Keto Rolls

When it comes to homemade keto bread, my favorite recipes to make are naan, tortillas, and these keto rolls.

It’s no secret that when I’m craving comfort foods, I gravitate towards carbs. Before following a low carb diet, my comfort foods of choice would always be some kind of bread. There was nothing better than a white fluffy and soft bread roll, that I’d slather in butter or jelly and shove in my face.

When I first went keto, recreating my comfort foods was one of the first things I did. My comfort food cravings never go away, so I needed a suitable alternative. I experimented like crazy and came up with a few fantastic options. While I tend to satisfy my cravings with a slice of pizza or a soft pretzel, my all time favorite is bread rolls.

I’ve been meaning to share a keto rolls recipe for quite some time. They’ve been my go-to for years now, and I can’t believe how much they taste like actual bread rolls. It’s so easy to make, and you only need 4 simple ingredients and just one bowl.

No grains and no yeast are needed, but you’d never tell. The texture is soft and fluffy on the inside, tender on the outside. They taste like any good bread roll, without any cheesy or almond flavor.

I had some friends over for a big dinner party for Thanksgiving and served them these rolls as an appetizer and NO ONE believed me when I said they were low carb- They thought they were bakery style dinner rolls!

How do you make keto bread rolls?

The Ingredients

  • Almond flourBlanched almond flour or superfine almond flour. Avoid using almond meal, or the rolls will not be fluffy.
  • Shredded cheese– Low moisture mozzarella cheese is best, but you can also use cheddar cheese. I prefer mozzarella as it is very mild flavored and once made into rolls, has a very mild flavor.
  • Cream cheese– Full fat and softened cream cheese. Dairy free cream cheese can also be used.
  • Eggs- Room temperature eggs. These will be used in the dough and also brush the tops of them with, to give them the lovely shine.
  • Baking powder– Optional, gives it some rise and fluffiness.

The Instructions

Start by adding your shredded cheese and cream cheese into a microwave safe bowl. Microwave it for around 30 seconds, until the cheese is mostly melted. Whisk the two kinds of cheese together, until smooth. Let the mixture cool slightly, adding in the almond flour and eggs. Mix well, until a smooth dough remains.

Now, using your hands, form 8 balls and place them on a lined baking tray. Lightly brush the exterior of each of the rolls with the whisked egg. Bake the rolls for 23-25 minutes, or until golden brown. Remove from the oven and serve immediately.

Tips to make the best keto dinner rolls

  • These rolls must be enjoyed warm. If they are room temperature or even chilled, they will be dense and sturdy.
  • Be sure your cheese mixture isn’t hot when adding the eggs in, otherwise they will begin to cook.
  • For mini burgers, you can use these rolls as a substitute for slider buns.
  • If you’d like garlic dinner rolls, brush the tops of the uncooked rolls with melted butter mixed with minced garlic.

Storing and freezing almond flour rolls

  • To store: Leftover rolls can be stored in the refrigerator, covered, for up to 1 week.
  • To freeze: Place the cooled rolls in a ziplock bag and store them in the freezer for up to 6 months. Thaw completely before reheating.
  • Reheating: You must reheat the rolls, as they are too dense at room temperature/cooled. Either microwave for 30 seconds or place them in a preheated oven until warm.

So I tried cloud bread and I thought it was gross because of the egg yolk taste so that batch the dog loved anyhow so I found these rolls n they looked so delicious. I just pulled them out the oven and have already devoured 2 of them thankyou for this great recipe mine look like biscuits instead of rolls but they are awesome.

  2. Hello! This sounds great – I can’t wait to make. Do you have any idea of the weight of the almond flour in this recipe versus the quantity? I find the different brands vary a lot. Thank you!

For me they are messy to make and I’ve had to double the ingredients to make 8 medium size rolls. I much prefer them than ordinary bread or rolls though and will continue to make them.

I lightly oiled my hands throughout the ‘rolling into balls’ step and it helped with the messiness I think you’re referring to!

Easy and my husband loves them. He is diabetic and I am always trying keto bread recipes to satisfy his bread cravings. This one is a keeper. And I did add the baking powder.

I made these today and my husband can’t stop praising them! I am not much of a bread person, but he found it hard to give it up! Thank you for sharing your recipe!

i can tell you i will DEF. make these again to freeze and even want to gift a batch to help people see that keto ‘bread’ products can taste good.

i made sliders with organic/nitrate free hot dog, melted cheese and garlic mustard aioli and it was delicious! put them in my thai coconut chicken dish and it soaked up the sauce and was delicious! they’re neutral of enough flavor that they soak up whatever flavor is stronger and give you a hint of savory but tasty enough on their own to be eaten with nothing on them. they are dense when cold (like a biscuit) but i’m guilty of eating them right out of the fridge when i’m hungry and they still taste good. i’m usually one to put ghee on anything bread so that’s a testimony. big mans world suceeds again with this recipe!

