The silly things I do because of my stubbornness.

Last week, I was at Krogers (the local supermarket chain in Columbus, Ohio) and they had a promotion going on where they were giving sample cups of various cakes. The three on offer were red velvet, Angel Food Cake and a vanilla sprinkle cake

Oh, one thing. Angel Food cake is like eating air.

Anyway, I was offered all three to sample and while all delicious, I was perplexed. The white sprinkle cake only had green, light blue, pink and yellow sprinkles in it. Why only those specific colors? Was the cake mix makers color racist? Did the other colors turn the cake another color or something? 

WHY. WHY. WHY.

Being the goose I am, I asked the guy serving and he told me his name was not Duncan Hines. Well, obviously. He introduced himself at the start as Neil. Anyway, I left Krogers with no answer but with the intention to recreate the delicious vanilla batter flavor in a no-bake bite with ONLY those four colored sprinkles in them.

So what did that entail?

Being the goose AND stubborn goat I am, I used some decorative sprinkles (Yes, I know not Paleo. They were for decoration. Sue me) and single-handedly separated them by color so my recipe could entail the green, pink, light blue and yellow sprinkles. 

Did they make a difference in the recipe in terms of flavor?

Absolutely not. However, they were delicious AND they looked like that silly, sprinkle racist cake. So what do we have here? Healthy No-Bake Cake Batte Bites.

These healthy No Bake Cake Batter Bites are without a doubt my favorite no-bake recipe to date- A very bold statement. It might have to do with being team vanilla over team chocolate or maybe the sprinkles DID have magic powers but regardless- They are epic. They are soft, chewy and taste like a sweet treat but are actually ridiculously healthy and packed full of protein. Not only are the completely sugar-free and take less than 10 minutes to whip up, they are also naturally gluten-free, vegan, grain-free and paleo (YES. I KNOW SPRINKLES AREN’T PALEO.). 

For my non-paleo friends who make this recipe, PLEASE try adding in the all-purpose gluten-free flour- It seriously takes the texture to the next level. Although using the completely paleo option is already very cake-like- Holla, coconut flour

Healthy No Bake Cake Batter Bites
The taste and texture of cake batter in a delicious, no-bake bite form! These soft and chewy healthy bites taste like a treat but are packed full of nutrients! Ready in just five minutes, this recipe is also gluten-free, vegan, grain-free and completely paleo!

Ingredients
  1. 1 1/4 cup gluten-free oat flour*
  2. 1/4 cup gluten-free cake flour (can use all oat flour)*
  3. 1/4 cup coconut flour
  4. 2 scoops vanilla protein powder (I tried a vegan brown rice brand, a paleo egg white brand and a casein blend)- Optional
  5. pinch sea salt
  6. Handful of sprinkles (optional)
  7. Granulated sweetener of choice**
  8. 1/2 tsp vanilla extract
  9. 1/2 cup nut butter of choice (I used cashew butter)
  10. 1/4 cup maple syrup (can sub for honey, agave or brown rice syrup)
  11. 1 T + dairy free milk of choice***
Instructions
  1. In a large mixing bowl, combine your flours, protein powder, salt and granulated sweetener and set aside.
  2. In a microwave safe bowl or stovetop, melt your nut butter with the maple syrup. Whisk in the vanilla extract and pour into the dry mixture. Mix very well until fully incorporated.
  3. If batter is too thick (it generally is), add a tablespoon of dairy-free milk, until a thick batter is formed. If batter is too thin, add a dash more flour until a thick batter is formed. Stir in optional sprinkles and form into bite sized balls.
  4. Refrigerate for at least 10 minutes, or until firm.
Notes
  1. * For the paleo option, use 1 cup TOTAL coconut flour or almond flour, however you'll need to adjust the liquids for the latter.
  2. ** My protein powder was sweetened so I omitted but adjust accordingly
  3. *** Depending on the blend of flours you use, you may need less or more. Adjust accordingly.
  4. Bites can be stored at room temperature but best refrigerated.

  1. I can’t believe you separated out the colored sprinkles. That’s intense and slightly neurotic, even for me and I do neurosis well. Ha. I used to separate out runts, nerds, sweethearts, all the sugar candies and only eat one color at a time.

  3. I do think stubbornness is a top-notch character trait! I have to say this, I am a mule 😉 Nevertheless patience is not one of my strong traits so considering the size of those sprinkles I truly admire your dedication!
    I guess as the goose I am I have to try these with not color-coordinated sprinkles when you consider this your best to date.

I just hope the goose is the front and the goat is the rear…otherwise it would be a pretty odd looking creature. But you know what’s NOT odd? Cake batter. In ball-form. I want to eat all of these. Actually I want to make ice cream and break off chunks of these into the ice cream. Is that allowed?

    Cake batter in general is quite racist in itself; I guess metallic colors are too “grungy”!

  6. HAHAHA SPRINKLE RACIST!!! I feel bad but like I get really upset when i top things with sprinkles and the brown ones are everywhere.. made even worse when i get to the bottom of the tube and all that’s left is a forest of moss. Maybe I should save those for halloween when i want to scare people and make dirt pudding or something.

    Therefore i appreciate your use of color a lot more than i appreciate angel food cake. the name angel food cake is synonymous with weight watchers for a reason. unless youre going to drown it in strawberry compote and pretend that it’s still sugar free 😉

  8. I literally lol’ed as i was reading this about your prophylactic disclaimer about sprinkles not being paleo. Love that you provide lots of options so everyone can try these. I mean if they are your favorite (indeed a bold statement) they have to be good.

  9. Oh my god, these bites are so good. I made them yesterday evening to take a few to work today. I loved them, I even gloated (I don’t know the word for smiling and moaning with closed eyes :-))They are so sweet and yummy.
    Made some apple-pie bars as well (they’re in the fridge now), I cut an apple fine and put a handful of of little pieces of nuts in them (almond and hazelnut).

  10. Hi Arman, new to this so when you put 1 T what measurement is that? Is that 1 cup total or 1 teaspoon? Sorry for the bone question! Really looking forward to making your recipes (I am trying to clean up my eating habits but I have a sweet tooth) they all sound delicious and I blooming love sprinkles!!

      1. Thank Arman, it’s probably just me. I don’t really cook massive amounts so I just wanted to check. I love the look of all your recipes, I going to make these as I have a massive sweet tooth so hopefully I can satisfy it more healthily with these 🙂 thanks again

  11. These are really good! Mine came out much darker than yours. I think because I used brown rice protein powder. It has a dark color to it. Yay for the sprinkles. They gave these a little crunch when you bite into them! Will be making these again!

  12. these cake bites look and sound great, but i am new to this paleo/gluten free/vegan world so have a question for you. is the cashew nut butter actually peanut butter? is it smooth? Also, if i was to substitue the oat flour for almond or coconut, would it just be 1 cup i’d need? thanks. Sorry if you’ve answered these questions already!

    1. Hi Grace! The cashew butter I used is smooth- If you don’t follow a strict paleo lifestyle, definitely go for peanut butter! If you switch out the oat flour, you can add either, but will need to increase the liquid.
