This protein powder mug cake tastes like a gooey brownie but is completely guilt-free! It bakes up in just one minute and makes the best healthy single serving dessert.
I love my high protein desserts.
If you’ve tried my protein brownies, protein cookies, or protein donuts already, you know that I know my way around baking with protein powder.
Whenever me or my family crave something sweet after dinner and I don’t want to turn on the oven or bake something, we make a protein powder mug cake.

Why you’ll love this protein mug cake recipe
- Single serving. This is the kind of dessert that you can make for yourself at any moment when the cravings strike to satisfy the sweet tooth.
- Over 25 grams of protein. Thanks to the addition of protein powder AND egg whites!
- It tastes like a brownie. It’s moist and gooey and full of fudgy chocolate flavor. You can even reduce the cooking time to make it extra gooey.
- Microwave or oven baked. I like to whip mine up in the microwave as it takes a minute but you can oven bake or air fry it!
- Perfect post workout treat. Fiber, protein, some carbs, and healthy fats- swap out your protein shake for this instead!
Ingredients (and substitutions)
This mug cake calls for simple ingredients and pantry staples and even options to swap them out to use what you have on hand. Here is what you’ll need:
- Protein Powder– Obviously, a must for a protein powder mug brownie recipe! See below for my tested recommendations!
- Coconut Flour– This is KEY to give this brownie a dessert-like texture! Do not omit, or else the brownie will be watery. Oat flour or almond flour will work.
- Sweetener– Optional, but recommended if you prefer a sweet brownie and if your protein powder is unsweetened. Coconut sugar, white sugar, or maple syrup are both fantastic options.
- Baking powder– To ensure the batter rises and transforms into an actual brownie!
- Cocoa Powder– To enhance the chocolate flavor- Use dark cocoa powder for the ultimate rich flavor!
- Egg or Egg white– Either can be used; egg whites will yield a fluffier texture!
- Milk of choice– To smooth out the batter. I typically use whole milk or unsweetened almond milk, but any milk, including non-dairy milk, works.
- Chocolate Chips– Optional, but highly recommended.

How to make a protein mug cake
Making this mug brownie takes one minute to prepare and just one minute to make!
Step 1- Prepare the batter- Grease a large, microwave-safe mug. Place your dry ingredients into it and stir well. Add your egg white and milk and mix until a smooth batter remains. If desired, sprinkle through some chocolate chips.
Step 2- Microwave the batter- Microwave your protein powder cake for 60 seconds or up to 2 minutes. Cooking time depends on your brand of microwave.
Step 3- Remove from the mug and enjoy- Allow your mug brownie to sit for 20 seconds before slipping out of the mug onto a plate.
Tips to make the best recipe
- Don’t overcook: Mug cakes, especially protein powder mug cakes, cook quickly in the microwave, so be mindful not to overcook them. Start by cooking it for a minute, and if it is still under-done, microwave in 20-second bursts until done. Mine usually takes exactly one minute.
- Use a microwave-safe mug: Ensure that the mug you use is microwave-safe and that is a little larger than expected. This will prevent any of the cake batter from overflowing. I sometimes use a small cereal bowl to ensure this doesn’t happen.
- Mix well: Be very thorough when making the protein mug cake batter to prevent clumps. Protein powder tends to clump together.
- Experiment with toppings: Transform your high protein mug cake into something decadent by adding a scoop of protein ice cream, yogurt, or pudding on top.
Dietary and flavor variations
The beauty of any mug cake or single serving dessert is how easy it is to customize. Here are some ideas:
- Make it vegan! Swap out the egg/egg white for an egg substitute. I like using flax eggs or an egg replacer.
- Add mix-ins. Chopped nuts, berries, candy, peanut butter, etc.
- Chocolate protein mug cake. Use chocolate protein powder instead of a plain or vanilla one.
- Vanilla protein mug cake. Use vanilla protein powder and omit the cocoa powder.
- Banana protein mug cake. Add 1/2 small mashed banana.
Protein Powder 101
I’ve tried and tested MANY brands of protein powder, and different kinds can produce different results.
I often get asked if this recipe can be made with whey protein, and I do not recommend it. Because whey protein powder has a higher concentration of protein in it (as in, there are very few carbs in it), it dries out when baked or microwaved.
- Brown rice protein powder. A naturally vegan and gluten-free protein powder, this protein blend bakes well and tastes good too.
- Casein protein powder. My go-to protein powder, casein is naturally thicker than other protein powders (it’s often recommended to consume before bed!) and bakes beautifully. Casein also comes in tons of flavors, so have fun with it.
- Pea protein powder. A newer protein powder, pea protein is low sugar, low carb, and comes in both vanilla and chocolate.
- Protein powder blends. A protein blend usually mixes casein and whey or another two kinds of protein.
Storage instructions
Mug cakes are best enjoyed fresh, but can be stored for up to 2 days in the fridge, covered.
Frequently asked questions
To bake it in the oven, prepare the mug cake as instructed, but pour the batter into an oven-safe ramekin.
Preheat the oven to 180C/350F and bake the mug brownie for 10-12 minutes or until just cooked in the center.
Contrary to popular belief, you can microwave protein powder. The protein content remains exactly the same, and you will enjoy the same benefits of the protein powder, microwaved or not microwaved.
If you’d like to make a high protein mug cake without protein powder, try a keto mug cake or flourless mug cake instead.

