When I first suggested making eggplant pizza for my family, I’m pretty sure the word ‘disown’ came up. However, I wanted to prove them all wrong, and let’s just say the results speak for themselves: A deceptively satisfying dish that’s low in carbs but FULL of flavor.
Why I love this recipe
- Healthy. My recipe has a fraction of the carbs and calories as regular pizza, plus tons more fiber and vitamins.
- Easy to customize. I like to set up mini pizza stations and let my family take turns customizing their slices.
- Great for weight loss. If you (or someone you know) are on a weight loss journey or just looking to add more veggies into their diet, they will appreciate this recipe. I promise!
- Just as satisfying as regular pizza. Let’s be real–the best part about pizza is the sauce and cheese–and you still get plenty of that!
Key ingredients
- Eggplant. Choose large, firm eggplant so you can get thick slices. I prefer the large globe eggplant variety as they make for bigger slices.
- Olive oil. To pre-roast the eggplant. I prefer olive oil, but any neutral-flavored oil will work.
- Pizza sauce. For convenience, I usually just use a bottled marinara sauce, but you’re more than welcome to make your own Pomodoro sauce or Sugo sauce.
- Vegetables. I used mushrooms, bell peppers, and onions, but any toppings will work.
- Cheese. I prefer a mix of mozzarella cheese and provolone cheese as I find it yields a silky smooth melt, but you can use just mozzarella if you prefer.
- Seasonings. I used Italian seasonings, salt, and pepper.
How to make eggplant pizza
I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.
Step 1- Prep work. Preheat the oven and line a baking sheet with parchment paper. Cut the eggplant into thick slices.
Step 2- Salt the eggplant. Cover the eggplant in oil and place them on the baking sheet. Sprinkle with seasonings and bake until the eggplant is soft in the center.
Step 3- Assemble. Cover the slices in sauce, cheese, and desired toppings.
Step 4- Broil the eggplant until the cheese melts. Let the pizzas cool briefly before serving.
Arman’s recipe tips
- Only have small eggplants? No worries! I just slice them crosswise so I get smaller but thicker slices.
- Soak the eggplant first. Personally, I found baking the eggplant twice yielded the best flavor and texture, but if you want to minimize the bitterness of eggplant skin, soak the slices for 15 minutes before patting dry and baking.
- Don’t skip the salting. Adding salt to eggplants before roasting them helps remove excess moisture, which will give the eggplant a tender bite.
- Don’t overload with toppings. Too many toppings will cause the eggplant to fall apart. Stick to 2-3 tablespoons of total toppings per slice.

Ingredients
- 1 large eggplant
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup pizza sauce
- 1 cup mozzarella cheese divded
- 1/2 cup provolone cheese divided
- 1/4 cup mushrooms chopped
- 1/4 cup onions chopped
- 1/2 cup bell peppers diced
- 1 tablespoon Italian seasoning
Instructions
- Preheat the oven to 200C/400F. Slice the eggplant lengthways (the long side) into 1⁄3-inch slices or into 2-inch rounds.
- Brush both sides of the eggplant with olive oil and place them on a lined baking sheet. Sprinkle with salt and pepper and bake for 10 minutes or until the eggplant is cooked and soft.
- Spread marinara sauce on each eggplant, and sprinkle with some of both shredded cheeses. Add the onions, mushrooms, and bell peppers, and sprinkle generously with the remaining cheese. Sprinkle with Italian seasoning.
- Set the oven to the broil setting and bake for 5 minutes or until the cheese is golden and melted.
- Remove the eggplant pizzas from the oven and serve immediately.

I have never worked with eggplant before. What do you mean soak the eggplant? Soak it whole, or soak the cut slices? Nowhere in the recipe steps does it say to do this but the write-up above it says to. ???
