Pan Fried Walleye Recipe

My walleye recipe features a mild, white fish, pan-seared until golden and flaky, and topped with a butter-caper sauce cooked in the same pan. It’s quick, easy, and packed with flavor.

The walleye recipe for beginners
I first tried walleye during a trip through Minnesota and Wisconsin, where Friday Night Fish Fry is practically a religious institution (if you know you know). Every bar and restaurant had its own version- fried fish, fries, and coleslaw- and I worked my way through as many as I could find.

I fell in love with walleye’s mild flavor and firm, flaky texture. After enjoying it fried, I started cooking it in a skillet at home and never looked back. Here’s why I love making it:
- Perfect for anyone who doesn’t love ‘fishy’ fish. My partner is notoriously suspicious of seafood, but this is the one fish he happily requests.
- One pan, maximum flavor. Pan-searing the fish cooks it quickly and evenly, and I cook the butter-caper sauce in the pan with the juices for maximum flavor.
- Quick and easy. The fish cooks in just a few minutes, making it ideal for both weeknight dinners and special occasions.

Key Ingredients
Here’s what you’ll need, along with my kitchen notes. Full measurements are in the recipe card below.
- Walleye fillets. Walleye has a mild flavor and firm texture that holds up really well in a skillet. Most fishmongers should stock it, as well as larger grocery stores (I regularly see it at Whole Foods and Kroger). If you can’t find it, any firm white fish, like cod, halibut, or snapper, will work.
- Spices. I’m keeping it simple with salt, black pepper, and smoked paprika.
- Flour. A light dusting gives the fish a golden crust while helping lock in moisture. It also helps the butter-caper sauce cling to the fillets. I did try this without it, and while it does work, it just won’t get that crust.
- Olive oil. For pan searing the fish. I prefer olive oil because it adds flavor, but any natural cooking oil works.
- Lemon butter caper sauce. My simple sauce uses unsalted butter, capers, and fresh lemons. It’s rich, bright, and the perfect match for mild white fish.
How to cook walleye
Step 1- I start by patting the fish dry, seasoning both sides, and lightly dusting them with flour.

Step 2- Now we cook. Add olive oil to a skillet and place it over medium heat. Once hot, cook the walleye until golden brown on both sides, about 6 minutes total.

Step 3- Remove the fish and plate it up, but keep the skillet on the stovetop (on the heat). Add the butter, lemon juice, and capers, and simmer for 2 minutes, then turn off the heat.

Step 4- Assemble. Pour the sauce over each walleye fillet and serve immediately.

Arman’s tips for the best texture and flavor
- Pat the fish completely dry. This is the easiest way to get a golden crust. I always blot the fillets with paper towels before seasoning and dredging them in flour.
- Use a light coating of flour. You only need a thin dusting. Too much flour can actually do the opposite, making the crust heavy instead of light and crispy.
- Don’t move the fish too soon. I let the fillets cook undisturbed until they release easily from the pan. If they stick, they just need another minute.
What to serve with walleye
Because the fish has such a mild flavor, it pairs well with simple sides that don’t overpower it. Here are a few of my favorites:

Ingredients
- 4 walleye fillets 6-8 ounces each, 150-200g
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Italian seasoning
- 1 tablespoon all-purpose flour 15g
- 2 tablespoons olive oil 30mL
Butter caper sauce
- 3 tablespoons unsalted butter 45g
- 2 tablespoons capers 30g
- 1 tablespoon lemon juice 15mL
Instructions
- Pat dry the walleye fillets with a paper towel. Season both sides with salt, pepper, and Italian seasoning. Dust both sides with flour.
- Add olive oil to a large skillet and place it over medium heat. Once hot, add the seasoned walleye fillets and cook for 3 minutes on each side. The fish should lift easily using a spatula. Remove the fish from the skillet.
- In the same skillet, over medium heat, add the butter, capers, and lemon juice. Heat for two minutes. Turn off the heat.
- Pour spoonfuls of the butter caper sauce over each fillet and serve immediately.
