I’ve noticed a trend on here. Many of my posts seem to reflect my sister in negative light with the stories I share and of our sibling antics.

This will be no different.

The weeks leading up to my big move to America, grocery shopping was something I had put on the back burner unless completely necessary. I was using the most of my time photographing and developing 50+ recipes for my upcoming e-cookbook, spending time with friends and family and brunching- Not necessarily in that order. 

It might sound silly to say ‘grocery shopping‘ is something put on the back burner but when I say that, I mean one or two ingredients or items. I was pretty good at planning during that period. At the start of each week, I’d write a list of everything potentially necessary and do one huge shop and pray for the best. In the second last week, I made a last minute decision to add strawberries to a recipe I was working on (coming next week!). However, as it was a last second decision, I didn’t budget for it in my weekly shop. Niki had mentioned she was about to hit the stores to buy some ‘necessities’ (lol) and I asked her to pick up strawberries if they were cheap.

I didn’t have high hopes as it was April and strawberry season had just ended and was going to have to resort to strawberry jam. You should have seen my face when Niki strutted in with her weave falling off her head with berries in tow. 

“Whoa, you found berries cheap! You’re a legend!” 

“I know. You owe me big time”

“Geebuz so how much do I owe you?”

I had about $3 in coins and was expecting to give SOME of them to her and still be left with change.

“$8.50.”

……

I’m sorry I thought I had explicitly told her to get strawberries if they were cheap. I’m not sure whom in their right mind would think $8.50 was cheap for strawberries unless you were Kim Kardashian, The Queen or Nene Leakes. Niki is most definitely NONE of them.

“Niki I told you to buy them if they were CHEAP!”

“Well they were next to the blueberries and they were $9.95 a punnet so $8.50 is cheaper than those”.

Thanks Niki. You’re judgement amazes me. 

Those strawberries were NOT used in said recipe. I was not risking a potential disaster. Those strawberries were eaten one at a time and reluctantly enjoyed.

Now that I’m here in America, it’s like berry heaven. 3 punnets for $3. For the amount Niki paid for those berries, I could buy…..8 punnets AND have 50 cents leftover. I mean 50 pennies. I mean two quarters. I mean…oh wait. I forgot that minor thing called tax. Regardless, it means I can make one thing- Jam. Jam which are the centrepiece for these epic thumbprint cookies done in true famous Arman fashion- N0 bake style.

These healthy no bake thumbprint cookies are ridiculously easy to whip up and taste absolutely delicious. The base is delicious enough to eat on it’s own but the jam gives it that added burst of colour, sweetness and takes advantage of all things seasonal. Growing up, I ate thumbprint cookies with strawberry jam and thumbprint cookies with raspberry jam so these combine them both using this recipe. While making the jam can be time consuming, you can definitely use store bought as I did with one batch. I strongly recommend this jam for that. Other key ingredients used in this recipe is my favourite coconut flour , favourite cashew butter and for those who make the with with added oats, this oat flour is epic. BOOM. SNAP. CRACKLE. POP. 

Ready in 10 minutes, these no bake thumbprint cookies can be eaten immediately but here’s a cheeky hint- Freeze the cookie base for 10 minutes for it to firm up which makes adding the jam easier and gives it a more fudge like taste. These are also perfect for those following a vegan, dairy free, gluten free or paleo style of eating. I’ve been noshing on these before a workout which is something new for me and I must say- It definitely gives me a boost. That, or it motivates me more to sit on the leg press and go on instagram do legs.

Healthy No Bake Thumbprint Cookies

Just one bowl and ten minutes is all you'll need to make these healthy no bake thumbprint cookies! A homemade refined sugar free jelly made with strawberries and raspberries take it to the next level- Gluten free, paleo, refined sugar free and completely vegan!

Ingredients  

For the gluten free version

  • 1 cup gluten free oat flour
  • 1/4 cup coconut flour sifted
  • 1/4 cup coconut palm sugar can sub for granulated sweetener of choice
  • pinch sea salt
  • pinch cinnamon
  • 1/4 cup cashew butter Can sub for any nut butter of choice
  • 1/4- 1 cup dairy free milk of choice*
  • Homemade or store bought strawberry/raspberry/mixed berry jam of choice

For the paleo version

  • 1 cup coconut flour sifted**
  • 2 tablespoon almond flour**
  • 1/4 cup coconut palm sugar can sub for granulated sweetener of choice
  • pinch sea salt
  • pinch cinnamon
  • 1/4 cup cashew butter Can sub for any nut butter of choice
  • 1/4- 1 cup+ dairy free milk of choice*
  • Homemade or store bought strawberry/raspberry/mixed berry jam of choice

Instructions 

  • In a large mixing bowl, combine the oat flour, coconut flour, granulated sweetener of choice, cinnamon and sea salt and mix well.
  • stir in the nut butter of choice until mixture is very crumbly. Using a tablespoon at a time, add the dairy free milk of choice until a very thick batter is formed.
  • Using your hands, form the dough into golf ball shaped balls. Press down in the centre of each to create a small ditch which can fit around a tablespoon of jam. Place on a lined plate or tray and freeze for 10 minutes to firm up slightly if desired.
  • Using a tablespoon, fill each caveat with jam of choice. Refrigerate until ready for consumption.

Notes

* Depending on the coconut flour you use, you may need less/more liquid
** can sub for all coconut flour or all almond flour
Cookies can be kept at room temperature but will be more fudge like.

  2. Soo my family used to make thumbprints when I was younger only we filled them with icing instead of jelly because I hated jelly. Times have changed and now I love love jelly and these look awesome.

  3. Arman, strawberries are usually always on sale at my local food market especially this time of year. I think raspberries and back berries are the most expensive. You don’t get nearly as much as strawberries for the price. Sometimes though you need to splurge a little! These thumbprints sound delightful my friend. I would love to try these.   4. Welcome to paradise my friend. Where you can find a 1 lb of strawberries for like 50 cents. I consider anything over $3 to be expensive for berries! Jam wise, I like just about all of them. Especially apricot, strawberry preserves, and raspberry. Also blackberry. I don’t hate.

  7. Best intro that I can remember from you! “This will be no different.” I laughed. Man I’ve never had homemade thumbprint cookies. My grandparents would get a huge tray of cookies at Christmas and they would be on there but they always seemed so dry. The cookies that is. From your photos, these guys look super moist and delicious!

  9. Haha! When I was in Australia, my mum asked me to make her one of the recipes from my blog. It involved blueberries. She drove us to three different supermarkets to find the cheapest… $8 for a tiny punnet! Robbery!!!
