Sometimes, recipe ideas come in the midst of an unrelated conversation with your friends.

Since living in America, contact with friends and family back home has been limited or at best, at opposing times. When I am off to sleep, they are beginning their days and when I wake up, it’s their turn to hit the clubs hit the pillows. However, somewhere between all of that, I was able to work out a decent schedule in which I could converse face to face with my friends back home. Friday afternoons my time (EST) is usually the early mornings in Australia.

What does this entail? A pre-Friday night plans/pre-Saturday morning brunch date.

Winning.

A few Friday’s ago, I was chatting with my friend Alex who was telling me about his new job working in a law firm. Being the epic mate I am, I did a fabulous job of covering my desire to yawn when they started using legal jargon. I then started randomly giggling because I remembered this Judge Judy case where a woman sued her sister because of shoe.

BECAUSE OF A SHOE.

Anyway, after my random outburst (ironically, in the midst of them telling me about defamation cases), my mate then went on to talk about this new girl he was dating. Cue the desire to yawn again. This mate of mine is the WORST with girls. He dates them for one day and decides the next day he’s going to marry them. Moving on, somewhere in the midst of lamenting about Sarah, he randomly said ‘I’m craving a chocolate chip muffin.’ This perked me up. Not really because of the chocolate chip muffin but because he’d changed topics (briefly) and was momentarily disengaged from Sarah. 

While he continued chatting away, my mind could stop not thinking about a chocolate chip muffin.

This healthy 1-minute chocolate chip muffin has been my snack of choice since said conversation. It’s the ideal recipe to quash the sweet tooth when it attacks and is actually pretty darn healthy for you! It’s moist, fluffy and has the delicious texture of a bakery style muffin. I tried one version using a tablespoon of gluten-free cake flour instead of the gluten-free oat flour and it took it to another level! It’s much lower in sugar than traditional muffins. Naturally gluten-free and paleo, it comes with a tested vegan version. However, the texture will be slightly different and a little less fluffy. 

Initially, I used twice the amount of ingredients and was rewarded with a soup ball sized muffin- Not the worst. However, I then completely ruined my appetite for dinner (Still ate it) so am only sharing the half sized version which it itself, is incredibly generous!

Healthy One Minute Chocolate Chip Muffin
Serves 1
A delicious, moist and fluffy chocolate chip muffin recipe which takes 1 minute to whip up in the microwave but also comes with an oven tested version! It’s low calorie, gluten free and comes with a trialled and tested vegan, high protein and paleo version! A healthy snack or treat to enjoy anytime!

Ingredients
  1. 1 1/2 T coconut flour
  2. 1 T gluten-free cake flour (sub for almond flour for paleo opion)
  3. 1/2 tsp baking powder
  4. 1-2 T granulated sweetener of choice (adjust to desired sweetness)
  5. 1/2 tsp vanilla extract
  6. 1 large egg white (for a vegan version, use 1 flax egg)*
  7. 1 T- 1/4 cup dairy free milk of choice**
  8. 1 T mini dairy free chocolate chips, divided
For the microwave version
  1. In a small bowl, combine the dry ingredients and mix well. Add half the mini chocolate chips and set aside.
  2. In a separate small bowl, combine the dairy free milk with the egg white (or flax egg) and whisk lightly. Add the mixture to the dry mixture and mix until just combined. Top with extra chocolate chips.
  3. Grease a large mug or deep bowl (I used a cereal bowl) generously and pour the batter in it and microwave for 50 seconds-2 minutes (Depending on brand and wattage).
  4. Remove from bowl and enjoy!
For the oven version
  1. Preheat the oven to 180 degrees celsius. Grease a large ramekin with oil and set aside.
  2. Follow directions as above and once ready, bake in the oven for 10-12 minutes, until a toothpick comes out clean.
Notes
  1. * You can use the whole egg but it will be slightly more flat
  2. ** You may need more depending on what flour you use
  3. Double the ingredients for a huge, bakery style muffin sized treat!

  1. Mister Arman I feel slightly completely horrible for being completely bewitched by 2 of your recent recipes and not at least letting you know that you’re a blooming epic genius! So I’m just taking to swelling your head up in this here comment. Bugger, horrible and efficient so I am. Regardless, we’re talking 3 batches of your 3 ingredient brownies in like a week..and those no-bake banana blondies that happened this morning made my knees buckle. 🙂 !

  2. It’s totally appropriate to suit someone over a shoe. Those things are EXPENSIVE! I think your friend is a sensitive soul. It’s adorable that he falls so hard so quickly. I think that’s better than the alternative; using girls for a good time and leading them on. Also, he wanted a chocolate ship muffin so obviously he has great taste 🙂

  3. One friend and my mother-in-law. I love both and both bore me to death with their lengthy descriptions of totally boring things not at all interesting for anybody. But what can you do when you love them 😛

    I love baking in the microwave. I even made pancakes in the magical object! But what is cake flour?

          1. Ohh, yes, that makes sense! And no, you don’t know me- I’m a hopeless extrovert and feel compelled to write posts when I find mug cake recipes. Especially ones as AMAZING as these!!! Your blog is hilarious and I’ll be checking in for 10 minute health(ier) desserts, cos, though I have enough time to make more complicated ones I have the attention span of a gnat and short and sweet (literally) is right up my alley. Thank you!

          2. Also, coconut flour has been the bane of my existence- I can NEVER get liquid/flour ratio right- so have had a kg bag glaring at me from back in my failed-autoimmune-paleo days. Now I can turn that failed-autoimmune-paleo-flour-bag into a winning-at-delicious-mug-cake-bag, woop!

    Also, when I was little chocolate chip muffins were my thing – preferably the giant ones from tim hortons that were like half chocolate chip and had sugar sprinkled on top. This is probably the better option though, right?

  6. Ah the time difference, it’s always tricky to work out! The UK is 7 hours behind right now (8 soon after daylight savings) so it works quite well calling home our evening, their morning. Sunday is usually my Skype day!

But when one door closes, another opens…and behind this door is a delicious chocolate chip muffin. That takes 1 minute to make! Awesome!! (Just kidding…I’m sure Alex is still friends with you.   11. Honestly? My entire family is basically overseas, besides Mom and Dad. And I very rarely talk to them because it means I have to speak Polish, and while I’m fluent in it, I’m not down with the slang and have a hard time saying what I want to say. Darn language barriers…

  12. Love this recipe, thank you! I’ve made it twice now and it’s come out perfectly. I even used a whole egg when I doubled the recipe, because I didn’t have time to separate, and it was still great. I’m sorry someone is stealing all your hard work and hope karma gets them back.

  13. Arman, I’m in love with you, your blog, and especially this muffin! I never knew the wonders of coconut flour and I am OBSESSED. I add a touch of salt to mine because I’m a sodium addict, and the saltiness really enhances the sweetness and I ALWAYS double the recipe because YOLO. It’s just so stinking good! So, thank you for giving me a new snack and something to read every day! 🙂