- 1/4 cup protein powder 32-34 grams
- 1 tablespoon coconut flour
- 2 tablespoon granulated sweetener of choice * See notes
- 1/2 teaspoon baking powder
- 1 1/2 tablespoons cocoa powder adjust to desired chocolate content
- 1 large egg Can sub for 1/4 cup egg whites OR 1 flax egg
- 1/4 cup milk of choice
- 1 tablespoon chocolate chips optional
Instructions
Microwave instructions
- Grease a small cereal bowl or deep mug and set aside.
- In a mixing bowl, combine the protein powder, coconut flour, baking powder, granulated sweetener and cocoa powder and mix well.
- In a separate bowl, whisk the egg with the milk and pour into the dry mixture and mix until fully incorporated. Top with chocolate chips if desired.
- Microwave for 60 seconds and remove from microwave and enjoy immediately.
Oven instructions
- Pour batter in an oven safe dish and bake for 10-12 minutes on 180 degrees celsius for 10-12 minutes, until desired consistency.

This is one of the best protein mug cakes I’ve tried- I think you’re right about the coconut flour for better texture.
I used Panela for sweetener, it’s naturally lower glycemic and tastes a little like molasses. I also added a little more protein powder and just used a touch more milk. Had to go 30 more seconds, but it was great! Thanks for the good recipe!

I haven’t tried many protein mug cakes. But I think this was pretty darn good! Obviously, I wasn’t expecting it to taste exactly like a chocolate cake or muffin. But the flavor is all there and it definitely makes you feel like you’re not missing out. Personally, I only used 1 tablespoon of the sweetener, but I would definitely recommend this as a great recipe. Also, pretty filling. So a good tasty way of getting a little more protein at night.

Oh my god. I’ve been trying to get more protein in but I have a chronic sweet tooth, and its hard to balance them when I don’t like protein powder. This recipe is INCREDIBLE. I made some minor alterations to mine (added instant coffee + salt to bump up the choc taste) and its genuinely better than the non-proteinful choc mug cake i was making before. Color me impressed because this was wild.
Love this made it 2 times, I put sprinkle of salt and sprinkle of vanilla and cook it for hubby and me.

I make this protein mug cake at least three times a week for dessert!
So, first off, this is the best mug cake I’ve ever eaten, protein or otherwise. You don’t need any other recipes. Also, because it is so simple, it’s adaptable. However, the recipe card is all confusing. This makes one huge ass bowl or several cupcakes. If you use egg whites, 0 cal sugar, and 0% milk, the base calories are about 200, which is super low calorie for the volume. I made it twice today with casein powder and it was amazing. But the oven dried it out fast, so it will take some time to figure out. This is incredible diet food, for 200 cal, you get 4 or 5 cupcakes or one gluttonous overflowing bowl of wet cake….
I’d like to try butter or butter essence next time. For just a few more calories, the taste could be way better.

