Keto naan is a low carb and grain-free take on the classic Indian naan bread. Thick, fluffy, and topped with a simple garlic butter. No rest time, no heavy kneading, and no fancy kitchen mixers needed.

Ever since sharing my 2 ingredient dough naan recipe, I’ve had countless readers write in asking me to develop a low carb naan. I tested multiple variations in my kitchen to create a keto-friendly naan that stays soft, pliable, and sturdy enough to scoop up all the delicious curries! 

This recipe builds on the structure of my fathead pizza dough, using shredded cheese (seriously!), almond flour, and eggs for elasticity and lift. After adjusting the ratios and adding a few powerful seasonings, I found that baking at a high temperature and finishing with garlic butter after a brief rest gives the naan its signature fluffiness and flavor.

Key Ingredients

Here’s what goes into my keto naan bread, along with kitchen notes. Full measurements are in the recipe card below.

  • Low moisture mozzarella cheese. Avoid using reduced-fat or fat-free mozzarella; otherwise, the dough will become elastic and dry out when baked. Fresh mozzarella tends to make the dough wet.
  • Milk of choice. Added to the mozzarella cheese to make it smooth and easy to mix with the other ingredients. If you’d like a fluffier naan, I had success using sour cream, Greek yogurt, or heavy cream. 
  • Almond flour. Blanched almond flour must be used for a light texture. Do not use almond meal. 
  • Eggs. Helps bind the naan together. Room-temperature eggs are best, so they don’t cool the dough quickly. 
  • Baking powder. Leavens out the naan. 
  • Butter– melted, to brush over the naan. Dairy-free butter can also be used. 
  • Minced garlic.To mix into the butter to give the naan a lovely garlic flavor. 

How to make keto naan

Start by microwaving the mozzarella cheese with milk until it has melted. Transfer it to a large mixing bowl to let it cool slightly before adding in the eggs, almond flour, and baking powder.

Mix very well, until a ball of dough remains. Let the dough sit for 5 minutes.

Once it has cooled slightly, form 8 balls of dough and flatten them out to a rough, circular shape.

Place the naan on a baking dish and bake them for 18-20 minutes, or until just done. Remove from the oven and let sit for 10 minutes before brushing with butter and minced garlic.

Can I make this naan stovetop?

If you’d prefer to make this keto naan on the stovetop, you’ll need to let the dough sit until it’s cooled. Once cool, preheat a non-stick pan on medium heat and generously grease it (to avoid the cheese melting onto it). Reduce the heat to low and cook the naan for 2-3 minutes, then carefully flip and cook the other side. Continue until all the naan has been cooked.

Arman’s recipe tips

  • Melt the cheese gently. I recommend microwaving in short bursts, around 20 to 30 seconds each time (and don’t forget to stir). If it’s too hot, it becomes a little too oily, and you’ll struggle to mix in the almond flour.
  • Warm dough = ideal. You want the dough to be warm, not cool. When it’s cooling down, it becomes harder to knead. Don’t fret if that happens, though. I find a quick 15-second microwave makes it pliable again 🙂
  • Roll between parchment paper. This is optional, but I have had a few readers say they struggled with rolling a sticky dough. If this happens to you, roll it between two sheets of parchment paper. It prevents sticking and doesn’t require adding more flour.
  • For fluffy naan, form balls of dough instead of flattening them out. It will continue to bake the same way but have a fluffier interior.

How to store leftovers

To store: Leftover naan can be refrigerated for later. Be sure it is covered completely. It will keep well for up to 1 week.

To freeze: Freeze leftover naan by placing them in ziplock bags or a shallow container. They will freeze well for up to 2 months.

To make ahead: You can prep the dough up to five days in advance and keep it covered in the fridge. When you are ready to cook the naan, microwave the mixture for about 30 seconds, or until warm.

Keto Naan Bread (No yeast!)

This keto naan bread recipe is so fluffy and doughy, you won't believe it is low carb! Made with no yeast and no flour, this keto naan takes just 20 minutes!

Ingredients  

  • 3 cups shredded mozzarella cheese 340g, low moisture
  • 2 tablespoon milk of choice 30 ml
  • 1 1/2 cups almond flour 150g
  • 1 tablespoon baking powder 12g
  • 2 large eggs room temperature

Instructions 

  • Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.
  • In a microwave safe bowl or in a small saucepan, heat up your mozzarella cheese and milk until melted. Whisk together to combine.
  • Transfer the cheese mixture into a large mixing bowl. Let it sit for 2 minutes to cool slightly but still remain warm. Add your almond flour, eggs, and baking powder. Mix very well, until combined, and a ball of dough remains.
  • Using your hands, form the dough into a ball. Divide the dough into 8 pieces. Roughly flatten out into off shaped circles. Place on the lined tray.
  • Bake the keto naan for 18-20 minutes, until puffed up and golden brown. Remove from the oven and let sit for 10 minutes, before brushing with garlic butter, if desired.