    I’m in love!!!!!

So easy, gorgeous, and something to serve my diabetic husband that also meets my gluten free needs? Thank you! Thanksgiving is saved!

This is such an easy recipe, I have made a pizza out of this dough by patting it out on a silicone baking mat.(It will make a large pizza) I also love that the dough freezes so well, just let the dough balls sit out to defrost and brush with your egg wash and bake. I will make a double batch to I have them in the freezer, think they would make great ‘sliders’….great recipe, Thank You!!!

So good, will definitely make again! *I did sub out 1/2 of the almond flour for lupin flour, this recipe is a keeper!!!

Bonjour! Les petits pains sont très bons, par contre, ils n’ont pas gardés leurs formes rondes en cuisant? Je comprends pas trop ce qui s’est passé.

New favorite keto rolls recipe. Very tasty and pretty easy once you memorize the recipe. Thanks!

Looked just like the picture and tasted great. I followed the recipe and included the baking powder. Yum!

  15. Would you be able to use a mixer? Also, one comment suggested using yeast. Have you experimented with adding yeast?

  16. 5 stars
Wish I could figure out how to share a picture, but these turned out pretty good. Taste like a good cheesy roll. Kinda a lot of carbs for just one unfortunately because they do come out pretty small but they were still delicious 🙂 I will make them again.

I use this recipe as a base to make bacon buns (a Lithuanian thing that I miss at holidays). I increase the mozz by 1/2 a cup, and a little extra cream cheese, and add a tablespoon at a time of almond flour if needed.

I then dice up about 6-8 slices of thick cut bacon (or 1-1.5lbs of thin slice.) Cook bacon in a pan, do not cook until crispy…. pull it while it still is a *little* rubbery.

I wait until the bacon grease has cooled slightly and pour some of the grease in the bun batter and mix it. (When I’m not making bacon buns I add butter in the mix, because the flavor is good and it helps keep the dough from sticking to your hands.)

Roll out dough balls, put parchment over them and roll/flatten them out a bit. Put a little mozzarella on them, then bacon pieces in middle and fold up the edges together like a dumpling, then reshape them with hands into ball shape. Egg wash them, then get creative with toppings (everything bagel mix, garlic powder, left over bacon pieces, parm, shredded cheese…. Whatever)

I’m in the process of trying to use this dough to cover hot dogs and string cheese before baking.

  18. Hi, is there a way to add something like pumpkin purée to this to make pumpkin dinner rolls? I’m not sure how I would be able to do it… what would need to be changed to make them come out right?

Tried this recipe a couple of weeks ago, and we all thought these rolls were delish and so close to real, unhealthy buns! Am doubling the recipe later today, and plan to use Arman’s suggestion of painting the tops w/ garlic butter. Will serve w/ my vegan sweet potato chili. It’s simple to make; my only problem was the dough turning out too sticky to roll into balls (Hawaii temps are warm now). So, I simply made ‘drop’ rolls, just as good. Was too scared to add a bit more almond flour to thicken dough-may test it out next time. Awesome, simple recipe-thanks, Arman!

I think he means you have 3 whole eggs. Crack 2 whole eggs to go in the dough and then crack 1 whole egg to be used for brushing on the dough. There is no separating of egg whites or yolks. Hope this helps y’all!

  21. 5 stars
The rolls taste delicious but making 5 rolls as opposed to 10. The 10 roll method has the rolls being much too small.

  22. 5 stars
This recipe would be better if we rolled 5 pieces instead of 8 or 10. If you do 8 or 10 the rolls come out very small.

  23. 5 stars
Oh Wow!!These tasted AMAZING. Just like real rolls. I am so grateful for your recipes, Arman. They are so awesome!

  24. I made garlic bread using this recipe last night, I added 2 teaspoons of garlic purée to the mixture and shaped it like a garlic bread, tasted lovely 👍

  25. Thank you so much for this board. My husband loves the name of your board,he’s actually going to try keto.

  26. I don’t understand the egg part… just kidding. What I don’t understand is why people kept posting about the eggs!! Love your recipes! Thank you for sharing!

  27. 5 stars
Everyone 2 eggs go into the dough the 3rd egg is the wash. Make your dough with 2 eggs. These were pretty good. They came out just like the picture. Not a fan of fathead dough but it was worth a try.

  28. 5 stars
These are excellent will definitely be making again. What is the serving size per recipe? Or is the serving size 10 rolls?

  29. 5 stars
These were sensational!! I made them without baking powder- I had actually intended to use it but just completely forgot. You were right about having a mild flavor, they actually tasted more like cream cheese than anything else but even that flavor was very mild. They paired perfectly with my chicken pot pie soup- they even soaked up the liquid like a good roll should, which most almond flour things don’t… must be the cheese.. or the egg.. or the combination of everything? Anyway, I don’t eat “bread” things very often any more because I’ve tried so many recipes that just aren’t good but I thought I’d try these for my husband and I’m glad I did!!! Thank you thank you!!!

