Well, I guess Niki’s been eating delicious bird food, as the homemade paleo granola is finished.
So there.
The other week, I tackled something I had intended on trying out for quite some time now- Grain free and paleo friendly granola! While I LIVE off granola (if you checked out this post, you’d know I make a batch weekly!), I tend to go through it like water. I literally will not stop until it’s all gone. I thought maybe it had to do with the combination of ingredients (and erm…..over the top add-ins) so wanted to try a more nutrient dense one. I loosely adapted this recipe, by swamping out the sesame and pumpkin seeds for crushed and whole almonds, and used pure maple syrup as the sweetener.
I was impressed with the final result but alas, couldn’t really try out my theory as Niki ate the first batch (she said mum helped her too, but mum hates too much coconut so … lies) and the second? Well, it got put into today’s recipe!
What does that mean?
THIRD BATCH IS THE CHARM.
Bring it on, (in) batches.
But first, it’s Wednesday which means it’s WHAT I ATE WEDNESDAY!
Time for some truths- I’ve been doing some dietary experimentation lately. As much I love good animal based protein (Brazilian BBQ, come tango with me!), my body has been feeling a tad ‘off’ lately. After some evil threats motivation from Alexis and inspiration from Natalie, I’ve tried to eat meat-free for a little while.
Granted, this day’s eats is a little more processed than usual, but it IS 100% meat free!
This is from last weekend where I had a friend in town from Adelaide, and then caught up with my old professor from University for dumplings (He taught me Chain Logistics. You should have seen his face when I told him what my full-time career was now…)
BREAKFAST/BRUNCH- Brioche French toast with tasteless potatoes and ketchup. SNACK(s)- My favorite ‘Escargot’ (a snail-shaped pastry), frozen yogurt (my friend loves this novelty…). DINNER- vegetarian dumpling for dinner (chives in chili oil).

Okay, let’s jump into these beautiful buns cups.
As mentioned earlier, grain free/paleo granola has been on my list for a while so once I made a SECOND batch, I used a portion for today’s recipe (following the cup theme lately) in granola cup form!
These healthy no bake paleo granola cups are slightly chewy, naturally sweet and deceptively filling- No wonder as they pack a nutrient punch in one muffin sized cup! They are what I’d label a well-rounded snack or healthy breakfast- Healthy fats, plant-based protein, and fiber, to keep you satisfied for hours. Similar to this recipe, you’ll be using your favorite paleo friendly granola as the ‘granola’ in it! Paired with some drippy almond butter and pure maple syrup, you’ll have this portable, filling and delicious snack cups ready in less than 5 minutes! Just because it has ‘paleo’ in its name, doesn’t mean it’s only strictly for those folk- It’s also suitable for those following a vegan, gluten free and dairy free lifestyle!
Speaking of snacks, these are ideal for athletes, namely- The US Swimming team! My friends at Blue Diamond are sponsoring the US Swimming Team and I reckon they’d be even better off with these beauties….Seriously. Not only did I use Blue Diamond’s toasted coconut almonds IN the paleo granola recipe, the almond butter used was made up of their natural variety!
HACK! Can’t be bothered whipping up your own paleo friendly granola? No stress, you can use any clean packaged paleo/grain free granola of choice! I know of a few brands out there, but I wasn’t a huge fan of the ones I tried AND they were pretty pricey!
Make these healthy 3 Ingredient No Bake Paleo Granola Cups and if these are considered bird food, let’s be birds.
Bird. Bird. Bird is the word.
Healthy 3 Ingredient No Bake Paleo Granola Cups
Ingredients
- 1 1/2 cups paleo and grain free granola of choice
- 1/2 cup drippy almond butter
- 1/2 cup pure maple syrup*
Instructions
- Line a 12 count muffin tray with 8 -12 muffin tins/paper cups and set aside. (Use 12 for smaller cups, 8 for large cups).
- In a large mixing bowl, add your paleo and grain free granola of choice and set aside.
- Stovetop or in the microwave, melt your almond butter with your pure maple syrup until combined. Pour over the paleo granola and mix until fully incorporated.
- Divide evenly amongst the muffin tins/cups and refrigerate for at least 30 minutes to firm up.
Notes
Paleo granola cups are freezer friendly. They can be kept at room temperature.

I’ve been non vegetarian for a while now but still do not have meat very regularly When living on my own I think the biggest reason for this is the cost. There’s lots of meat I don’t love or feel I need, but then I have something else… like ribs… and I’m all like “meeaaaattttttttttt.” So obviously I could never go back to being full veg.
These are handy! Would be great for camping or hiking.

Woohoo for the US Swim Team! I can’t wait for the Rio games to get started. I’m kinda bored lately now that the Tour de France is over…and we all know that baseball just puts people to sleep. I’d rather watch grass grow than watch a professional baseball game! Hmmm…if I had a batch of these granola cups next to me while watching grass grow, then I bet I wouldn’t be as bored. 🙂

I’m not a vegetarian, but I will randomly find myself going a whole day without any kind of meat. Chicken is my go-to, so not a ton of red meat in my house. I should actually take note sometime to see how often because I’ve never really thought about it!

Blue Diamonds seems to have so many delicious flavors- I need to try these coconut ones! I eat mostly vegetarian- I eat meat maybe 2-3 times a month, usually when I’m out at a party or something.
