I have a strong association with cookies and coffee, especially together.

During my final year of high school, my mum and my sister had an argument because my sister had just gotten brace plates in and the dentist specifically told her for two days –‘Do not eat anything remotely crispy, crunchy or something that could get embedded in your teeth’. Clearly a diet of ice cream and frozen yogurt was torture for her and she had to attack my food- Specifically these chewy chocolate chip cookies my English teacher gave me for being the ultimate suck up topping the class. 

It was around 6.30pm and I was in front of the TV with a cup of decaf coffee (remember, coffee was contraband in my mum’s eyes until I was 18) and nursing the cookies. Niki was giving me the stink eye and we were having an argument because she had a hoard of frozen desserts all to herself yet was moping over these cookies. Hoping that she’d get in trouble, I offered her one and she reached to grab it, heard my mum’s keys in the door and DROPPED HER COOKIE IN MY COFFEE.

…It wasn’t the worst. In fact, I kind of really liked it. (Sorry Niki for cracking it and pretending I was fuming mad). Mum came in, saw the cookies, saw my sister and gave ME the stink eye.

Why? 

For eating cookies before dinner.

My sister messes up and I get the blame. Typical. Your daughter here has no self control for 2 days for her own good yet I get punished. However, since then, I’ve always enjoyed the taste of chocolate in my coffee. When the team at Coffee-mate reached out, not only did they ignite these memories, the inner cookie monster in me had a desire to create a recipe to pair with it. These Healthy No Bake Dark Chocolate Raspberry Cookies are perfect to be paired with a coffee flavoured with the Coffee-mate Toll House Chocolate Chip Cookie.

By popular request, I adapted my no bake white chocolate raspberry cookies and brought it to the darker side. I was surprised to find out that there were a few out there  who are not the biggest fans of white chocolate but LOVING its darker…sibling? Hence this recipe to keep all bases covered.

These Healthy No Bake Dark Chocolate Raspberry Cookies use one bowl and require just 10 minutes to whip up. You can eat them immediately (where they will have a soft, doughy fudge like texture) or as I like to do, freeze and thaw for 10 minutes before eating. They are naturally vegan, gluten free, dairy free and refined sugar free and the best part? I’ve got my paleo friends covered with a paleo option.

For those who love a rich, dark cocoa taste, I definitely recommend you add the extra cocoa powder– especially when pairing it with a flavoured, sweet coffee as I did.

For the vegan/gluten free/allergy friendly version
  1. 1 cup gluten free oat flour
  2. 1/4 cup dark cocoa powder
  3. 1/4 cup granulated sweetener of choice*
  4. 1 scoop protein powder of choice (optional)**
  5. 1/4 cup nut butter of choice (sub for Sunbutter for allergy free)
  6. 2 T raspberry jam of choice (I used homemade raspberry chia jam)
  7. 2 T freeze dried raspberries
  8. 2 T dairy free chocolate chips (optional)
  9. 1 T - 1/2 cup + dairy free milk of choice***
For the paleo version
  1. 1/2 cup coconut flour, sifted (can sub for almond or cashew flour)
  2. 1/4 cocoa powder
  3. 1/4 cup coconut palm sugar*
  4. 1 scoop paleo friendly protein powder (optional)**
  5. 1/4 cup nut butter of choice (sub for Sunbutter for allergy free)
  6. 2 T raspberry jam of choice (I used homemade raspberry chia jam)
  7. 2 T freeze dried raspberries
  8. 2 T dairy free chocolate chips (optional)
  9. 1/4 cup + dairy free milk of choice***
Instructions
  1. Line a large plate with baking paper and set aside.
  2. In a large mixing bowl, combine the flour, cocoa powder, sweetener of choice, protein powder and mix well.
  3. Stir through the nut butter (or sunbutter) and jam and mix through dry mixture until very crumbly. Add the dried raspberries and chocolate chips and mix well.
  4. Using a tablespoon, add the unsweetened almond milk until a very thick dough is formed. Using your hands, form into palm sized cookie shapes and press firmly on the plate.
  5. Refrigerate for at least 10 minutes or consume immediately for a more soft cookie.
Notes
  1. * Adjust to taste. My protein powder was sweetened so I used half the amount
  2. ** If you don't use protein powder, ensure you use at least 1/4 cup of sweetener
  3. *** Adjust liquid accordingly. Depending on the coconut flour and protein powder you use, you may need less/more.

  1. When it comes to chocolate I am a bit oportunistic. But if I get to choose I’d say white chocolate with macadamia nuts and any fruit, dark chocolate with any other nuts and coconut with any chocolate!
    I drink my morning coffee with a splash of coconut cream and then I stick to black during the day. But when there’s Bailey’s I have Bailey’s with coffee 😉
    Today I am finally going to buy a bag coconut palm sugar. Maybe I have to sell a kidney before.

  3. I love all kinds of chocolate. I don’t discriminate. White, black, pink or red. It’s all good to me. Ok, maybe not the pink or red…but it sounded good at the time! So cookies, huh? I thought you Aussies called these biscuits! Biscuits, cookies, white, dark….I don’t care as long as you save one of these for me. Looks delicious, my friend! Also, I need you to save me a cup of coffee, too. I want to drop my cookie in the coffee for fun.

    Do you find any difference between the softness and texture of the cookies when you use different flours for the different versions? I’d be curious how the coconut flour creates a different cookie from the oat flour version

  6. I just made these and they are delicious! The perfect chocolatey bite (I made them into little mini balls instead of ‘cookies’) I only had raspberry pepper jam and thought it might not turn out, but it added a little kick. Next time I’ll add a little chili powder. I also don’t eat protein powder so I just upped the oat flour as I didn’t want to make them any sweeter.

    Good thing these are full of fiber and low in sugar or they’d be truly dangerous. great recipe!

  9. Dark chocolate for the win! Well its the only way I can satisfy a chocolate craving..and I am loving the look of this. Of course catering to suit every individual leaves no room for excuses either 🙂 . I only just about discovered the harmonious pairing that is raspberry and dark chocolate..by accident. When making chocolate brownie energy bites the other day I found raspberry instant oats staring me in the face so I chucked them in. Yeah I’ll keep doing that. And I love it alongside a hot mug of black coffee.

  10. Soooo, I rarely drink coffee (I am booze team) but I am definitely on the white chocolate team! I love dark chocolate, but sometimes it has to be really sweet and white chocolate is almost sickenly sweet. Yet I like the dark chocoalte and raspberry pairing much better! They look delicious my Dear!

  11. I like my coffee…decaf! I actually pair it with a scone for optimal eating. I’m definitely a dipper, I have lost some of my scone inside a delicious cup of joe.
    I’m a fan of any chocolate, bonus points if it has peanut butter!