  30. Going to try this out but the recipe says 8 and 10 doubg balls. How many should I do for the nutrition value?.

    Thanks,

  31. Thanks so much for the recipe and your patience! I sure wish folks would read previously posted comments before posting theirs.

  32. This is the 3rd time I’m making these rolls today. I make half of the buns savory with an Everything topping and the other half plain for making sugarfree PBJ sandwiches or cream cheese with a small square of sugarfree chocolate melted on. Great tasting rolls. Thanks

  33. 5 stars
I am fairly new to the keto lifestyle, and I am missing bread so much! These are so good! I would eat them even I weren’t doing Keto. I am so very thankful to have found this recipe. And it’s so easy too!

  34. We know it’s 2 eggs for the dough and 1 for the brushi m g but are you supposed to separate the yolk from the white?

  35. From the appearance of the rolls, I am assuming you should use two eggs for making the rolls batter/dough, and brush the rolls with the egg white from one egg.

  36. Is there a different flour that could be used, my husband is allergic to almonds…I know coconut flour is more dense…so not sure if that could be a good substitute.

  37. Will you Please specify . Is there a need to separate the eggs? You keep copying and pasting your answer. If you simply say Do not separate the eggs, it would be extremely helpful.
    Thanks!
I can’t wait to make these

  38. I understood him to mean 2 whole eggs in the dough, 1 whole egg, yolk and white whisked together for the brush. Have a keto biscuit recipe that uses just whites. I use the yolks for custard.

  39. New to Keto, thanks so much for your delicious and easy to follow recipe. I added some grated parmesan after brushing the egg. They came out delicious. Looking forward to trying more of your recipes.

  40. New to keto…really appreciate your delicious and easy to follow recipe. Looking forward to trying some more of your recipes soon. I sprinkled a little salt and some grated parmesan cheese over the dough balls after brushing on the egg. Came out great!

  41. I am a little confused about the eggs. It says to separate them (3) which I am taking that as separate yolk from white. Then add 2 eggs to the batter and use (1) for the top. So am I putting (2) yolks in the batter? The separated whites (3) get brushed on the top?

    1. Please for the love of God correct the recipe for these people! 3 eggs (1 for egg wash) take out separate! Sorry, couldn’t help myself. Making these today.

  42. The egg part is confusing me..
It says seperate 3 eggs..so are you only adding the yolk or the whites? Or is it using all of the egg and saving the white if one egg to brush with?

  43. 4 ingredient keto bread rolls
When I see seperate eggs, that means seperate the white from the yolk. I am guessing you mean use one egg at a time, since there is no mention of using either part of the eggs as a seperate ingredient. Please correct me if I am wrong

  44. The recipe says 3 large eggs separated.
That means separate the yolks and whites. But you don’t say what to do with the yolks/whites. I think that’s what she’s asking.

These rolls are really good. Better than other keto recipes i have tried. My husband and granddaughters liked them. I do have a question do you think it could be cooked in a loaf pan longer like a loaf of bread to slice. Thanks for the recipe.

Great idea. One problem,I live in Qld. Australia and csnnot buy Almond Flour or Blsnched either. I can only purchase Almond Meal.

Not doing Keto, but I make this recipe about once a week and love it. A few tips/observations:
One recipe will make about 4 big sized rolls for burgers/sandwiches. With my stove, it adds about 5 extra minutes to the cooking time.
If you use a scale to weigh the cream cheese (you’ll need 2 oz) you won’t have the bother of scraping cream cheese out of a tiny measuring cup. I find no difference when I substitute low fat cream cheese.
The rolls are fine without the egg wash, but if you want the egg wash shine, or want to top with poppy or sesame seeds, separate the third egg and use only the white portion for the wash. Save the yolk and any remaining egg white to add into tomorrow’s scrambled eggs.
If you have any dry yeast past its prime, add 1 TBSP into the mix. It gives the rolls a wonderful bready fragrance.
Try adding 1 TBSP fresh or dried rosemary.

Made it and it came out amazing. Thanks so much for this recipe. Even my grand babies liked it.

  46. Thank you Arman. Your pics have to be the best I’ve ever seen-just perfect.
    I don’t have a microwave-would you have/provide the instructions to use the stovetop/oven?

    Many thanks

Oh my goodness! Best rolls ever! I absolutely love baking/cooking and recently switched to full keto. I’ve tried many different recipes from keto books to websites etc and Arman is the best! Every recipe I make turns out the best and matches the pictures to a T. I can’t wait to try the rutabaga mashed potatoes! You’ve made my whole house hold so much healthier and it feels like we’re cheating all the time but losing pounds 😁 thank you!
