If I could add garlic to everything, I probably would. Well, maybe not everything. Can you imagine how terrible garlic brownies would taste? Unless, perhaps…

Anyway, garlic and bread go hand in hand. For my keto garlic bread recipe, I infuse garlic into the bread dough, then bake it with added garlic butter for good measure.

Why I love this recipe

  • No yeast needed. Meaning no kneading or rising time either. 
  • Packed with flavor. The bread is made with heaps of melted cheese, and the Greek yogurt adds that essential tanginess akin to sourdough. 
  • Perfect for garlic lovers. I’m a bit of a garlic fiend, and I made sure this recipe pulls no punches when it comes to garlic flavor. 
  • The perfect side dish or appetizer. Serve it with marinara sauce for dipping, or pair it with a big bowl of keto pasta. There are no wrong answers.

Ingredients needed

  • Almond flour. You’ll want to use blanched almond flour, not almond meal. This will help give the bread a lighter texture. 
  • Garlic powder. Make sure to use garlic powder, not garlic salt, since we’re adding plenty of salt to the recipe. 
  • Mozzarella cheese. To mix with the yogurt and add flexibility to the dough. Either freshly shredded or pre-shredded is fine. 
  • Greek yogurt. To soften the dough. I used plain, non-fat Greek yogurt, but full-fat yogurt, sour cream, or cream cheese would also work. 
  • Egg. This binds the other ingredients. 
  • Butter. A must for garlic butter! Again, use unsalted butter since we’re adding salt. 
  • Garlic. While I prefer freshly minced garlic, I’ve been known to use bottled garlic in a pinch. 
  • Italian herbs. For flavor. 
  • Parmesan cheese. For added savoriness and cheesy flavor. 

How to make keto garlic bread

I’ve included step-by-step photos below to make this recipe easy to follow at home. For the full printable recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.

Step 1- Prep. Preheat the oven and line a baking sheet with parchment paper. In a large bowl, combine flour and garlic powder. 

Step 2- Melt the cheese. In a microwave-safe bowl, melt the cheese and yogurt. Whisk until smooth. 

Step 3- Make the dough. Mix the cheese mixture with the dry ingredients. Mix in the eggs until you have a thin dough. Transfer the dough to the lined baking sheet and flatten it into an oval shape. 

Step 4- Bake. In a small bowl, stir melted butter, garlic, and herbs. Brush the garlic butter on the dough and bake for 15 minutes. Sprinkle with parmesan cheese and serve.

Arman’s recipe tips

  • Microwave until the cheese melts completely. You want a smooth, even yogurt mixture, so mixing it into a cohesive dough is easier.
  • Add the cheese mixture quickly. The longer the cheese cools, the harder it will be to mix into the almond flour. If it does seize up on you before you’ve added the flour, just pop it back in the microwave to soften it. 
  • Make garlic breadsticks. Slice the freshly baked bread into strips with a pizza cutter. 
  • Garnish with fresh parsley or basil for fresh flavor and color. 

Storage instructions

To store: Leftover garlic bread should be stored in the refrigerator in an airtight container for up to 1 week. 

To freeze: Place the bread in a ziplock bag and freeze for up to 6 months. Thaw overnight in the refrigerator. 

Reheating: Microwave the garlic bread for 30 seconds or heat in the oven at 180C/350F for 10 minutes.

Frequently asked questions

Can I use coconut flour?

I wouldn’t recommend making this recipe with other types of flour, especially coconut flour. Coconut flour is very absorbent, and without changing the ratio of wet ingredients, you could end up with a very dry dough. 

 Are onions and garlic ok for keto?

Yes, when enjoyed in moderation, onions and garlic are perfectly suitable for a keto diet.

Ingredients  

Instructions 

  • Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.
  • In a large mixing bowl, add your almond flour and garlic powder. Set aside.
  • In a microwave-safe bowl, combine your shredded mozzarella cheese and Greek yogurt. Microwave for 1 minute, until cheese has melted. Whisk together with the yogurt until combined.
  • Add the melted cheese mixture into the dry mixture. Add the egg and mix very well, until combined and a thin dough remains. Transfer the dough onto the lined tray and using a spoon, flatten out into an oval shape.
  • In a small bowl, whisk together your melted butter, minced garlic, and Italian herbs. Using a pastry brush, brush the top of the dough completely.
  • Bake the garlic bread for 15 minutes. Remove from the oven and let sit for 2 minutes, before sprinkling with parmesan cheese.

Notes