Notes

  • Garlic butter: To make garlic butter, combine 3 tablespoons of melted butter with 1 tablespoon of minced garlic. 
  • Tips: See my recipe tips above for making the best keto naan. 
  • Leftovers: Keep in the fridge, covered, for up to one week. You can also freeze naan in a ziplock bag for up to 2 months.

  1. This morning i found a revised naan recipe from you and cannot locate it again to share. I made the recipe and my husband really liked it. It had no milk but did have 2T PLAIN YOGURT and only one egg. Can you send the recipe for me to keep and share.

    Prepped everything step by step before starting… hardest part was waiting for the cheese to cool before adding the flour, etc… it was a lil wet so I rolled it into balls with coconut flour dusted on them! Let it cook the full 20! They turned out beautifully 🤩 Worth the effort 😎😋

    I’ve made this recipe over and over and am so happy every time! It is so versatile and delicious to just eat plain. Thank you! A real lifesaver for the KETO diet. I do add just a little olive oil to the dough, less than 1 tsp, no more or it will be flat and oily. Also, since I buy the giant block of mozzarella and don’t care to shred it, I’ve found that cutting into cubes and weighing out 300g or 11 oz works just fine. I melt it on the stove so I don’t know how that will do in the microwave.

  5. What do you mean by shredded mozzarella? To buy fresh mozzarella and shred it or to buy a bag of shredded mozzarella? They’re very different things.

    Oh my goodness!!! This keto naan bread is so easy, and it tastes out of this world! It’s very versatile- I ate a couple pieces with cheesy bacon spinach dip (keto), but it would make a great pizza or flatbread crust! Will also be trying with some butter and cinnamon!     Made them with a few mods. The recipe was clear and easy to follow. Guaranteed success!
    Because I’m adventurous, I added dried fenugreek leaves (kasoori methi) and changed out the milk for 2 tbsp of sour cream and a bit of cold water. I added a good pinch of salt.
    I ran a bit short on the mozzarella so I added 3/4 cup of shredded Jarlsberg.ifound the dough sticky so I added a heaped tbsp of tapioca flour.
    Very happy with the results. Wish I could share a photo.

    Ok, I did everything by the recipe. As suggested in the Tips section, I made sme “balls” and some flattened ones, however,
    I guess I didn’t flatten them enough. Well…. I ended up with absolutely wonderful hamburger buns! I guess next time I’ll flatten them more if I want really flatten bread or pizza dough. Absolutely in love with this recipe! So soft, slightly crumble, but held up so well in a burger!

  12. Has anyone cooked this in a cast iron pan, rather than baking it? I’ve made this recipe in the oven, and it was great, but I’d like to try it in a traditional way of frying in a cast iron pan.

    Love this recipe. I use a glass bowl and combine everything in that. I also mix the eggs in a separate bowl than add after I have added the almond flour and baking powder. Spray the hands with olive oil to spreadthe dough out. Great recipe!

    Way better than I expected. Used slightly less baking powder and added a table spoon of psyllium husk. Added fresh coriander to the garlic butter.

    The toughest part of being on a keto diet has been giving up bread. This recipe satisfies my craving. I have made it three times with a couple slight variations. I added one tablespoon of whole plain Greek yogurt and one tablespoon of heavy cream. I also divide the dough into 12 portions versus 8. Really appreciate the tip on using a little water on my hands when handing the dough to prevent it from sticking. I am a fan of The Big Man’s World recipes. Also like the BEST Almond Flour Brownies.       Water. Wet your hands, the board you’re using to cut the dough, as well as the knife. (Cold water out of the faucet.)

    Followed your directions and ingredients. My cheese never melted (in the microwave), not possible to add the almond flour. Why didn’t this work?

    1. Hi KW, Maybe it’s the type or brand of mozzarella cheese you are using. I’m in the US and have used preshredded cheese from Kroger. It works well. It will be very thick when melted, kind of like thick peanut butter. Hope this helps.

    Great recipe! I nearly doubled the baking powder the second time I made them and got a better/very bready result. Maybe just my baking powder(?) I also added garlic powder to the dough instead of garlic butter on top and I liked the result – dryer and less oily but still garlicky.

