Learn how to make your own high protein pancake mix using just 4 ingredients! This homemade protein pancake mix needs just 4 ingredients and has no dairy, no eggs, and no gluten- it’s cheaper and BETTER than store bought protein pancake mixes. 24 grams protein per serving.

The market is full of protein pancake mixes. From Birch Benders, Krusteaz, Aunt Maple’s, and Kodiak- There are options for everyone! Heck, even Trader Joe’s have released their own protein pancake mix.

Now, as someone who LOVES convenience, protein pancakes used to be something I wouldn’t be able to enjoy regularly. I always thought it to be too time consuming to prepare protein pancakes, especially if it was mid-week. The idea of making a mess in the kitchen and meticulously measuring out the ingredients just was NOT appealing.

Not anymore.

It is SO easy to make your own homemade protein pancake mix. No eggs, no milk, and just 4 simple ingredients. You only need to add water or your favorite milk to make a stack of thick, fluffy protein pancakes. 

Why make your own protein pancake mix? 

Making your own protein pancake mix is not just easier, but it is healthier too. You know EXACTLY what goes into the mix, and only wholesome and clean ingredients.

If you look at store bought protein pancake mixes, you will see added sugar, added sodium, and even strange ingredients like vital wheat gluten and corn starch.

My homemade pancake mix has none of those. It’s also suitable for vegan, gluten free, and dairy free diets.

How to make your own protein pancake mix

The Ingredients 

  • Oat Flour– You can use store bought oat flour or homemade oat flour. Be sure that you use certified gluten free oats, to ensure this high protein pancake mix is gluten free.
  • Protein Powder– Unflavored or vanilla flavored protein powder. Use either a brown rice protein powder or other vegan and gluten free protein powder. 
  • Granulated sweetener of choice– To sweeten the pancakes, without sugar or calories! Use either monk fruit sweetener or erythritol. 
  • Baking powder– To leaven out the pancakes to make them thick and fluffy. 

The Instructions

Simply mix together all your ingredients in a mixing bowl, then transfer to a glass jar or sealable container. 

When ready to make protein pancakes from the protein pancake mix, combine 3/4 cup of the protein pancake mix with 1/4 cup milk or water. If the batter is too thick, slowly add a little extra liquid 1 tablespoon at a time, until a thick but smooth batter remains. Add any flavor or ingredient mix-ins and cook the pancakes. 

Protein Powder Recommendations 

This protein pancake mix can use any protein powder, so use whichever you have on hand and you enjoy the taste of. The only difference is the different blends and also different amounts of liquid you will add to make the pancake batter. 

  • Brown Rice Protein Powder– The best vegan and gluten free protein powder to use for the mix. It is thicker than other types, so you’ll need to add more milk or water when preparing the protein pancake batter. 
  • Raw Plant Protein Powder– A more pure plant based protein powder. This kind tends to have an earthy flavor and texture. 
  • Casein Protein Powder– Casein protein powder is not vegan, but it is gluten free. Use casein protein powder for a thicker and fluffier protein pancake. 
  • Whey Protein Powder– Also not vegan, whey protein powder is the ‘cleanest’ protein powder. I don’t recommend whey protein powder as the pancakes are thinner. 

Can I add an egg to the protein pancake mix? 

I opted to keep this protein pancake mix vegan, both pre-made and post-made. I haven’t tried adding eggs to it, as the baking powder already gives it the fluffy and thick texture. 

Storage Tips

Homemade protein pancake mix should always be stored in a sealable container at all times. Jars and containers are all great choices. 

Protein Pancake Mix Flavor Ideas

  • Banana Protein Pancakes– Add 1/2 cup mashed bananas to the batter, and top with extra sliced bananas.
  • Vanilla Protein Pancakes– Add 1/2 teaspoon vanilla extract into the batter.
  • Blueberry Protein Pancakes– Fold through 1/2 cup fresh or thawed from frozen blueberries into the batter. Serve with extra blueberries.
  • Chocolate Protein Pancakes– Add 1-2 tablespoons of cocoa powder to the dry mix before forming the pancake batter. If desired, fold through some chocolate chips.
  • Peanut Butter Protein Pancakes– Drizzle with plenty of peanut butter!

A homemade protein pancake mix which is sugar free, vegan and gluten free- Just 4 ingredients needed! Make thick and fluffy protein pancakes made with no eggs and no milk- Just add water!

Ingredients  

Instructions 

For the mixture

  • In a large mixing bowl, sift the flour. Add the protein powder, sweetener of choice, baking powder and sea salt. Mix very well.
  • Pour into an air tight container or jar. Makes four 3/4 cup servings.

To make the pancakes (1 serving)

  • Pour 3/4 cup of the dry mix into a large mixing bowl.
  • If desired, add extra dry ingredients to the mix (e.g. nuts, chocolate chips, cocoa powder)
  • Slowly stir in 1/4 cup liquid of choice (I used milk). Depending on the flour you used and protein powder, you may need more. Using a tablespoon, continue to add liquid until a thick batter is formed. If wanting to add extra 'wet' ingredients to the mix (e.g. fresh fruit).
  • Heat a large frying pan on medium heat and coat evenly with oil or cooking spray. When hot, pour large spoonfuls of the batter and cover. When the edges start to brown, flip and repeat.
  • Serve pancakes immediately with desired toppings.

Notes

* See post for protein powder options. Casein, brown rice protein powder and raw protein powder are fantastic options. 
** Any granulated sweetener of choice will work- erythritol, monk fruit sweetener, coconut sugar, etc.

    Love the recipe but for some reason the sea salt amount doesn’t appear on the browser 🙁 how much salt do you need for the recipe?

