It started with chicken

It moved on to steak, fish, tofu and veggie kabobs.

It ended in granola

No wait, it ended in a WHOLE APPLE

Then Mac n Cheese.

Then granola again. This time, with a unique twist- S’mores granola. S’mores granola which can be made on the grill or…….Over the campfire. Can I get a hell YES?

My friends who hosted the barbecue at their place for my birthday literally have everything you’d want to go camping in their backyard. They have a whole camping kit, tends and the best part- A homemade fire pit. They even bought these awesome sticks where you can put fire on them and make it look like the set of ‘Survivor’.

Since then, I’ve been spending weekends and Friday nights at their place for some drinks, eats and um….recipe experimenting. My shared apartment barely has room for an actual kitchen so a grill AND a fire pit is laughable. The weekend after my birthday celebrations, they invited me over Friday night to chill around the fire pit. I envisioned someone with a guitar, marshmallows and blankets. 

Swap the guitar and blankets for iPhones and ugg boots and we’d be more on point. The marshmallows, however, were present.

Later in the night, my friend who grilled the whole apple (seriously, that damn apple) suggested trying the grilled granola over the campfire. The first attempt landed in the pit. The second attempt smelt like burnt chocolate (See below) but the final test- Success. 

This granola is delicious, easy and most of all, perfect to consume in the outdoors with a few simple basics. You can make this two ways- Over the grill or over the campfire. For those who like things clean, smooth and crispy, go the grill way. For those who want to lick chocolate and marshmallows off their hands, go the campfire way.

I say go the campfire way. 

Just kidding, I’m a baby and hate things messy so I say go the grill way.

I wanted to make this allergy friendly, so it would be easy to make for families with little ones. Bonus- I used vegan friendly marshmallows and dairy free chocolate chips so our vegan, gluten free and dairy free friends are all covered. I used my ‘go to’ gluten free rolled oats for this by my friends at Bob’s Red Mill

Word of note- For the version made over the campfire, it burns really easily and ironically, is much more ‘soft’ unless overcooked in which it burns easily. If you want the marshmallows and chocolate melted through the granola, DO NOT add it while it’s sizzling over the campfire or even on the grill- As mentioned in this post, you will be gifted with burnt chocolate which your neighbours (or mountain lions) will not be happy about. Wait until the granola is off the grill and cooled for at least 5 minutes. Once that has been done, mix through the chocolate chips first followed by the marshmallows.

Personally, I love eating the granola, followed by the chocolate chips, followed by the marshmallows- In that order. Therefore, I allow the granola to cool completely before adding the mix ins. (Please note- the chubby hands which look like a darn 8 year old).

Campfire S'mores Granola

An easy, delicious granola made over the grill or campfire- Perfect for outdoor getaways or camping! The base is vegan and gluten free and given a s'mores twist to it to save those messy fingers but all the flavour!

Ingredients  

The base granola

  • 3 cups gluten free rolled oats
  • 1/4 cup gluten free oat bran I like it for texture- Can sub for rolled oats
  • pinch cinnamon
  • pinch sea salt
  • 1 tablespoon oil of choice or butter
  • 1/4 cup pure maple syrup can sub for agave- I didn't try honey for those non vegan

Post grilling/foil baking

Instructions 

Over the campfire

  • Coat a large sheet of tin foil generously with oil cooking spray and set aside ensuring it is completely covered, including the edges (this makes it easier to open)
  • In a large mixing bowl, combine the oats, oat bran, cinnamon, sea salt and mix well. Add the oil of choice (if using coconut, make sure it's melted) and maple syrup and stir until fully incorporated.
  • Lay the mixture in the centre part of the tin foil, preferably in a single layer, ensuring there is sufficient room to around the edges to wrap.
  • Wrap the granola up without any room for air- We don't want steamed granola here. Lay the foil patch on the heated stone/coal and allow to heat for 5-10 minutes. Using tongs, shake the foil pack roughly every 2-3 minutes to avoid sticking.
  • Remove and carefully open and allow to cool for 5 minutes. If you want melted chocolate and marshmallows, add now and mix through and allow to cool.

For the grilled version

  • Coat a large sheet of tin foil generously with oil cooking spray and set aside.
  • In a large mixing bowl, combine the oats, oat bran, cinnamon, sea salt and mix well. Add the oil of choice (if using coconut, make sure it's melted) and maple syrup and stir until fully incorporated.
  • Lay the mixture in the centre part of the tin foil, preferably in a single layer, ensuring there is sufficient room to around the edges to wrap.
  • Place tin pouch directly on the grill on medium heat. If possible, stir every 3-4 minutes, or give it a shake (we tried both) and grill the granola for approximately 10-12 minutes.
  • Remove from grill and be careful when opening pouch and give the granola another stir before allowing it to cool completely.
  • Add in the marshmallows and chocolate chips.

Notes

Use good quality tin foil- My friend said they have have had bad experiences using the cheap, supermarket brand ones which resulted in zero edible food.
Our stones/coal were around a medium/hot fire pit. For a very hot pit, cook towards the outer edge and cut cooking time by 2-3 minutes.
If there are any openings in the foil package, your granola will be quite soggy/steamed.
If you don't oil the foil well, your granola will burn.

  2. Oh man, I could eat the entire packet of this. When I was little (and still now….) I LOVED marshmallows. Anything with them always wins me over.

  3. Ohhhoooohoooo. Look at you go! There is nothing I want more than a bonfire on a summer night, but no one near me seems to have one. Making a bonfire in NYC would be a little problematic.
    I used to only make s’mores with the marshmallows and graham crackers due to my chocolate aversion, but I could think I could do this granola with chocolate chips and all. I’d probably melt everything together though because the gooeyness is the best!!

    1. Can you imagine if we made one… in Union Square? Um… you need to do it that way. Clusters of marshmallow granola.

  5. Confession: I don’t care much for actual s’mores, but give me ALL the marshmallows! I’ve become a marshmallow roasting master over the years, and they have to be -just so- or I won’t eat them. Now come over and let’s have a bonfire. Bring kindling.

    And YES to s’mores. The bff, her boyfriend, chef-friend and I are renting a cottage for a week at the end of august and we’re basically going to eat nothing but s’mores. and maybe hot dogs. And now granola because Ill basically refuse to eat anything that wasn’t made over the fire.

  9. I haven’t watched Survivor in years but I still remember that line. I can’t believe its still going strong.

    Speaking of those torches, the Hubby and I have some. We got sloppy with the whole flammable liquid part though so when we lit them, the fire went down the torch and now they are blackened, charred sticks much like the chocolate in the granola if you add it too early. This is why I always add my chocolate post cooking, once the granola has cooled.

    I think your eight year old hands are adorable and will serve you well when you get older. Mine will look like withered tissue paper which has been crumpled too many times.
