Why you need to make my cloud bread

When I’m watching my carbs but craving something bready, I turn to this cloud bread. Made famous on TikTok, this viral bread recipe gained popularity for its unique appearance, delicate texture, and countless flavor combinations, all while being low-carb and high in protein.
Cloud bread is, as the name implies, light and fluffy bread baked into the texture of a cloud. It combines eggs, mascarpone cheese, and cream of tartar to create a more sturdy and less sweet-tasting meringue. For how delicate this bread is, it’s so versatile. My family enjoys them as low-carb sandwiches or breakfast toast, or my famous cloud bread pizza. The ways to use it are endless!
Key Ingredients
- Eggs. Use eggs at room temperature and separate the egg yolks from the egg whites.
- Cream of tartar. Technically optional, though I highly suggest using it to help stabilize the eggs.
- Salt. Just a dash to add flavor.
- Mascarpone cream cheese. Softened and preferably full-fat. I’ve also tried this recipe with regular cream cheese, creme fraiche, and dairy-free cream cheese, and each works wonderfully.
How to make cloud bread

Step 1- Separate the egg whites and yolks into separate bowls.

Step 2- Add cream of tartar and salt to the egg whites. Using a hand mixer or stand mixer, whip the whites until stiff peaks form. To the egg yolks, add the mascarpone cheese and whisk to combine.

Step 3- Add the egg yolk mixture to the egg white mixture and use a silicone spatula to carefully fold the two together.

Step 4- Spoon the batter into 12 circular discs onto the prepared baking sheet. Bake until golden.
Arman’s recipe tips
- Use room temperature ingredients. I know I say this with every baking recipe, but I especially mean it with this one! The colder your ingredients are, the longer it will take to combine them, and the more air you’ll lose in the bread.
- Fold, do not stir. When combining the egg whites and yolks, be careful not to overmix. Otherwise, you’ll end up with dense, flat bread.
- Keep the eggs separate. Even the tiniest bit of yolk in the egg whites can prevent them from forming stiff peaks – ask me how I know!
- Add food coloring. The way I see it, we’re already testing the boundaries of bread, so we might as well go big or go home and add a few drops of your favorite food coloring.
Flavor variations
I really enjoy this keto cloud bread as is, but to make things interesting, here are some fun flavor combinations:
- Ranch: Sprinkle 1 ½ teaspoons of ranch seasoning into the egg yolk mixture.
- Cheese: Sprinkle 2-3 tablespoons of mozzarella or cheddar cheese on top of the cooked bread. Place back in the oven for a further 2-3 minutes.
- Sesame: Sprinkle 1 tablespoon of sesame seeds over the mixture before baking.
- Italian: Add dried Italian mixed herbs and garlic powder.
- Everything: Fold through 1 tablespoon of everything but the bagel seasoning and ½ tablespoon on top of each portion of the bread.
- Chocolate: Fold through ¼ cup of cocoa powder and 2 tablespoons of powdered sugar into the egg yolk mixture.
Storage instructions
To store: Leftover cloud bread can be stored in an airtight container in the refrigerator for up to 5 days.
To freeze: Place the bread in a freezer-safe container and freeze for up to 2 months. Let the frozen bread thaw overnight in the fridge before reheating.
To reheat: Reheat leftover bread in your toaster at the lowest setting or in the air fryer at 325F for 1-2 minutes.

- 1/2 teaspoon salt
- 7 ounces mascarpone cheese
Instructions
- Preheat the oven to 140C/285F. Line a baking pan with parchment paper and set aside.
- Separate the egg whites from the egg yolks. Add cream of tartar and salt to egg whites. Beat whites with a mixer until stiff peaks form.
- In a separate bowl, beat the egg yolks with the mascarpone cheese. Combine those two gently with a spatula.
- Scoop the mixture into 12 circular discs onto the baking pan.
- Bake for 25-30 minutes until golden.
- Cool the bread on a baking sheet, then remove and place on a wire rack and let it cool completely.

Frequently asked questions
The #1 reason why egg whites don’t whip up is due to either some water left in the bowl OR a touch of the egg yolk. My non-negotiable rule is to use the cleanest, dryest bowl possible.
If your cloud bread is not fluffy, it’s likely because the egg whites didn’t form into stiff peaks or too much air was whipped out when the egg whites and yolks were combined. As always, more peaks = better.

Another reason why egg whites don’t whip up properly, using a plastic bowl. Plastic will hold onto any type of fat and even the smallest will keep egg whites from whipping up
I can’t eat salts, sugars, nor starchy foods. I have to be careful having high blood pressure, pre-diabetes, heart disease and to name a few. I’m not to found of meat nor eggs anyway. The only meats I like to eat is bacon and fish only. I never liked the smell or taste of meats anyway. In I like more of your recipes without the harsh ingredients.
