A delicious, moist and fluffy blueberry muffin which takes 1 minute to whip up in the microwave inspired by Starbucks Blueberry muffin! It’s low calorie, gluten free and comes with a trialled and tested vegan, high protein and paleo version- For those without a microwave, there’s an oven version too!

I’m rounding out the week with another Starbucks inspired recipe, which was the most anticipated during my college semester- Their blueberry muffin.
Besides a few fast food restaurants and a few sub bar restaurants, there weren’t really many places for us students to ‘chill’ outside of class or when we wanted some space, besides the bar or dining hall. The sole Starbucks in town was one the most popular, but not for this reason- It was for their Blueberry muffin.
For some strange reason, the year I was at college (2010), this particular Starbucks would have over 10 times the amount of blueberry muffin shipments than any other of it’s stores in the northern New York region. I was perplexed as to why these were such a hot ticket item and asked some of the local students if they knew why. It turns out one of the Fraternities on campus made one of the guys pledging (no idea if this terminology is right- Naive Australian here) bake muffins every weekend for a month. Instead of actually baking them, he’d buy the entire case from Starbucks and dole them out to them all. Not sure how he was able to convince them that he did indeed bake them but rumor has it these muffins were only enjoyed at 3am on a Sunday morning……hmmm.
Ever since then, these muffins became infamous on campus and it would be no surprise seeing hoards of Frat brothers going there whenever they had the chance to stock up (for consumption, I hope).
As part of my collaboration with Kohl’s, I’m sharing delicious recipes which can be made in dorm room kitchens or at home without parental supervision- Friends, this one is a winner and one to take to college (or your own kitchen) with you. A shout out to all my friends from Oswego- As much as I adored the beloved singular Starbucks on campus (within reason), I’ll take this healthy 1 minute muffin…with a side of their coffee.
While microwave cakes are often made in mugs, I personally prefer using bowls. Bowls like these ones are perfect as they prevent the batter from overflowing and making a mess. We don’t want you to be the most unpopular person in your dorm now, do we? Anyway, let’s get onto this delicious healthy 1-minute blueberry muffin, as inspired by the infamous Starbucks bakery offering.
This healthy 1 minute Blueberry muffin is your quick fix for an instant bakery style treat with a healthy twist! While it is much healthier that it’s inspiration, it is still incredibly fluffy, light and has a muffin like texture! As always, I trialled it with a vegan and gluten-free option and for those who follow a paleo style of eating, please take note of the necessary edits! Furthermore, for those without a microwave, take note of the oven instructions.
For those wanting something with more protein, I did test it using protein powder. Although it was delicious, its texture was more brownie like, similar to this recipe.
Make this healthy 1 Minute Blueberry muffin as inspired by Starbucks and satisfy your muffin craving without going to great lengths…or wasting money.
PS. The guy who ‘made’ the muffins made it into the Fraternity.

- 1 T coconut flour
- 1 T almond flour
- 1 T oat flour (omit for paleo version)*
- 2 T granulated sweetener of choice (adjust to taste)
- 1/2 tsp baking powder
- Pinch cinnamon
- 1 large egg (can sub for 1 large egg white or 1 flax egg)
- 1 T mashed banana/pumpkin/mashed starch (can sub for 1 T coconut oil OR ghee)
- 1 T + dairy free milk of choice**
- 2-3 T frozen blueberries
- In a small mixing bowl, combine the flours, sweetener, cinnamon and baking powder in mix well.
- Add in your egg, mashed banana, dairy free milk and mix until fully incorporated. Fold in the blueberries and ensure there are a few remaining at the top.
- Microwave for 50 seconds (or up to 2 minutes, depending on your microwave) and remove. Enjoy immediately.
- Pour batter into an oven safe dish and bake at 350 for 12 minutes, or until a toothpick comes out clean.
- * If you omit the oat flour for almond, you'll need a dash more dairy free milk.
- ** Depending on the starch you use and the brand of coconut flour, you will most likely need more than 1 tablespoon- Adjust accordingly.
