Chocolate chip cookie dough fat bombs involve a delicious blend of coconut flour, almond flour, monk fruit sweetener, and coconut oil to form a delicious cookie dough. It’s then loaded with chocolate chips and covered with sugar free chocolate, making it the perfect ketogenic snack or dessert.
Having a sweet tooth while following a ketogenic diet couldn’t be any easier! With chocolate coconut cups, edible cookie dough, and keto brownies, there’s something for everyone. One of my favorite keto snacks is fat bombs.
What are fat bombs?
As the name suggests, fat bombs are a high-fat, low carb sweet treat, usually based off a combination of nut or seed butter, coconut oil and a sweetener of choice. Alternatively, they can also use a combination of low carb flours and high-fat dairy.
Fat bombs have the texture of fudge and can come in a variety of flavors. They are smooth, creamy and melts in your mouth. They have a sweet, rich taste and are a great alternative to candy or chocolate bars.
Why eat fat bombs?
Fat bombs are a low carb way to satisfy the sweet tooth. They are great as a dessert or even a snack between meals. The high-fat content keeps blood sugar levels stable, and unlike traditional desserts or sweet snacks, they won’t leave you crashing or feeling lethargic soon after.
Fat bombs are incredibly satisfying, and a small portion goes a very long way- They may be deceptively small in size, but they can keep you satisfied for hours!
Ingredients to make chocolate chip cookie dough fat bombs
- Blanched almond flour
- Coconut Flour
- Monk fruit sweetener
- Cashew butter
- Almond extract
- Coconut Oil
- Keto Chocolate Chips
How to make cookie dough fat bombs
Step 1: Line a large plate with parchment paper and set aside.
Step 2: In a large mixing bowl, add your almond flour, coconut flour, granulated sweetener, and salt and mix well.
Step 3: Add the rest of your ingredients, except for the chocolate chips, and mix very well. Fold in your chocolate chips.
Step 4: Using your hands, form 20 small balls of chocolate chip cookie dough. Place on the lined plate and place in the fridge or freezer to firm up.
Step 5: Once firm, melt the rest of the chocolate chips. Using two forks, dip each ball of cookie dough into the melted chocolate until evenly coated.
Step 6: Place back on the lined plate and refrigerate until the chocolate has firmed up.
How many carbs are in cookie dough keto fat bombs?
These chocolate chip cookie dough keto fat bombs contain 3 grams net carbs (8 grams total carbs, 5 grams fiber). The carbs are calculated is using the upper end of chocolate chips. You can reduce the carbs by halving the chocolate chips, and even omitting the chocolate coating.
Depending on how many carbs you are allowed per day, you can eat up to 3-4 per day!
Storing cookie dough fat bombs
Keto cookie dough fat bombs are covered in chocolate, so can keep at room temperature. Ensure they are in a sealed container, and they will keep fresh for up to 5 days.
Fat bombs can be stored in the fridge and will keep well in the refrigerator for up to 2 months.
Cookie dough fat bombs are also freezer friendly and will keep well frozen for up to 6 months.
Tips and Tricks for perfect keto chocolate chip cookie dough fat bombs
Coconut flour brands differ and as such, some are considerably denser. If you happen to use one which has that texture, you’ll need to add some milk or other liquid to avoid a crumbly cookie dough.
Ensure your cashew butter is smooth, and the drippy kind. If you use one which is firm or crunchy, you’ll find it hard to mix into the batter.
You can substitute the cashew butter for another nut or seed butter. Peanut butter, almond butter, and sunflower seed butter are all other low carb and sugar free spreads suitable for these fat bombs.
The coconut oil needs to be melted, but not hot. If you use hot coconut oil, it will melt the chocolate chips.
