My fluffy pull-apart keto rolls are SO easy to make, and you can enjoy them as a dinner roll, slider, or hamburger roll! Only 2 grams of net carbs.

My family has come to expect rolls with dinner, and just because I’m watching my carbs doesn’t mean I will disappoint. 

For this recipe, I started with my foolproof fathead dough. A handful of melted cheese helps give the dough elasticity, while the egg adds essential moisture. Then, they’re quickly baked until the exterior is golden brown and the center remains light, fluffy, and soft.

Why I love this recipe

  • Low-carb and gluten-free. That’s two birds with one stone if you ask me. 
  • No yeast. Which means no kneading and no waiting for the dough to rise. Heck, you don’t even need a hand mixer. 
  • Versatile. Make the rolls bigger and turn them into slider buns or full on hamburger buns. 
  • 4 key ingredients. All you need is almond flour, cheese, eggs, and some optional baking powder. 
  • Perfect taste and texture. So long as they’re served warm, you’ll be rewarded with rolls that are firm out the inside yet pillowy soft in the center. 

Ingredients needed

  • Almond flour. Definitely use blanched almond flour for this recipe, as almond meal will make the rolls too dense and crumbly. 
  • Shredded cheese. For any keto dough, I prefer using low-moisture mozzarella cheese because of its mild flavor and stretchy consistency. For more cheesy biscuits, use cheddar cheese. 
  • Cream cheese. Use full-fat, softened cream cheese. 
  • Eggs. Preferably room temperature eggs. These will be used both in the dough and to brush on top of the rolls to give them a shine.
  • Baking powder. Optional, it gives it some rise and fluffiness.

How to make keto rolls

I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

Step 1- Prep work. Preheat the oven and line a baking sheet with parchment paper. 

Step 2- Melt the cheese. In a microwave-safe bowl, microwave both cheeses until the mozzarella is mostly melted. Whisk until smooth, then let it cool briefly. 

Step 3- Finish the dough. Stir flour and two eggs into the mixture until a smooth dough forms. 

Step- 4- Shape and bake. Form 10 dough balls and place them on the sheet pan. Brush the tops with the remaining egg. Bake them until the tops are golden, then serve warm.

Arman’s recipe tips

  • Make sure the cheese is properly cooled. Otherwise, you’ll scramble the eggs. 
  • Cover the rolls with foil. As you’re baking, check to make sure the rolls aren’t browning too quickly. If they’re quite brown at the 15-minute mark, lightly tent them in foil for the remaining bake time. 
  • Serve them fresh! For better or worse, these rolls are best enjoyed fresh out of the oven. If they’re served at room temperature or chilled, they’ll become dense and sturdy.

Variations

  • Make garlic butter rolls. Brush the tops with a mix of melted butter and minced garlic. 
  • Or make sesame seed rolls. Right before baking, gently press sesame seeds (or poppy seeds) into the dough. 
  • Add a pinch of salt to enhance the flavor of the rolls. 

Storage instructions

To store: Leftover keto dinner rolls can be stored in the refrigerator in an airtight container for up to 1 week. 

To freeze: Place the cooled rolls in a ziplock bag and store them in the freezer for up to 6 months. Thaw completely before reheating. 

To reheat: Microwave the rolls for 30 seconds or bake in the oven until warm.

Ingredients  

  • 2 cups shredded cheese mozzarella or cheddar * See notes
  • 1/4 cup cream cheese softened
  • 1 1/2 cups almond flour
  • 3 large eggs Divided ** See notes
  • 1 teaspoon baking powder optional

Instructions 

  • Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.
  • In a large, microwave safe bowl, add your shredded cheese and cream cheese. Microwave for 30 seconds, or until the cheeses have mostly melted. Remove from the microwave and whisk together, until smooth. Let the cheese cool for several minutes.
  • When the cheese has cooled slightly, add in the almond flour and two of the eggs, and mix well, until a smooth dough remains.
  • Using your hands, form 10 balls of dough. Place them on the lined tray. Whisk the remaining egg and using a pastry brush, brush the exterior of each of the rolls.
  • Bake the rolls for 25 minutes, or until golden on the outside. Serve warm.