This was super easy and tasted FANTASTIC! I used unsweetened coconut milk as the milk option, organic pure cane sugar (1 tbsp). Topped off with Ghirardelli’s mini semi-sweet chips and baked for 9 min vs microwaved. I Love your recipes, I’ve tried so many and each one turns out perfectly!
I made this using psyllium husk “egg” instead of egg/egg whites and I’m realizing my protein scoop is 27g. Is that why mine was so runny, it didn’t firm up like a cake even when I microwaved it for another min after the initial min…

I made it tonight and was so surprised that they actually taste good, even with the chalky powder! One question though. Just came across your site recently, and I totally love it! I only had straight whey protein powder on hand, but tried this anyway despite your warning. Also only used milk instead of egg. Maybe it’s because the previous things I had tried were so terrible, but this tasted great to me even with the whey powder. The top was a little dried, but the inside was all lava cake-like, so I just stirred it in. Looking forward to trying more of your recipes!

I know this is an old post, but I’m hoping you’ll see and respond – would ANY rice protein powder work? I’m not able to consume any sugar substitutes (stevia, sucralose, etc.) and I can find a rice protein powder without them, but I don’t want to buy it if it’s just going to be a kitchen disaster!

This was awesome!! I just made it with coconut sugar for the sweetener and macadamia milk. Turned out great. I did have to microwave for about 2 minutes though to make sure it wasn’t uncooked in the middle. LOVE the macros on these.

I highly recommend dropping with a dollop of melty peanut butter. So good! I have to admit, I do work out like a bro, but I still can’t stand ye’ ole protein+water mixture. I just had this brownie post-workout, and I will be using it a lot from now on!

We bought some protein when we first arrived here – ingredients wise it’s amazing… Flavour? Not so much. At least david doesn’t mind it in a shake but I cant stand the taste! So this might be perfect, the powder works well in a good old protein pancake!

I’ve never had the hockey puck because I usually mash two bananas and add a scoop of PP in it and eat it like pudding. On the sauces front, absolutely either the basil or caramelized onion one. Probably the basil. In my humble opinion.
I love that you’re now calling yourself out haha I guess that’s fair! We all have pretended at one point or another to like a “healthy” thing just because we convince ourselves we should. But at the end of the day, a brownie is a brownie and that’s that! You can’t healthify it completely. But this recipe comes pretty darn close. Yum! I don’t know about anyone else but my mom would definitely disown me if I made her a typical protein ‘treat’ and told her that it was a brownie. If I do not have a microwave, is there a way I could tweak it so that I could make it in an oven :)?

So I don’t take protein supplements, but I’m tempted to pick some up just to make these non-hocley puck brownies! You had me at 1-minute! But I’m loving that you also owned that these are not ‘brownies’ in the traditional sense of the word. But hey, if they are on the healthier side AND only take 1 minute…count me in! Oh, and I used to eat pizza at every meal when I was a freshman in college. Either pizza or pretzels + Mountain Dew. I was a champion back then.

In HS, we had to make chocolate chip cookies for chemistry class. Instead of using the 2 sticks of butter, I thought, “That is way too much, I’m only going to use 1.” Yep, hockey puck cookies galore!

I’m not sure why you are calling for non-diary milk in your recipes. Soy is the leading cause of testosterone depletion in men! Do some research and take yourself off this toxic soy diet and stop encouraging others in this unhealthily lifestyle.
With all due respects, I have no issues with using soy, and my readers have the choice to use that if they wish. This recipe (along with all my recipes calling for non-dairy milk) use unsweetened almond milk. Enjoy.

I made these the last 2 nights on the trot. I 3Xed the recipe and made tiny muffins that my whole family devoured.

So….I did the unthinkable and made this recipe with WHEY protein powder. (Plain/unflavored) The result….😍😍😍I added 2 heaping tablespoons of the cocoa powder. And 2.5 tablespoons of granulated monk fruit/erythritol for sweetness. I feel that the chocolate chips are a must in this recipe! I cooked it for exactly 1 minute in the microwave and the result was this gooey, decadent, dark chocolatey…. almost lava cake like gorgeous treat!!!! It definitely was not cooked all the way in the middle which made it absolutely perfect. The top was cooked and when you got into it, the middle was gooey oh my gosh…. amazing!!!! I ate this with some homemade keto whipped cream. Now it clearly did not come out the way it was described in the original recipe but this failure was a masterpiece! So thank you! Totally satisfied my chocolate cravings 😄
