It’s no secret that when it comes to what kind of recipes I favor, no bake ones take first place. Even better if the recipes can taste like fudgy brownies or brownie batter!
Healthy No Bake Brownie Cookies
When I’m hankering for a snack or a little something to satisfy the sweet tooth, a chocolate no bake bite, ball or cookie will always fit the bill. Not only do they use just a handful of healthy, wholesome ingredients, they only need 5 or so minutes to whip up!
I ensure all my no bake recipes are healthy and can be an easy snack between meals- Always!
After sharing a plethora of healthy no bake cookie recipes (like unicorn no bake cookies and coconut no bake cookies), I got asked a similar question- If I had a recipe for no bake cookies without peanut butter.
Healthy No Bake Cookies without Peanut Butter
As this recipe comes with two tested options, only the ketogenic/low carb version requires a nut or seed butter. To make these no bake cookies without peanut butter, it’s a simple swap- Using either homemade chocolate hazelnut butter or a store-bought chocolate nut/seed butter!
I include my homemade chocolate hazelnut butter recipe here, but please be wary- If you don’t use a good quality food processor or high-speed blender, your homemade version will be gritty and quite dry. To avoid that, these are some pre-made options below (Please note- Unless listed, they are not ketogenic friendly!)
- Hazelnut Butter (Vegan)
- Nut and Seed Spread (Paleo, Vegan, Gluten Free)
- Chocolate Nut-Free Spread (Vegan, Gluten Free)
- Chocolate Spread (Keto, Sugar Free)
Healthy No Bake Cookies without sugar and without banana
Traditional no bake cookies are usually loaded with sugar and those which don’t, often use a banana for some sort of sweetness. In both options provided, no added sugar is included.
The ketogenic option uses a monk fruit sweetened maple syrup to provide sweetness to it. This brand I use also has several other flavors, but the original is the one which has the mild flavor and perfect for these cookies.
For 100% refined sugar free alternatives, pure maple syrup, agave, brown rice syrup and honey all work well too.
Healthy No Bake Cookies with dates
The original option is a simple mix of dates, nuts, and cocoa powder. Making no bake cookies with dates provides a fudge-like consistency, similar to brownie batter!
I prefer using Medjool dates, as they have a richer flavor and texture, but generic ones work well too. Be sure to soak them for 30 minutes prior to blending, as they may be quite stiff and firm.
Healthy Chocolate Chips
Adding some healthy chocolate chips to them will make these no bake cookies even better.
While any chocolate chips work, use one which is dietary friendly. These ones are stevia sweetened (also keto friendly!) and these ones are naturally paleo and vegan.

Ingredients
For the Low Carb Option (Keto, Paleo, Gluten Free)
- 2 cups chocolate spread of choice * See notes
- 1/2 cup sticky sweetener of choice ** See notes
- 3/4 cup coconut flour
- 1/4 cups stevia sweetened chocolate chips
For the Date-Sweetened Option (Paleo, Vegan, Gluten Free)
- 3/4 cup raw almonds
- 1/4 cup raw walnuts
- 1 1/2 cups medjool dates
- 1/4 cup cocoa powder
- 1/4 cup chocolate chips of choice Optional
Instructions
For the Low Carb Option (Keto, Paleo, Gluten Free)
- In a microwave-safe bowl or stovetop, melt your chocolate spread of choice with sticky sweetener of choice until combined.
- Add your coconut flour and mix well until a dough is formed. Add your chocolate chips. Using your hands, roll small balls and place on a lined plate. Press each ball into a cookie shape and refrigerate until firm.
For the Date-Sweetened Option (Paleo, Vegan, Gluten Free)
- In a high-speed blender or food processor, add your almonds and walnuts and blend until crumbly.
- Add your dates and cocoa powder and blend well, regularly scraping down the sides to ensure the batter is well combined. Transfer the dough a large mixing bowl.
- Using your hands, form small balls and place on a lined plate. Press each ball into a cookie shape. Top with some chocolate chips and place in the refrigerator until firm.

I am ALWAYS one to eat cookie dough before baking into cookies. This is why no-bake recipes are just too perfect for me because I have the happy medium of not having to wait for anything to bake! These brownie cookies look absolutely fantastic, but I’m not surprised, coming from the healthy no-bake dessert master himself!
For the Low Carb Option (Keto, Paleo, Gluten Free), I used Nutella as the chocolate spread with a syrup containing monk fruit extract. Mixed the two together and microwaved in 15-20 second bursts until liquified. after I made the batch, i put it in the fridge and next morning they came out hard as rocks. What did I do wrong?
Hi there, it sounds like you didn’t blend it smooth enough. Otherwise keep it at room temperature
