Mermaid Coconut No Bake Bars

I love keeping up with trends, especially when it comes with a slew of (tested) healthy benefits. It’s no secret that, like the unicorn food trend, Mermaid desserts and snacks have become a ‘thing’.

The mermaid smoothie bowl was trendy at the start of 2018, it was only a matter of time before it made its way into other recipes.

For Christmas, my sister gifted me with several powders to be used in recipes- Blue Matcha Powder (also referred to as butterfly pea flower tea powder), green tea powder and a pink matcha powder.

I’d seen on Instagram and various news articles discuss this new ‘Mermaid Blue Matcha’ trend, but I didn’t see the big deal about it. It wasn’t until I started experimenting with it (i.e. just adding a teaspoon or two to random recipes) so really see it in effect. 

A 100% naturally blue colored dessert or snack which is actually healthy too? Count me in!

I wanted my first Blue Matcha recipe to not only be easy but be a healthy one so most of my readers could enjoy it. While it would be easy to do a blue matcha latte recipe,  I took my 3 Ingredient Coconut Crack bar recipe and added some blue matcha powder to it. 

These homemade no bake blue matcha bars are quick, easy and delicious. They literally take less than 5 minutes and are the fun way to give a matcha and blue mermaid twist to it. Low carb naturally sweetened coconut bars which are perfect for those on a keto diet! Actually, it’s the ultimate vegan ketosis dessert recipe!

It’s also a belated birthday of a special someone who heard me complain incessantly about receiving something ‘foodie related’. As much I wanted to re-create a recipe similar to this for her birthday, she DOES live near the ocean so a mermaid inspired recipe with a healthy twist had to suffice.

What is Blue Matcha?

Blue matcha is a ground powder, derived from tea leaves, with a natural blue color.

What is Blue Matcha made of?

As mentioned earlier, it is derived from tea leaves of the butterfly pea plant. These tea leaves are specifically grown to be ground into this powder. Unlike other tea powders, blue matcha is 100% caffeine free!

Blue Matcha VS Green Matcha?

Although they both have ‘matcha’ in their name, blue matcha powder and green matcha powder have different benefits and health properties.

  • Green Matcha- Green Tea Matcha is said to be full of antioxidants. It is also known to have metabolism boosting benefits, regulates blood sugar and also can aid protection against some cancers and heart diseases. 
  • Blue Matcha- Blue Matcha is still being heavily researched to come to a better understanding of its benefits. Besides its gorgeous blue color, it has been said to reduce stress and may improve memory. 

What does Blue Matcha taste like?

Blue matcha powder, thankfully, has no evident taste. Fortunately, it will take up upon the taste of whatever you mix it with. For example, in these coconut crack bars, they taste like a bounty bar or mound bar, but a much sexier color.

Instructions

  • In a large mixing bowl, add your unsweetened shredded coconut and blue matcha powder and mix well. 
  • Add your melted coconut oil and sticky sweetener of choice and mix well- The mixture should be crumbly. Add 1/4 cup of coconut milk and mix well. If needed, add more, one tablespoon at a time until a relatively thicker batter remains. 
  • Line a large plate or tray with parchment paper and set aside. Lightly wet your hands and form the 'dough' into a rectangle or square shapes, placing them on the lined plate. Once done, place in the freezer to firm up completely.

Notes

* Maple syrup or agave works best. Honey can be a little bit too thick. To keep it ketogenic friendly, use a monk fruit sweetened maple syrup.
** Do not add too much- The batter will remain relatively crumbly, but once frozen, will firm up.
4 Ingredient Paleo Vegan Blue Matcha Coconut Bars (Keto, Sugar Free, No Bake) need to be kept refrigerated but are best frozen. Because of the fragile nature of them, you should eat them immediately.

    However, when you day coconut milk, is it the kind in the carton in the dairy section? Or, is it the canned type like Thai Kitchen or A Taste Of Thai brands?
