I was totally going to name today’s post ‘My German Valentine’.
I refrained because I don’t want to cause any rifts in any marriages AND I intend to get Stefan to teach me all things FIFA and Football.
Seriously.
The last couple of weeks, I’ve been treating one of my favorite people ever, Juli, like my personal slave/human guinea pig. I’ve had some pretty solid recipe ideas but as I’ve preached on here before- What I might consider to be absolutely delicious could be completely different to someone else.
It’s funny how such things have worked out. Before coming to America, I was worried that my recipes would be difficult to share without some solid taste testing beforehand. Back home, I’d always harass my friends with new recipes and experiments, vying for their honest opinions. Should I get the a-ok, then they’d make it on the blog. Up until my move to Los Angeles- I was pretty well covered.
In New York, I had one of my high school friends living and working there who would always be up to try something from my kitchen.
In Columbus, Alexis wasn’t just a good friend- She was my personal garbage disposal unit.
Now in LA? It’s been difficult.
While I have friends across the country willing to be taste testers (Hollar, Alison!), some things simply cannot be packaged into a USPS box and sent on it’s merry way. Cakes, some baked goods and anything requiring immediate refrigeration is out.
Who would I turn to in order to get them to try out a recipe? Juli.
I’m beyond grateful to blogging to have introduced me to Juli. It’s funny how with some people, you just ‘click’ and feel like you’ve known them forever. Not only that, someone who literally has the same persona as you. I can message the most random of things to Juli and know she’ll come back with a more random reply or response. I can read between the lines in her posts (‘I’m so excited to see my friends and be social today!’) and our desire to enjoy strange food combinations (‘I finish dark cocoa powder in 5 days!’). When I needed some recipes tried out, she was the first person I thought to ask.

So why would I have gotten Juli to experiment with these recipes? Because she’s also brutally honest. I know if she doesn’t like something she’d tell me and I appreciate that! In honor of Juli, I’m sharing this recipe. Not only that, I even got some tacky love heart shaped edible hearts. However in full disclosure, they were cheap and tasted like cardboard. They also broke apart within 2 minutes. 🙂 Saying that, today’s recipe takes less than 2 minutes and tastes anything but cheap- This healthy 4 ingredient flourless chocolate raspberry cake!
This healthy 4 ingredient flourless chocolate raspberry cake is moist and gooey on the inside (check out the pictures!) yet is slightly tender on the outside- Perfect to break into with your spoon! While it may look luxurious and sinful, it’s actually ridiculously healthy AND takes less than a minute to whip up in the microwave! Unlike traditional cakes, this healthy chocolate raspberry cake has no butter, oil, flour or sugar whatsoever- It uses the mashed overripe banana for sweetness. It’s a texture and flavor lover’s dream- The sweetness of the banana, the tartness of the raspberries and the rich notes of the dark cocoa powder = BLISS. It’s the perfect sweet snack to enjoy anytime or as a post-dinner treat! It’s also perfectly suitable for those following a paleo, gluten free, dairy free and refined sugar-free diet- There’s also a tested vegan option too!
HACK! Before you roll your eyes saying raspberries are SO out of season, hear me out- This recipe tastes BETTER with frozen raspberries because they give it a much gooier and richer texture throughout.
Also, Juli found random frozen ones in her freezer. 😀

Healthy 4 Ingredient 1 Minute Chocolate Raspberry Cake
Ingredients
- 1 small extra ripe banana almost brown is perfect
- 1 small egg for the vegan option, use 1 flax egg*
- 1-3 tablespoon dark cocoa powder I like a rich taste and usually go 3 T
- 1/4 cup frozen raspberries
- Granulated sweetener optional**
Instructions
- Microwave version
- In a high speed blender or food processor, pulse the banana, egg (or flax egg), cocoa powder and until a very fine batter is formed. Remove and stir through the raspberries, ensuring most of them are towards the centre.
- Grease a small cereal bowl or mug very well. Pour the batter in there and cook in the microwave for 60 seconds or longer, depending on desired texture.
- Oven version
- Pour batter in an oven safe dish and bake for 10-12 minutes on 180 degrees celsius for 10-12 minutes, until desired consistency.
Notes
** Adjust accordingly- I didn't need it as my banana was sweet enough
