Why I love this recipe
- So simple yet so fancy. There’s minimal prep time and no baking involved, yet the results are wildly impressive.
- Easy to customize. Swap the chocolate to change the flavor. Heck, you can even use an assortment of berries!
- Perfect for special occasions. Serve them for a Valentine’s Day treat or to feed a crowd. Either way, they’ll be gone in seconds.
- Quick and easy. It’s literally as simple as melting chocolate and dipping strawberries…
Ingredients needed
- Strawberries. Use fresh strawberries, preferably all the same size. Be sure that they are washed and completely dry.
- Keto chocolate. Either a chopped-up chocolate bar or sugar-free chocolate chips.
- Coconut oil. Optional, but adding a dash of coconut oil to the melted chocolate helps the chocolate be easier to bite into, and it gives the chocolate a lovely shine.
How to make keto chocolate covered strawberries
I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.
Step 1- Prepare the berries. Wash the strawberries and pat them dry with paper towels. Line a plate with parchment paper.
Step 2- Melt the chocolate. Melt the chocolate chips and coconut oil in a microwave-safe bowl. Stir until smooth.
Step 3- Dip. Coat the berries in chocolate, covering about ⅔ of the berry. Place them on the lined baking sheet and set aside until the chocolate firms up.
Arman’s recipe tips
- Ensure the strawberries are VERY dry. If there’s any moisture on them, the chocolate will harden with a slightly off-color.
- Use a toothpick to dip the strawberries. I tried using only the strawberry leaves to dip them, and sometimes my fingers would get coated in chocolate. If you stick a toothpick straight in the center of the stem, it should be easy to dip.
- Let the chocolate firm up at room temperature. I tried sticking them straight in the refrigerator so they’d firm up faster, and the chocolate seized up and cracked.
Variations
- Swap the chocolate. Use sugar-free white chocolate chips, milk chocolate chips, or dark chocolate chips.
- Decorate. Sprinkle sugar-free sprinkles or chopped nuts on the freshly dipped berries.
- Add vanilla extract. I didn’t find this essential so I skipped it, but a little vanilla could enhance the other flavors.
Storage instructions
To store: Place the leftover berries in an airtight container at room temperature for 2-3 days. If you want to keep them fresher for longer, store them in the fridge for up to 1 week.
To freeze: Freeze the berries in a freezer-safe container for 2 months. The chocolate may lose its sheen, but it’ll still taste delicious.
Frequently asked questions
I prefer Lily’s sugar-free milk chocolate, though any sugar-free brand of chocolate will work. But honestly, I find making keto chocolate from scratch yields the best results.
Instead of chocolate, dip strawberries in melted peanut butter (mixed with keto maple syrup to thin it out) or dip them in keto honey and top them with shredded unsweetened coconut or crushed peanuts.
Make sure the strawberries are completely dry before dunking in the chocolate, and keep them at least 2 inches apart so the chocolate has room to spread without touching.
