Why I love this recipe

They’re quick to make. Mix everything and let them firm up in the fridge or freezer. That’s all there is to them!

Made with 3 key ingredients. All you need is cocoa powder, almond butter, and a drizzle of maple syrup. 

A secretly healthy treat. Because they’re naturally vegan, gluten-free, and low-carb!

The perfect fudgy texture. I don’t use the term ‘brownies’ lightly, which is why I made sure these have the taste and texture of the real deal. 

Ingredients needed

  • Almond butter. The base ingredient. Use smooth, drippy almond butter with no added sugar. For a nut allergy, use sunflower seed butter or tahini instead. 
  • Maple syrup. For sweetness. Honey or agave nectar can also be used. 
  • Cocoa powder. I used 100% unsweetened Dutch-processed cocoa powder. Be sure to sift it well so there are no clumps. I don’t recommend cacao powder as it can be quite bitter. 
  • Mini chocolate chips. Optional, but highly recommended! 

How to make no bake brownie bites

I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

Step 1- Mix, mix, mix! Combine all of the ingredients in a large mixing bowl until smooth. 

Step 2- Shape and chill. Use your hands to shape the mixture into bite-sized balls. Place them on a plate lined with parchment paper and store in the fridge or freezer until firm.

Arman’s recipe tips

  • Use a food processor. Sometimes, when I use homemade almond butter, the texture is too thick to mix by hand. In those instances, I’ll use a blender or food processor. 
  • Adjust the consistency. If the batter is too tacky, add a dash of cocoa powder. Likewise, thin it out with water or almond milk if it’s too thick. 
  • Lightly wet your hands. So the mixture doesn’t make a mess. Or better yet, use a cookie scoop!

Variations

  • Swap the nut butter. Use peanut butter or healthy Nutella for more chocolate flavor. 
  • Dip them in chocolate. Melt chocolate in a microwave-safe bowl, dip the fully chilled bites in the melted chocolate, and refrigerate until firm. 
  • Salty-sweet. Sprinkle coarse sea salt on the bites before chilling. 
  • Nuts. Fold in chopped pecans or walnuts for added crunch. 

Storage instructions

To store: Store leftover bites in an airtight container in the refrigerator for up to 1 month. 

To freeze: Place them in a ziplock bag and freeze for up to six months. Let them thaw briefly in the fridge.

Why are my brownie bites sticky?

If your brownie bite mixture is sticky, add more cocoa powder. If you want firmer bites with a brownie-like texture, add a touch of blanched almond flour or coconut flour.

Ingredients  

Instructions 

  • Line a large plate with parchment paper and set aside.
  • In a large mixing bowl, add the almond butter, maple syrup, and cocoa powder and and mix well. If adding chocolate chips, fold them through at the end.
  • Using your hands, roll into small bite-sized balls. Place balls on the lined plate and refrigerate or freeze until firm.

Notes

TO STORE: Store leftover bites in an airtight container in the refrigerator for up to 1 month. 
TO FREEZE: Place them in a ziplock bag and freeze for up to six months. Let them thaw briefly in the fridge.