Notes

* Low moisture mozzarella cheese is best, as it has minimal flavor. 
** 2 eggs will be used for the dough, 1 egg for the egg wash on top.

    These are beautiful, browned, soft, delicious rolly rolls. They are almost as fluffy as bread, when they are right out of the oven. Slather with butter, dip into sauce or soup, and love your life choices. Will definitely make again! Thanks!

    I was skeptical but they turned out very good. In order to make slider size, you really need to make 8 rather than ten. Be sure to wet your hands with water as you shape them. I sprinkled them with a little sea salt before baking. Bottom line, I’ll make them again and share the recipe with friends who are skeptical of low-carb/ keto.

      These are the best. I tried it both ways, adding some activated yeast & without. It didn’t make a difference in the rise but oh my gosh it actually tastes like real yeast bread which I miss more than anything. Thanks for another great recipe!

    Very good! I don’t think I mixed them enough, after cooking some of the cheese was oozing, but still delicious. They taste similar to Red Lobsters cheesy biscuits. I’ll make these again. Thank you Arman!

    So I tried cloud bread and I thought it was gross because of the egg yolk taste so that batch the dog loved anyhow so I found these rolls n they looked so delicious. I just pulled them out the oven and have already devoured 2 of them thankyou for this great recipe mine look like biscuits instead of rolls but they are awesome.

    For me they are messy to make and I’ve had to double the ingredients to make 8 medium size rolls. I much prefer them than ordinary bread or rolls though and will continue to make them.

    i can tell you i will DEF. make these again to freeze and even want to gift a batch to help people see that keto ‘bread’ products can taste good.

    i made sliders with organic/nitrate free hot dog, melted cheese and garlic mustard aioli and it was delicious! put them in my thai coconut chicken dish and it soaked up the sauce and was delicious! they’re neutral of enough flavor that they soak up whatever flavor is stronger and give you a hint of savory but tasty enough on their own to be eaten with nothing on them. they are dense when cold (like a biscuit) but i’m guilty of eating them right out of the fridge when i’m hungry and they still taste good. i’m usually one to put ghee on anything bread so that’s a testimony. big mans world suceeds again with this recipe!

    This is such an easy recipe, I have made a pizza out of this dough by patting it out on a silicone baking mat.(It will make a large pizza) I also love that the dough freezes so well, just let the dough balls sit out to defrost and brush with your egg wash and bake. I will make a double batch to I have them in the freezer, think they would make great ‘sliders’….great recipe, Thank You!!!

    Wish I could figure out how to share a picture, but these turned out pretty good. Taste like a good cheesy roll. Kinda a lot of carbs for just one unfortunately because they do come out pretty small but they were still delicious 🙂 I will make them again.

    I use this recipe as a base to make bacon buns (a Lithuanian thing that I miss at holidays). I increase the mozz by 1/2 a cup, and a little extra cream cheese, and add a tablespoon at a time of almond flour if needed.

    I then dice up about 6-8 slices of thick cut bacon (or 1-1.5lbs of thin slice.) Cook bacon in a pan, do not cook until crispy…. pull it while it still is a *little* rubbery.

    I wait until the bacon grease has cooled slightly and pour some of the grease in the bun batter and mix it. (When I’m not making bacon buns I add butter in the mix, because the flavor is good and it helps keep the dough from sticking to your hands.)

    Roll out dough balls, put parchment over them and roll/flatten them out a bit. Put a little mozzarella on them, then bacon pieces in middle and fold up the edges together like a dumpling, then reshape them with hands into ball shape. Egg wash them, then get creative with toppings (everything bagel mix, garlic powder, left over bacon pieces, parm, shredded cheese…. Whatever)

    I’m in the process of trying to use this dough to cover hot dogs and string cheese before baking.

    Tried this recipe a couple of weeks ago, and we all thought these rolls were delish and so close to real, unhealthy buns! Am doubling the recipe later today, and plan to use Arman’s suggestion of painting the tops w/ garlic butter. Will serve w/ my vegan sweet potato chili. It’s simple to make; my only problem was the dough turning out too sticky to roll into balls (Hawaii temps are warm now). So, I simply made ‘drop’ rolls, just as good. Was too scared to add a bit more almond flour to thicken dough-may test it out next time. Awesome, simple recipe-thanks, Arman!

