This keto grilled cheese recipe is crispy, golden, and filled with gooey melted cheese. All you need is 10 minutes, and it’s only 3 grams of net carbs.

Grilled cheeses are the epitome of sandwiches, and just because I’m on a keto diet does not mean I’m going to miss out on them. With my recipe, I’ll prove why you can and SHOULD be making low-carb grilled cheeses!

Why I love this recipe

  • So many textures. The bread is crunchy and soft, while the cheese is silky smooth and gooey–actually as it should be. 
  • Easy to customize. I’ll start with my preferred cheeses for making grilled cheese, and then I’ll add a few variations so you can customize your sandwiches to your liking. 
  • Fast. I timed myself to make sure this recipe didn’t take longer than 10 minutes because when you want a grilled cheese, time is usually of the essence.

Key ingredients

  • Keto bread. Over the years, I’ve tried tons of keto bread, and so far, Thinslims and Aldi are my favorite brands. For this particular dish, I made my own keto bread recipe
  • Butter. I always use unsalted butter since it’s easy to add salt later, but you can’t take it away if it’s too salty. 
  • American cheese. I know American cheese is controversial, but let’s face it, no cheese on the planet melts like American cheese does. That’s why I LOVE using it for grilled cheese sandwiches. Look for a block of cheese as opposed to slices (they melt even better!).
  • Mozzarella cheese. My secret ingredient! Adding a small amount of shredded mozzarella to the grilled cheese guarantees a beautiful pull and keeps the filling extra gooey. 
  • Salt. Always add a pinch of flaky sea salt to the buttered exterior. Trust me, this takes it to another level. 

How to make a keto grilled cheese sandwich

This is an overview with step-by-step photos. Full ingredients & instructions are in the recipe card below.

Step 1- Assemble. Brush butter on one side of both slices of bread. Add cheese to the non-buttered side, then sandwich them together. 

Step 2- Toast. Cook the sandwich in an oiled pan for 3-5 minutes, then flip and cook until both sides are golden brown. 

Step 3- Serve. Remove the sandwich from the heat, sprinkle with salt, slice in half, and serve.

Recipe variations

  • Bread. Try my 90-second bread, keto buns, or coconut flour bread.
  • Mayo. This is a controversial opinion, but I know some people love mayo on their grilled cheese. I’m not one of them, but if you are, then add it along with the butter. But do NOT skip the butter–it’s essential to getting the perfect crisp. 
  • Protein. Add cooked bacon, sliced ham, or an over hard egg for a heartier sandwich. 
  • Use different kinds of cheese. Whichever cheese you choose, I suggest picking one cheese for flavor (like sharp cheddar cheese or pepper jack) and one melty cheese for texture (like gouda, cream cheese, or fontina).
  • Veggies. Add sundried tomatoes (with no added sugar), spinach, or thinly sliced onion. 

Storage instructions

To store: Store leftovers in an airtight container in the refrigerator for 2-3 days. 

To freeze: Wrap the non-grilled sandwiches in parchment paper, then in foil, and store them in a freezer bag for up to 2 months. Thaw them overnight in the fridge before grilling. 

Reheating: Reheat in a skillet over medium-low heat, flipping every few minutes until both sides are warmed. Or, place a sandwich in the air fryer and air fry at 350F for 3-4 minutes, flipping midway through.

This keto grilled cheese is a low carb sandwich that tastes like the classic! Buttery and crunchy on the outside, it's loaded with gooey melted cheese in the middle!

Cook: 5 minutes

Ingredients  

Instructions 

  • Place the slices of bread on a flat surface. Add butter to one side of each of the slices of bread.
  • Add the slices of cheese to the non-buttered side of the bread. Add the grated mozzarella cheese. Place the second non-buttered side of the bread on top.
  • Lighty grease a non-stick pan and place it over medium heat. Once hot, add the sandwich onto the pan and let it sizzle, and cook for 2-3 minutes. Flip and cook for a further 2 minutes. Press down using a spatula and if cheese begins to ooze out, the grilled cheese is done.
  • Remove the grilled cheese sandwich off the pan and sprinkle with the flaky sea salt. Slice in half and serve.

Notes

* Either homemade keto bread or a packaged keto white bread (like Thinslims bread).
TO MAKE AHEAD: You can prepare up to 5 days’ worth of sandwiches in advance (pre-grilling). Simply prepare them as instructed and place them all on a plate or tray and cover with plastic or saran wrap. When ready to grill, simply remove the sandwich and place it on a greased non-stick pan and cook them as instructed. 
TO FREEZE: Wrap the prepared non-grilled sandwiches in parchment paper then place them in individual ziplock bags and store them in the freezer for up to 2 months. Thaw them overnight in the refrigerator before grilling.