I have to make everything from scratch because of our loads of food allergies, but, being restricted on carbs and sugar due to some pretty extreme leptin resistance, when I make pancakes for my boys I can’t have any! I’m soooo going to have to try this! Due to a very bad allergy to casein, my protein of choice is Sunwarrior. I use the rice based because it tastes better to me, but my youngest is very allergic to rice, so the veggie protein for him! Now if I could just find some stevia sweetened “maple syrup!” 🙂

  4. Could almond flour be subbed for the oats? Or some other Paleo option? I would love to take a mix like this with us in our RV.

    1. Hi Annette! I don’t think that would produce the right texture, sorry! You could try a small batch and see how it would work, but I can’t see it remotely fluffing up with almond flour! You could do one with coconut flour and protein powder, and then add some egg whites and water.

  7. OK, what did I do wrong? My pancakes turned out way too salty! I put in 1 tablespoon salt, 2 tablespoons baking powder…..I hated that I had to throw everything away! Should it have been teaspoon instead of tablespoon?

Hi Michelle- I am so sorry- when I first posted the recipe, I completely forgot to amend the ingredients- The protein powder I used had no salt and adding a pinch gave it the added sweetness- Since then, after trialling out various versions I was supposed to make it optional. I do apologise for it!

  8. Thank you for sharing this recipe! I’ve never had a protein pancake before, but I just made these and loved them. I used growing naturals chocolate rice isolate protein powder for the base and didn’t add any additional sweetener to the recipe. Then I folded in a tbsp of chocolate chips and topped with peanut butter syrup. Wow! Also, I used teaspoons for the salt and baking powder, but noticed you have the recipe written with a capital T. Did you mean for it to be tablespoons (as capital T usually indicates tablespoon)?

    1. Hi Angela! There are multiple online calculators out there- It doesn’t take long to work it out- Simply add in the ingredients and it should be calculated for you. I don’t personally count calories hence don’t provide the information. 🙂

Flipping the script and having the pancake protein-centric is just what the doctor ordered!

    Blueberries are definitely my favorite pancake add-in, but what’s really important is the melty peanut butter that goes on top!

  18. HOW KIND OF YOU! More ways for me to eat egg free and gluten free pancakes!!! I must say that Cellucor has always been my go to protein.. it’s whey but for some reason ends up considerably thicker than any other brand! And i might sound crazy (since i bake and protein in like all of my creations) but have actually never had casein.. Casein pudding has been on my to-do list though! i just need to get some ahhhh and i like everything thick soooo =l right up my alley =l

      You need to try Casein. Confession- I’ve tried most casein recipes out there!

  19. OK – I am all over this Arman!!!!! I LOVE!!!!! Can I just use oats ground to oat flour vs. GF? I like the casein/whey too for baking for the thickness. Sometimes I mix half of that & 1/2 whey… I would add flavored protein powder too – my cellucor cinnamon one! 🙂 I am old school & still love my MetRx Protein plus casein whey blend.

    Could this be a waffle mix too?

    I bought the Califia Farms Almond Milk Holiday nog – going to use that for a holiday twist!

    1. I love cellucor cinnamon! This could most definitely be a waffle mix- Just use a waffle maker! And any type of oats will work 🙂

  28. Even though pancakes aren’t tricky to make, it is SO much easier to have a mix on hand. I love Kodiak Kakes! This is great to have on hand though, since it’s hard for me to find KK in the stores by my new place. Plus protein in pancakes is 100% necessary for me otherwise it’d take approximately 30 for me to be even remotely full!

  31. Dude, this is awesome! You can probably market this as a bread base too. I actually make my banana and pumpkin bread with an almost identical recipe. If you use your dry mix (without the protein powder, which I love but haven’t tried with my bread),…you just add 2 egg whites, 1/4 cup of olive oil, and either a can of pumpkin or 3 big (or 4 medium) mashed bananas. I add a splash of vanilla extract, but I don’t add any sugar or sugar sub. The banana bread doesn’t need sugar if your nanners are ripe (I do add walnuts). The pumpkin version benefits from a few tablespoons of stevia, but it all depends on whether you want pumpkin cake or pumpkin bread. You’re killing it! I want those pancakes that are dripping in peanut butter and chocolate…like, I want them now.

  32. You read my mind, Arman!! I’ve never made protein pancakes and just yesterday was thinking to myself I need to do some research on quantities! For religious reasons, we tend to avoid cooking egg at home on Mondays so definitely trying this out next Monday, if not sooner!

  35. Guess what other country doesn’t have those cool stuff that are staples in the states… now protein pancakes mixes, I gues not even regular pancake mixes!
    Speaking of lagging behind foodwise, I have the funniest (and sadest) story to tell you. I was listening to the radio the other and the speaker was telling about the “new hype” coming from the states. It was “kale” (he was saying the English word), and that all the celebrities are having it on a daily basis. Then they played interviews with pedestrians whom they had asked if they knew what “kale” was, and nobody knew. THEN the speaker revealed what it was: “Grünkohl” in German. Everyone knows it, but traditionally it is prepared like a stew and cooked until very mushy, nobody really likes it (besides grandmas…and my dad, lol). So it seems like the most disgusting thing to eat, but now that it is hyped (hasn’t kale been popular for YEARS in the USA already??) everyone will eat it 😀

  40. Part of the reason that I have never tried flaphjacked and don’t own any pancake mixes is that I always make my own–why should I pay $$$ for something when I already have everything on hand? Plus, so often they have so much crap added to it–ain’t nobody got time fo dat. And I don’t like to be relegated to a particular flavor. Blueberries are definitely a favorite (you gotta love the pop inside your mouth 😉 ) and sprinkles, obvs. I’m pretty open–I like it all!
