What I love the most about this recipe is that you can make it with just pantry staples and chocolate! Here’s what you’ll need.

  • Butter. Any unsalted softened butter will work for this recipe. But if you use salted butter, skip adding the additional salt.
  • Brown sugar. Its molasses flavor adds a layer of complexity to the cookie. Also, brown sugar helps achieve the perfect moist and chewy texture.
  • Sugar. I love combining white and brown sugar for a moreish cookie texture.
  • Baking powder. To get a lovely rise.
  • Salt. To enhance the flavor profile and balance the sweetness.
  • Vanilla extract. You’ll need just a splash to mimic the classic chocolate chip cookie taste.
  • All-purpose flour. The base for your instant cookie dough.
  • Chocolate chips. I like using semi-sweet chocolate chips. If you have only a bar of milk, dark, or semi-sweet chocolate at home, make this cookie with it.

Step 1- Make the dough. Mix butter, sugars, vanilla extract, baking powder, and salt in a bowl. Stir in flour and chocolate chips to make the dough.

Step 2- Microwave and enjoy! Transfer the dough to a microwave-safe bowl and heat it for a minute at high power. Allow it to set for about 20 seconds, and enjoy!

Flavor and recipe variations

  • Add fruits and nuts. Dried fruits like raisins or goji berries and nuts like walnuts, pecans, and roasted almonds taste incredible in these cookies.
  • Make a double chocolate cookie. There’s no such thing as too much chocolate. Combine with a spoonful of cocoa powder to make a double chocolate chip cookie.
  • Scale it up. Did you know you could make a deep dish cookie in a skillet? Bake a pie-like cookie in the oven for 15-20 minutes for a gooey dessert!

  • Next, add the all-purpose flour and chocolate chips and mix thoroughly.
  • Transfer the mix to a microwave-friendly bowl and heat for 60 seconds. Let it sit for 20 second before serving. 

Oven option

  • Follow instructions as above and bake for 10-12 minutes, until just tender on the outside.

I’ve been spending the past week going through all of your healthy desert recipes, and as I’m allergic to nuts have finally tried sunbutter as an alternative to nut butter and found that it works great! That said, can I sub the almond meal in this for regular white or wheat flour?

  11. Mushy peas are yum! Living in the UK they are a seaside holiday staple. I have never heard of potato gems but it sounds like they might be akin to tater tots? If so, LOVE THEM. Got to be smothered in ketchup though. Ooey Gooey is a silly – yes – but great word, but maybe I only think that because I like words that make others feel a little uncomfortable 😛

  13. If you use a blender to take away the clumps of the cottage cheese, it probably would look a lot more appealing! 😀 But yes, cottage cheese clumps in a cake are always a NO-NO. I can’t believe you’d actually be served mushy peas–LOL! It’s good if it’s in a soup or if you’re a baby!

    I’ve always wondered the difference between almond meal and flour. I’m happy to hear you didn’t notice a difference as I usually never remember which I actually buy.

    Ooey gooey is a funny word. My mom HATES the word gooey and gets mad whenever I use it.
