These healthy cinnamon bun breakfast cookies are a filling, nutritious and deceptively guilt-free breakfast, dessert, or snack to enjoy anytime! A chewy cookie base, topped with a creamy, thick and frosting-like topping! This cookie recipe is completely refined sugar free, paleo, vegan, gluten-free, dairy free and high protein!

I never thought I’d be one willing to be a teacher, let alone teach ENGLISH to students in another country. However, the more I chat with my friend who is an assistant English teacher over there, the more appealing it sounds!
Each week (we skype or Facetime weekly), she fills me in on all her new adventures (even a simple trip to a department store is like visiting another country!), amazing progress of her students, coupled with some of the questionable things they ask her.
Earlier this week, one of her students were late to class. This is a huge rarity in the Japanese school system (or rather, Japanese culture), as being on time is one of their evident and admirable qualities. In fact, my friend Jasmine was telling me when she’s TWO minutes early to something, she feels like she is late- That is how punctual they are!
This student is one of her favorites, as she really embraces the English language, and is willing to go above and beyond to build her knowledge of it. She ran into the classroom, almost crying, and apologizing to ‘Sensei-Jasmine’. Jas calmed her down, and soon enough, she was back to her ‘Genki’ (cheerful) self. At the end of the lesson, Jasmine asked her if there was a specific reason for her being late to today’s class.
“Sorry, Jasmine-San. Bird did restroom on my jacket and I had to go home and change!”
I know this has nothing to do with these healthy cinnamon bun breakfast cookies but I’m going to insert more and more stories whenever possible- It’s my plight to eventually make my way there! If you’ve been around this neck of the woods over the past few weeks, you’ll notice all things cinnamon have been making an appearance. From a high protein cinnamon roll shake to no bake cinnamon roll cereal bars, there’s something for everyone. I mean, there is even OTHER cinnamon roll cookies, thumbprint style!
These delicious cinnamon bun breakfast cookies have been designed specifically for breakfast- They are a delicious balance of wholesome carbohydrates, healthy fats and filling protein. There is a chewy, filling cookie base and topped with a frosting of choice- Either a protein-packed option (also sugar free!), a simple cream cheese option or an even simpler coconut butter option. The cookie base also comes in two parts- One flourless, oat based and one coconut flour based, especially for my grain-free and paleo friends! Regardless of which option you choose, you can be sure that there is something there for those who follow a vegan, gluten free, paleo, refined sugar free, dairy free and grain free diet and lifestyle!
So let’s go into a little specifics- The cookie base!
Both of the cookie base options take less than 12 minutes to whip up, as they use less than five ingredients, and all healthy and refined sugar free! The oat-based version uses either oat flour or quick oats, smooth almond butter (or peanut butter!), pure maple syrup and your favorite milk of choice! The second option eliminates the oats and milk, and instead, adds some high fiber coconut flour and a mashed banana!
For the frosting, I recommend using the protein-packed one- This not only gives it a creamy, filling topping but also keeps you much more satisfied- In fact, if you go for 2 scoops of protein powder (64-66 grams), you’ll be looking at around 15 grams of protein per breakfast cookie! For the protein frosting, I recommend using this brown rice protein powder, this vanilla casein protein powder or this vanilla paleo version. Whey protein will not be suitable for this, as it’s simply too sticky and won’t be thick and creamy!
Alternatively, if protein powder isn’t your thing, you can use my other favorite frosting substitute- The coconut butter one! It’s simply made by combining melted coconut butter with a dash of pure maple syrup and some granulated sweetener. To keep the sugar down, you can omit the maple syrup and simply use some milk of choice!
HACK! These breakfast cookies are freezer friendly, so definitely consider making a double or triple batch and storing them away for later consumption! All you’ll need to do is individually wrap each cookie in greaseproof paper and simply thaw overnight or the day-of for a super quick grab and go breakfast or snack!

Healthy Cinnamon Bun Breakfast Cookies
- Prepare cookie base as directed
- While cookies are cooling, prepare your cinnamon bun frosting of choice. To do this, combine all ingredients and mix until a thick frosting is formed.
- Divide the frosting evenly amongst the cookies and sprinkle with cinnamon. For a thicker, firmer texture, refrigerate for 10 minutes