    So easy, worked perfectly the first time and delicious! I adore naan bread and now I can have it guilt free with my takeaway. What’s best is it has so few ingredients. As long as I have shredded mozzarella (or “pizza blend”) in the freezer, I can make this. I made it with garlic and next time gonna try folding in some some low-carb nuts and one day dried low-carb fruit for peshawari naan.

    Made this last week and it was beyond delish! Thank you!!! My friend totally flipped out over it as well. I was just wondering…how would this turn out if some butter was added into the baking as well, would it mess it up or make it a bit more buttery? I added butter after sans garlic (I like it better that way) but the thought about butter inside as well did cross my mind. Thoughts?

    This is great bread.
    We made it to go with a beef stew and it was incredible.
    I can see using this for sandwiches- sturdy and so bread-like.

    Husband and I have gone keto, but since he was the only hot drink person in the house (the only consumer of milk), we’ve just switched the milk (non-keto) to double cream which we use in his coffee/tea/scrambled eggs/cheese sauce and anywhere we would have used milk.
    We’re not into other milks, which often contain oils, or taste sweet; would this recipe work with double cream diluted with water, as a sub for the milk?

    This was amazing. I mistakenly used 3 TBSP of almond milk instead of 2 – and it came out fine. I also whisked the eggs before mixing everything together in my Kitchen Aid mixer with the rubber-edged paddle, which took barely more than a minute for it to completely come together. Then made a ball (wet my hands with water to deal with stickiness) and cut into 8 pieces. Used the suggestion to just make balls (not press them down into circles) which seemed to work perfectly. Definitely a keeper and will make often!

    We tried this for the first time last night, and WOW! I see so many possibilities that I could mix in the dough…sautéed onion and rosemary, jalapeno, finely minced oil packed sun dried tomatoes and ripe olives, and that’s just a few off the top of my head.   47. Wow! Amazing and easy. So soft and fluffy. I melted the cheese and milk in a microwave jug, then added the flour etc into the jug and stirred it using a knife to keep cutting through it to mix it as I do for fathead dough. It was fast, easy and yummy. Family loved it with the curry I made. Thanks for a great recipe.

  48. It seems to be the almond flour that’s the big contributor – and I used the one with only 1g per serving. Is there another almond flour that has less?

  49. How do you figure 2 net carbs per serving? I put the recipe into my keto app and used the lowest carb ingredients and it comes out as 4 per naan… which I only figured out after eating more than I should have because I was so excited to have something that was only 2…

    1. We use the built in calculator for these and have a disclaimer that all our recipes are based on that. IF you use different brands of ingredients, they could be more or less.

    1. Hi Ericha- yes, you can. I’ve added a section to the leftovers part, but you can prep it up to 5 days in advance and just microwave it until warm before cooking up 🙂

    Love these! Have made about four batches now, they have all been great. The mix feels a bit like a globby stringy mess when mixing the mozzarella but they always turn out well! We freeze them and reheat them quickly in the oven.

    Wow, this was amazing,first ‘bread’ recipe that I’ve enjoyed on keto. The dough was sticky and wet, but they turned out wonderful! 5 stars!

    1. Hi Mayii- low moisture mozzarella cheese is best, followed by regular shredded mozzarella cheese. Other shredded cheeses will somewhat work, but will be more cheesy and a little dense 🙂

  53. I’ve tried both almond flour and almond meal. I prefer using the almond meal as gives a coarser feel, also add some chopped raw onion and pitted black olives and dried oregano.

    This was a big hit in our house! I was initially nervous because the dough ball was stringier than my usual “fathead” dough recipe that I use for pizza, and it was more challenging to mix the cheese with the almond flour and eggs (I ended up just kneading it really, really well). But the finished product was spectacular…light, fluffy, and went perfectly with the peanut chicken curry that I served it with. I agree with the author that it didn’t even need the garlic butter topping…and will skip it next time. But these are lovely naans…if you are doing low-carb and want a perfect “bread” to go with curry, soup or stew…give these a try!

    What’s been your experience with freezing the dough for use as needed? Thank you for such a thoughtful and robust keto recipe repertoire!!!

    1. Hi Sara- I recently tested freezing the dough unbaked, and I really don’t recommend it, because it doesn’t thaw very well and then didn’t bake up well. You can refrigerate the dough then warm it up in the microwave for about 30 seconds and shape 🙂

    I halved the recipe because I wanted to give it a try first. Sometimes I’m not the best cook with a recipe using keto friendly ingredients. These came out of the oven as beautiful fluffy golden brown yummy breads. I love this recipe 💗
