Air Fryer Mushrooms

These air fryer mushrooms are juicy and buttery and make the perfect side dish. Ready in under 10 minutes.

I am the biggest mushroom lover, but even I need to change up my cooking methods to keep things interesting- that’s where my air fryer mushrooms come into the picture.
I was skeptical about cooking mushrooms in the air fryer, because totally crispy mushrooms aren’t super appetizing- there’s some appeal in them being soft and buttery. The first few batches turned out like this, so it wasn’t until I used a mix of olive oil and butter to compensate for the quick moisture loss in the air fryer that the mushrooms reabsorbed the butter, becoming tender with slightly crisp edges.
They’ve now become our go-to side dish over steaks, grilled chicken, or if we need a quick veggie side. Or if you’re my partner, on their own with a pinch of Parmesan.

Why I love this recipe
- Quick. This recipe takes no longer than 10 minutes to prepare.
- Healthy. Mushrooms are a nutrient powerhouse! It is packed with fiber and protein, with zero saturated fat. They are also low in calories and carbohydrates (source).
- Simple Ingredients. Mushrooms need a few flavor boosters to make them shine.
Key Ingredients
Here are the main ingredients for air-fried mushrooms, along with my kitchen notes. The full list with measurements is in the recipe card below.
- Mushrooms. White button mushrooms are the best for air frying. They are readily available and offer that signature earthy taste with a tender texture. You can also use portobello or cremini mushrooms, but take note– you’ll need to increase the cooking time by 2 minutes to compensate for the extra moisture.
- Garlic. Freshly minced, NOT the dried kind.
- Olive oil and butter. A combination of both fats makes the mushroom tender while also adding a rich flavor. Please do not swap one out for the other.
- Soy sauce. Adds a fabulous umami flavor, especially in combination with the butter.
How to make air fryer mushrooms
Step 1: season. In a bowl, toss everything together until combined.

Step 2- Air fry. Add the mushrooms to the air fryer basket in a single layer. Air fry the mushrooms for 7-8 minutes, flipping halfway through.

Step 3- Garnish with some chopped parsley and a squeeze of fresh lemon juice and serve.

Arman’s recipe tips
- Add more oil if needed. You want the mushrooms to be evenly coated in fat so they caramelize and sizzle up nicely. If not all your mushrooms are coated, add an extra teaspoon or two.
- Air fry in a single layer. If all of your mushrooms fit in the air fryer, cook them in batches. This also prevents soggy mushrooms.
- Use other seasonings. Like oregano, fresh thyme, or chili flakes.
- Use flavored butter. I’ve made these mushrooms with garlic butter, chili butter, or even some truffle butter, and it transforms this dish into something extravagant.
- For crispier mushrooms, sprinkle some panko bread crumbs before cooking.
Storage instructions
To store. Leftover air-fried mushrooms can be stored in an airtight container in the fridge for up to three days.
To freeze. Place the cooked and cooled mushrooms in a shallow container and freeze them for up to 1 month.

Ingredients
- 16 ounces button mushrooms halved
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 1/2 tablespoons butter
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the air fryer to 180C/350F. Grease an air fryer basket.
- In a mixing bowl, add the mushrooms, garlic, olive oil, melted butter, soy sauce, salt, pepper, and garlic powder, and mix well.
- Transfer the mushrooms to the air fryer basket and cook for 7-8 minutes, shaking halfway through.
- Remove the mushrooms from the air fryer and sprinkle with fresh parsley.
Notes
- Leftovers: Keep in the fridge for up to 3 days or in the freezer for up to one month.
- Reheating: Microwave for 20-30 seconds or reheat in the air fryer.
