I think I’m pre-empting the coming Spring/Summer season with all outdoor related snacks and sweets. With the slew of no bake crunch bars, trail mix cookies and even a little unicorn action going on, it’s high time some cheeky muffins joined the party too. 

When you first hear ‘free from the top 8 allergens’, it can be easy to assume that recipes which fit the bill will be hard to make, difficult to find ingredients and time-consuming.

Wrong.

You’d be pleasantly surprised that in actual fact, recipes like these healthy trail mix muffins were super simple to make, used just one bowl and required simple ingredients. In fact, I simply made some basic swaps of my every day, most-used ingredients and voila- The final result are baked beauties!

Let’s highlight some key points- Not only are these healthy muffins free from the top 8 allergens, they are also completely vegan, gluten free, dairy free and sugar free. While they are also relatively low in fat (the fat in them comes from heart-healthy fats, like pepitas, sunflower seeds,  and coconut oil), you can easily keep them completely fat-free by using unsweetened applesauce. 

Texture wise, these muffins are fluffy on the inside and tender on the outside, exactly like those bakery style muffins. They are loaded with sweet, tangy, crunchy and chocolatey (yes, new word) trail mix pieces, with a simple almost-vanilla like muffin base. 

For all my friends out there who have had qualms with various packaged gluten-free flour blends, I hear you. It got to the point where I was making my own blends, using a mix of various flours and my arch nemesis, xantham gum. However, when my epic buddy Kathleen suggested trying out Enjoy Life’s Gluten-Free All-Purpose flour. I was game to try it out, as it not only saved me time, but I was on the market for something new. I was impressed with the ingredient list, which not only included sprouted protein but also probiotics!

I didn’t initially try the baking mix out with today’s muffins- The first recipe I tried with it was actually these three ingredient cheese biscuits! I think I annoyed Kathleen by sending her multiple photos of how beautifully they turned out using this baking blend. New favorite gluten-free and vegan baking blend? I think so. 

These muffins contain no butter, white sugar or eggs, but you’d neve be able to tell. This is due to some smart swaps. Instead of butter or eggs, we use coconut oil, which is the best replacement for it. It is neutral tasting but really gives it a fantastic texture. If you are watching your fat intake, you can definitely sub it for unsweetened applesauce

You’ll notice that this recipe recommends using a 3/4-1 cup of granulated sweetener of choice. I typically use this natural calorie-free sweetener, monk fruit. It bakes well and it mimics white sugar, cup for cup. If sugar isn’t an issue, you can use coconut palm sugar or even brown/white/table. If you do choose this, you can cut back on this. 

The fun part is choosing the add-ins, as everyone’s version of trail mix is different. Because I’m keeping these muffins 100% allergy-friendly, I ensured my ingredients fit the bill. I used sunflower seeds, pepitas, unsweetened cranberries and my favorite chocolate used in recipes- these dairy free morsels. Long term readers know this is my go-to for any baking or recipe which calls for chocolate chips, but let’s be real- I eat them as standard chocolate on a day-by-day basis. In fact, I may have purposely left a package out in the sun to form itself into a single chunk.

Ingredients  

Instructions 

  • Preheat the oven to 400 degrees Fahrenheit. Grease and line a 12 count muffin tin with muffin liners and set aside. 
  • In a large mixing bowl, add all the dry ingredients and mix well. Add the coconut oil, followed by the milk of choice and mix until fully incorporated. Stir through the trail mix, reserving a couple of tablespoons to place on top. 
  • Evenly distribute the muffin mixture amongst the 12 muffin liners, top with the rest of the trail mix and bake in the oven for 25-30 minutes, or until a skewer comes out clean.
  • Once cooked, remove from the oven and allow to cool in the muffin tin for 5 minutes, before transferring to a wire rack to cool completely. 

Notes

Muffins can be kept at room temperature- Ensure it is in a sealed container. Muffins are freezer friendly for up to 2 months.
