The other day, I was whipping up a batch of cashew butter and I smelt something burning. I thought it may have been the still warm candied almonds left to cool down, but I was wrong.
It was my blender.
Soon after, I was making some pecan butter (for today’s recipe) and I saw a tiny hint of smoke appearing from the blender. I got out my disco balls, dimmed the lights, and started twirling around the living room.
Oh, I wish.
The blender’s fuse had burnt, and two minutes later, the smoke alarm went off. No, it was not a continuation of my made-up (lonesome) disco.
Regardless, the blender was just about finished whipping up some pecan butter and as such, left us with this- This healthy 3 Ingredient No Bake Maple Pecan fudge!
Before we get into the recipe, it’s Wednesday so let’s see what made my plate! If you’ve seen my Instagram stories lately, you’ll notice I haven’t eaten too many meals at home. A big reason for this is because I’m relaxing a little bit with work these festive months, but more so because of several groups of friends who are-
a) About to travel soon (A friend is off to Poland, Romania, and Russia)
b) Just got back from traveling (Backpacking throughout Asia and ending with a full moon party in Thailand)
c) Wanted to hang out to complain about our lack of travel (anyone looking for a travel buddy out there?)
This full day of meals are from Sunday! By some random coincidence, I ate TWO meals using VEGAN crumbles (to resemble beef).
Breakfast- My only meal at home- A flatbread with peanut butter and chocolate chips. I wasn’t too hungry and was running late. Lunch– A loaded veggie burger from a vegan food truck (we went to Victoria Markets, in the CBD) and was surprised at how flavorful it was! Snack- Gelato Messina because it was warm and well…ice cream. I got macadamia crunch and coffee. Dinner- I was very skeptical about this- I love pasta bolognese, so a vegan version (including vegan chorizo, vegan parmesan cheese, and vegan pesto) had some big expectations to meet. You guys, I was SO IMPRESSED!!!!! I even asked one of the servers as to where to get the vegan chorizo from, it was sahhhh good.
Anyway, now that we’ve finished off the vegan chorizo, let’s end on a sweet note- Fudge.
Can we take a minute to discuss the lesser used nut butters? Pecan butter was completely new to me to use in a recipe. I’ve had pecan butter before, but it was served as part of a cheeseboard and covered in brie. Now? It’s competing with cashew butter as my favorite nut butter base- It’s mild, smooth and not overpowering. It’s delicious on it’s own or in things….like fudge.
This healthy 3 Ingredient no bake maple pecan fudge is smooth, creamy and melts in your mouth! It’s perfect to enjoy for dessert, perfect to give as Christmas and holiday gifts as a healthy alternative to candy or heavy chocolates, or even parties and events! Unlike traditional fudge, which usually is loaded with butter, white sugar, margarine and condensed milk, this 3 ingredient maple based version contains none of those…but tastes JUST as good! It only needs three ingredients- Pure maple syrup, pecan butter, and coconut oil– That is it! Because of the ingredients used, this no cook maple pecan fudge is naturally gluten free, vegan, paleo, refined sugar free, dairy free and grain free!
I totally understand that not everyone wants to or has the capability to make their own (I literally just blended 3 cups of pecans and when smooth, added a dash of sea salt and cinnamon), I have tried this one, which is delicious (but also has cashews). In full disclosure, if you do have a powerful blender or food processor, definitely go that route- It’s cheaper and customizable.
HACK! For those with nut allergies or don’t enjoy pecans, an easy swap would be soy nut butter or sunflower seed butter (soy nut butter is preferred, as it’s milder) or cashew butter over almond butter (the same reasons as the non-nut based butter). I don’t recommend tahini for this- it’s simply too oily for the minimal ingredients used.

- 2 cups smooth, drippy pecan butter
- 1/2 cup coconut oil
- 1/4 cup pure maple syrup
- Line a a small loaf pan or square cake pan (8 x 8 inch works well) with parchment paper and set aside.
- In a microwave safe bowl or stovetop, melt your pecan butter with coconut oil. Stir through your pure maple syrup and mix until fully incorporated.
- Four fudge mixture into the lined cake pan/loaf pan and refrigerate for at least an hour, until firm.
- Fudge needs to be kept refrigerated, but can be enjoyed thawed at room temperature. This fudge tastes fantastic thawed slightly from the freezer.
