While I have no qualms using a microwave, I understand not everyone has this point of view. As someone who is also a fan of using an oven or toaster oven, I needed these mug recipes to be able to be made using both methods.
Over the years, I’ve found that making smart swaps and testing out new ingredients really helped in developing quick, easy and guilt-free mug recipes without sacrificing on taste.
Instead of using wheat-based flours, making mug cakes with coconut flour and almond flour has given them a healthier, low carb makeover. They also have a fantastic texture, more than their original counterparts.
These single serving mug cakes are also perfect for those following specific diets. Not only are they all low carb, ketogenic friendly and paleo friendly, they are also all 100% eggless so suitable for vegans.
How to make a keto mug cake
Making a keto mug cake is so simple and all follow the same process.
Step 1- In a microwave-safe bowl or in an oven-safe ramekin, mix your dry ingredients well.
Step 2- Add your wet ingredients and whisk well, until a cake batter remains. If the batter is too thick, add some milk to loosen up.
Step 3- Microwave the mug cake for 1-2 minutes, or until ‘just’ cooked. Alternatively, you can bake it in the oven. Preheat the oven to 180C/350F. Bake the mug cake for 8-12 minutes, or until a skewer comes out just clean.
Can I eat a keto mug cake every day?
Keto mug cakes are single-serving desserts perfect to enjoy every single they. They are relatively low calorie and suitable for a healthy dessert option or even snack!
Why does a keto mug cake come out dry?
Mug cakes generally come out dry due to overbaking them or overcooking them. The key to the perfect moist and cake-y mug cake, is to ensure the batter is thick and smooth. Furthermore, it is best to undercook it and adjust the cooking time from there.
