Why you’ll love this recipe

  • A no-bake fudge. This fudge recipe doesn’t call for flour and doesn’t require baking.
  • Only 5 ingredients. Nobody likes a lengthy list of ingredients for such simple desserts as fudges. This rocky road-inspired fudge is made with five easy-to-find ingredients (for one better, try our 3 ingredient fudge!).
  • Perfect rocky road texture. Made with peanuts, marshmallows, and gummy candy, this rocky road fudge has the most amazing complex texture.
  • No breaking! Okay, so rocky road bars are infamous for being crumbly and breaking. Not fudge- it’s smooth and creamy and is so much softer.

If you’ve been looking for an easy and quick rocky road fudge recipe, give this one a try. It takes minimal time and effort to make but the results are scrumptious.

Ingredients needed

  • Chocolate. As we’ll be combining this with condensed milk, I prefer to use darker chocolate. Semi-sweet or milk chocolate also works.
  • Condensed milk. A must for any good fudge recipe. You can use coconut condensed milk if you’d like it to be dairy-free.
  • Marshmallows. Mini marshmallows work best for this recipe. Use sugar-free marshmallows if you want.
  • Peanuts. For that added crunch and texture. Swap it out for any nuts or seeds of choice.
  • Candy. Optional, but a classic rocky road always has some gummy candy in it!

How to make rocky road fudge

  1. Melt the fudge base. In a large microwave-safe bowl, combine the chocolate and condensed milk. Microwave in 20-second increments until the chocolate is mostly melted. Whisk everything until smooth.
  2. Add mix-ins. Fold through the marshmallow, peanuts, and candy.
  3. Let it set. Transfer the rocky road fudge into a lined square pan and refrigerate for at least an hour to set.
  4. Slice and serve. Using a sharp knife, slice the fudge into bite-sized pieces.

Tips to make the best recipe

  • Chocolate over chocolate chips. While chocolate chips will melt, using chopped chocolate not only melts better, but has a higher % of cocoa solids which will yield a more creamy and rich fudge.
  • Let the mixture cool slightly. Once microwaved, let the condensed milk/chocolate mix cool slightly, to prevent the marshmallows from melting.
  • Use mini marshmallows. Larger marshmallows don’t look as visually appealing and also clump together. Opt for mini marshmallows which disperse so much better, so every bite will include some!
  • Line the pan. Always line the pan so the rocky road can be easily removed.

Storage instructions

To store. Fudge will keep well at room temperature, covered, for up to two weeks. You can refrigerate it if you’d like it to keep longer.

To freeze. Place the fudge in a ziplock bag and store it in the freezer for up to 6 months.

  • Chef’s knife. A good quality knife to slice the rocky road without it breaking apart.
  • Square pan. To let the rocky road fudge set in.

  1. Unfortunately, I can have no sugar related to cane! So I cannot use the chocolate chunks as they contain cane juice! This is my issue when trying to make a good treat that doesn’t require freezing or refrigeration. There are no chocolate chips made with any natural sugars (which I can have btw). Ugh!

  2. So funny- I just got home from a trip to Australia, and I thought it was so weird there were cherries in the rocky road ice cream there! Have you noticed American rocky road has no cherries? 🙂

    I love Nicki stories.

  3. The sea salt on top is the perfect touch, although I’d probably unhealthify these and go with milk chocolate or even better white chocolate.

  4. I love Rocky Road because I love the sound of the words so much. Strange reason, I know. I use dried cranberries and almonds in my recipe, too. And dried apple as a marshmallow substitute. I am very drawn to using the salted almonds and adding a little sea salt. I’ll try this next time.

  5. Oh Niki you are a gem! Rocky road is amazing though – I love those glacé cherries in it, even though they are basically glazed in sugar – they are just so good!
Been there with ice cream soup… Although I swear right now it’s so hot here that 2 Minsk after getting ice cream it’s like soup!

  6. Haha your Niki stories crack me up. Also, I love the salty/sweet connection, so this looks super tasty. Extra sea salt on top for me 😉

  7. Ice Cream Soup?? OMG. Go away.
LOVE the story, as I love all your sibling adventures. Switzerland is so boring in making exciting connoctions (#twss)…..but I got a chocolate from Laura in my stocking this christmas – milk chocolate with bacon and potato chips. Yup. I ate it all.

  8. Contrary to most kids, I’ve always been a cookie dough person! However, rocky road sounds delicious already–I’m such a chocoholic now! 😀 I can’t even believe these are sugar free!

  9. I like rocky roach ice cream when it has marshmallow swirl instead of mini marshmallows. It’s like marshmallow fluff, and has a better consistency. Most of the sweet things I like are supposed to be sweet so it’s not really random. I have a thing for sweets that really stick to my teeth. It’s kind of gross, but they are desserts that if I don’t brush after, I will probably get a cavity. Luckily I usually eat dessert before I brush my teeth for the night so I haven’t had too much of a problem yet… 🙂

  10. Love the cranberries addition to this one. That Niki…she knows what she’s talking about! You better listen to her more often. And great touch with the almonds, btw!

  11. Admit that you’re secretly thankful to have Nikki as your sister as she’s both inspiring stories for your posts and even recipes ;).
Rocky road isn’t a classic or known at all over here but I’ve heard lots about it since entering the blog world. Your version with looks delicious though I’d go with Nikki’s initial idea and use dried raspberries. No cranberries for me.
