My egg white bites recipe is low-calorie, high-protein, and makes the best breakfast meal prep. They’re easy to customize, packed with flavor, and never rubbery!

While I have a soft spot in my heart for Starbucks egg white bites, I knew I could do a better job at home. These egg bites are light and fluffy and don’t skimp on flavor. Like my air fryer egg bites, we love customizing them with different fillings, depending on what’s in the fridge (again, convenience is key here!). 

Why I love this recipe

  • The best Starbucks copycat. They have a better texture, they’re more flavorful, and as you can imagine, they’re more affordable. 
  • Family-friendly. I have some egg-averse kiddos in my life, and let me tell you, they still love these egg bites. 
  • High-protein, low-calorie. Each one packs 9 grams of protein and only 50-60 calories, depending on the filling.
  • Great for meal prepping. Like sous vide egg bites, I always make extra so I can store them in the fridge. That way, breakfast is taken care of all week long. 

Key ingredients

  • Egg whites. I used carton egg whites to make my life easier, but you could use whole egg whites. Plan on needing 2 cups of cartoned whites or about 12 egg whites (save the yolks to make my chocolate creme brulee!).
  • Cottage cheese. I used non-fat cottage cheese to keep the calories low, but I tested every fat percentage, and they always turned out tasty. Brands with a higher fat content will yield creamier egg bites.  
  • Salt and black pepper. To taste.
  • Mix-ins. I used sundried tomatoes, fresh spinach, and red bell peppers, but feel free to get creative. Whatever you add, make sure to chop it very finely.

How to make egg white bites

Step 1- Blend. Add the egg whites, cottage cheese, and spices to a blender and blend until combined.

Step 2- Distribute. Pour the egg white mixture into a muffin tin.

Step 3- Assemble. Add the filling to each muffin tin.

Step 4- Bake until the egg whites are set and lightly golden. Let them cool briefly before serving them warm or saving them for later. 

Arman’s recipe tips

  • Use a silicone mold. I did this and found it was way easier to remove the egg bites once they were cooked. 
  • Only fill the muffin cups ¾ of the way. So they have room to expand as they bake. 
  • Don’t overblend the egg whites. Over-blending can add too much air, which could cause the egg bites to deflate and become spongy. Only blend on medium to medium-low speed until you have a smooth, cohesive texture. 
  • Make dairy-free egg bites. Use my dairy-free cottage cheese

Can I use whole eggs?

Yes, if you’d rather use whole eggs, you can use 2 cups of whole eggs or about 4 whole fresh eggs.

Egg White Bites

My homemade egg white bites are packed with protein and contain very few calories and carbs. They are easy to customize and never rubbery.
Servings: 6 servings

Total: 17 minutes

Ingredients  

  • 2 cups egg whites 12 large egg whites
  • 1/2 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup sun dried tomatoes chopped
  • 1/2 cup baby spinach finely chopped
  • 1/4 cup bell pepper diced

Instructions 

  • Preheat the oven to 180C/350F. Lightly grease a 12-cup muffin tin or use silicone liners. You will need 6 for this batch.
  • In a blender, combine the egg whites, cottage cheese, salt, and pepper. Blend until smooth.

  • Pour the blended egg white mixture into each muffin cup, filling them about 3/4 full.

  • Evenly distribute the sun-dried tomatoes, baby spinach, and bell peppers among the muffin cups.

  • Bake for 13-15 minutes or until the egg whites are set. Let the bites cool for a few minutes before removing them from the muffin tin. Serve warm or store for later.

Notes

TO STORE: Store the egg bites in an airtight container in the fridge for 4-5 days. 
TO FREEZE: Once the egg bites have cooled, place them in freezer-safe containers and store them in the freezer for up to 6 months. 
TO REHEAT: Microwave the egg bites in 15-second intervals until warm. 
Variations
  • Cheese. Add ¼ cup of feta cheese, cheddar cheese, mozzarella cheese, or Monterey jack cheese.
  • Protein. Add finely chopped (and cooked) bacon, diced ham, or turkey sausage.
  • Veggies. Try finely chopped green onions, chives, garlic, or cooked broccoli.
  • Spices. Add 2 teaspoons of garlic powder, onion powder, or paprika.

    Arman, I just made these egg white bites and they are fantastic. Never buying Starbucks again. I will try to make them in a larger muffin tin so I can freeze some for grab-and-go breakfasts. Thank you!!
