nut cookie, is that bad? I am loving that you used brown rice protein for this recipe. Being pregnant and all I have been avoiding whey protein powders as much as possible but I do need extra protein in my diet. I guess I should try it!!

  15. My fave cookie is really any sort of thick, bar-like cookie…specifically blondies or chocolate chip or monster. They just gotta be thick!

  16. MMMM any grain free cookie is my favorite :3 after all its cookies and whats not to love :3 bit I guess if I HAD to pick 1 it would be anything with peanut butter in it

  17. What an impossible question! SO my mom’s butter cookies were awesome, Girl Scout Thin Mints and Samoas and then just plain ol’ ginger snaps. Darn and Milano’s and on and on…

  18. Yum these sound so good! White chocolate macadamia nut is my favorite Cliff Bar flavor, but I try not to buy them too often b/c of all the added sugar. I haven’t tried making my own protein cookies though. And you have so many recipes so now I MUST!

  19. I love oats so a good old fashioned oatmeal cookie is near and dear to my heart. Any extras like nuts or raisins are great but give me my oats. Props to my grandma’s oatmeal butterscotchies too!

  20. My favorite cookie is my own take on a recipe I found online — double chocolate coffee cookies, but with chocolate covered coffee beans in lieu of regular chocolate chips!

  21. Favorite cookie? UGH don’t make me choose! Basically anything homemade and fresh from the oven UGH YES. Snickerdoodles and white chocolate macadamia are bomb, and you can’t go wrong with chocolate chip:)

  22. I don’t think I have a fav cookie, unless the paleo vegan ones I shared on the blog this week count. But when I was younger, this local bakery had the most amazing brownies and I’d beg my mom every single day to stop and get me one. When they switched owners a few years ago and stopped selling those brownies I literally died inside…until accidentally recreated them last year. Literally cried that time LOL

  23. I love your white chocolate cranberry cookies—or are they raspberries? I always have cranberries so i make them with cranberries and sometimes with dried blueberries….I love all ur protein cookies!

  24. I am obsessed with anything that you make with white chocolate in it. I used to not like white chocolate macadamia cookies, but I’ve been really into them recently because of you. But my favorite cookie will probably forever be oatmeal raisin (to the dismay of many of my friends) 🙂

  25. Favorite cookie?! I don’t have one! I like crunchy and crispy and chewy…recently I’ve been liking chewy better! I love white chocolate macadamia, oatmeal raisin, snicker doodle, and fudgey ones!

  26. That pumpkin and pesto pizza sounds like a winning combination! I’m gonna have to remember that one next time I want to make pizza.

Also a great combo? White chocolate and macadamia. These look excellent!

  27. Candied orange peel, dark chocolate chip and almond cookies… Or fig, white chocolate and macadamia cookies! Especially when they’re paleo 🙂

  28. These cookies look so good right now at 3:30 in the morning! 🙂 My favorite cookies are my own chocolate/coconut/peanut butter no bake cookies. And, I eat out quite often.

  29. My favourite cookies are White Chocolate Cranberry Cookies, slightly chewy on the inside and crunchy on the outside.

  30. I love flourless peanut butter cookies! This recipe sounds super easy and yummy! Thank god I just bought some coconut flour 😉

  31. Arman,
You are amazing! I love all your recipes! I want to be you when I grow up 😉
I was just wondering, is there any way you could post cals, fats, protein and carbs for each recipe that you do? Am I asking too much? 🙁
