A homemade copycat version of Eating Evolved Dark Chocolate Banana Cream Coconut Butter Cups has been on my radar for quite some time.
I remember when I picked a few of their flavors up at Whole Foods. Already being a fan of the original coconut butter cups, I was intrigued by the other options- Banana cream, strawberry and the mint cream one.
Their mint version reminded me so much of my junior mint cups and homemade peppermint patties. It was their banana flavor which really intrigued me as it had the most delicious taste. It maintained the richness and creaminess of the coconut butter, but with just the right amount of banana.
I find recipes using bananas to be hit and miss- Just a little extra banana can make it overpowering. Not enough banana can really affect the texture of a recipe.
After some searching and trying mixing coconut butter with banana (don’t….it formed an odd, yet delicious texture), I almost gave up, until my mom suggested using natural flavoring. Bingo! Natural banana extract.
Similar to my homemade mint cups, using the banana extract allowed me to adjust the amount of flavor needed, and a little bit goes a very long way.
It also meant that those who don’t have bananas on hand don’t need to fret- This is completely banana free!
I based this recipe off of my homemade chocolate coconut keto cups.
WHAT IS BANANA EXTRACT?
Banana extract is a flavor extract, used to provide a banana flavor to desserts or beverages, without the need of any bananas.
Finding a good quality banana extract is difficult. Some have added sugar in them and others are full of artificial ingredients.
I was fortunate to stumble across this Pure banana extract which worked beautifully in these homemade coconut butter cups. It didn’t separate from the coconut butter and it also had an identical banana flavoring.
HOMEMADE KETO CHOCOLATE VS STORE BOUGHT KETO CHOCOLATE
To keep these coconut butter cups keto friendly and low carb, you can either make your own chocolate or use a specific store-bought brand.
Lily’s chocolate chips are sweetened with stevia and enjoyed by many who follow a ketogenic diet. They are low carb and sugar free, but melt beautifully and don’t leave with a bitter aftertaste.
Enjoy Life chocolate chips are dairy-free, vegan, paleo and gluten-free, so are another option to use. These are my favorite, as they taste like a traditional chocolate bar and melt beautifully.
Homemade keto-friendly chocolate- You simply combine an equal amount of cocoa powder with coconut oil and mix until combined. Moving quickly, you’ll coat your muffin liners/tin with the chocolate and refrigerate or freeze until firm.
Note- Homemade keto chocolate will be 100% unsweetened, so add some sweetener if desired. It’s also very flimsy at room temperature, so it is imperative to keep them refrigerated or frozen at all times.

Homemade Banana Cream Coconut Butter Cups (Keto, Paleo, Vegan)
For the non-keto version
Line an 18-count mini muffin tin with mini muffin liners and set aside. Alternatively, prepare a silicone mold.
Melt your chocolate chips (or prepare your keto chocolate). Evenly distribute between the cups and refrigerate until firm.
Prepare your coconut butter filling. Mix the melted coconut butter with banana extract- Ensure it is mixed well. Remove firm chocolate cups and evenly distribute the coconut butter filling amongst the cups. Refrigerate.
Prepare extra chocolate chips/keto chocolate and top the chocolate cups.
* Adjust according to whichever sweetener you have on hand- liquid stevia, etc. However, if you use maple syrup or honey, use 1/4 cup.
Homemade 4 Ingredient Banana Cream Coconut Butter Cups can be kept at room temperature if NOT using the keto chocolate. They are best kept refrigerated and are also freezer friendly.
