Keto Energy Balls Recipe
It’s been a busy few weeks recently, and having quick grab-and-go snacks for an energy boost has been mandatory.
In between cookbook testing and working on upcoming content, I’ve found myself needing a quick and easy low carb snack to push me through. Ketogenic energy bites and balls have been a lifesaver, as they keep my hunger at bay and avoid a potential sugar rush.
While I have a plethora of keto-friendly snacks in my recipe archives, none of them were nut-free. Ironically, I was in possession of both tahini and sunflower seed butter, so went ahead to rectify the situation.
In just 5 minutes, I was able to make an easy 3-ingredient no bake energy balls recipe. It also happened to be top 8 allergen-free!
What does it mean to be allergen-free?
Allergen-free, or sometimes referred to as ‘allergy-friendly’, refers to a list of foods (8 major ones) which are suitable for those with severe food allergies or intolerances. Being nut-free is a huge one!
What are the eight major food allergens?
The 8 major food allergens are-
- Tree nuts (e.g. almonds, Brazil nuts, cashews etc)
Contrary to popular belief, coconut, coconut based products are NOT a major food allergen!
To make this no bake keto energy balls recipe, you only need 3 ingredients-
- Coconut Flour
- A sticky sweetener of choice
Tahini is a nut-free spread made of sesame seeds. It is generally light in color and has a slightly nutty taste. Be wary that some brands are known to be quite bitter. For another nut-free spread alternative, sunflower seed butter or wow butter (made from soy nuts) are both fantastic options!
Coconut flour is necessary for this recipe, as it helps provide a cake-y and durable texture. If you DON’T follow a low-carb, keto or allergen-friendly diet, oat flour can easily be substituted. Be sure to double the amount used.
The best 100% sugar-free and keto-approved sweetener is monk fruit maple syrup. It has the same consistency of other sticky sweeteners, minus the carbs and sugar.
If you don’t follow a keto diet, you can replace this with a refined sugar free sweetener, like maple syrup, agave nectar, or honey (not for strict vegans).
3 Ingredient Low Carb Keto Energy Balls (Paleo, Vegan, Nut-Free)
- In a large mixing bowl, add your tahini- It should be smooth and mixable. If it is slightly stiff or firm, heat it up in the microwave or stove-top.
- Add your sticky syrup of choice and mix well. Add your coconut flour and mix thoroughly, until fully incorporated. If the batter is too thin, continue to add coconut flour until a thick batter remains.
- Line a large plate with parchment paper. Using your hands, form the dough into small balls. Place on the lined plate and refrigerate until firm.