    I think he means you have 3 whole eggs. Crack 2 whole eggs to go in the dough and then crack 1 whole egg to be used for brushing on the dough. There is no separating of egg whites or yolks. Hope this helps y’all!

    The rolls taste delicious but making 5 rolls as opposed to 10. The 10 roll method has the rolls being much too small.

    This recipe would be better if we rolled 5 pieces instead of 8 or 10. If you do 8 or 10 the rolls come out very small.

    Everyone 2 eggs go into the dough the 3rd egg is the wash. Make your dough with 2 eggs. These were pretty good. They came out just like the picture. Not a fan of fathead dough but it was worth a try.

    These were sensational!! I made them without baking powder- I had actually intended to use it but just completely forgot. You were right about having a mild flavor, they actually tasted more like cream cheese than anything else but even that flavor was very mild. They paired perfectly with my chicken pot pie soup- they even soaked up the liquid like a good roll should, which most almond flour things don’t… must be the cheese.. or the egg.. or the combination of everything? Anyway, I don’t eat “bread” things very often any more because I’ve tried so many recipes that just aren’t good but I thought I’d try these for my husband and I’m glad I did!!! Thank you thank you!!!

  37. This is the 3rd time I’m making these rolls today. I make half of the buns savory with an Everything topping and the other half plain for making sugarfree PBJ sandwiches or cream cheese with a small square of sugarfree chocolate melted on. Great tasting rolls. Thanks

  39. We know it’s 2 eggs for the dough and 1 for the brushi m g but are you supposed to separate the yolk from the white?

  40. From the appearance of the rolls, I am assuming you should use two eggs for making the rolls batter/dough, and brush the rolls with the egg white from one egg.

  41. Is there a different flour that could be used, my husband is allergic to almonds…I know coconut flour is more dense…so not sure if that could be a good substitute.

  46. I am a little confused about the eggs. It says to separate them (3) which I am taking that as separate yolk from white. Then add 2 eggs to the batter and use (1) for the top. So am I putting (2) yolks in the batter? The separated whites (3) get brushed on the top?

    It says seperate 3 eggs..so are you only adding the yolk or the whites? Or is it using all of the egg and saving the white if one egg to brush with?

    When I see seperate eggs, that means seperate the white from the yolk. I am guessing you mean use one egg at a time, since there is no mention of using either part of the eggs as a seperate ingredient. Please correct me if I am wrong

    That means separate the yolks and whites. But you don’t say what to do with the yolks/whites. I think that’s what she’s asking.

      These rolls are really good. Better than other keto recipes i have tried. My husband and granddaughters liked them. I do have a question do you think it could be cooked in a loaf pan longer like a loaf of bread to slice. Thanks for the recipe.

    Great idea. One problem,I live in Qld. Australia and csnnot buy Almond Flour or Blsnched either. I can only purchase Almond Meal.

        Not doing Keto, but I make this recipe about once a week and love it. A few tips/observations:
        One recipe will make about 4 big sized rolls for burgers/sandwiches. With my stove, it adds about 5 extra minutes to the cooking time.
        If you use a scale to weigh the cream cheese (you’ll need 2 oz) you won’t have the bother of scraping cream cheese out of a tiny measuring cup. I find no difference when I substitute low fat cream cheese.
        The rolls are fine without the egg wash, but if you want the egg wash shine, or want to top with poppy or sesame seeds, separate the third egg and use only the white portion for the wash. Save the yolk and any remaining egg white to add into tomorrow’s scrambled eggs.
        If you have any dry yeast past its prime, add 1 TBSP into the mix. It gives the rolls a wonderful bready fragrance.
        Try adding 1 TBSP fresh or dried rosemary.

      Oh my goodness! Best rolls ever! I absolutely love baking/cooking and recently switched to full keto. I’ve tried many different recipes from keto books to websites etc and Arman is the best! Every recipe I make turns out the best and matches the pictures to a T. I can’t wait to try the rutabaga mashed potatoes! You’ve made my whole house hold so much healthier and it feels like we’re cheating all the time but losing pounds 😁 thank you!
