- Rosemary- A must for any good homemade French fries. Fresh rosemary is best, but dried rosemary can be used in a pinch!
- Salt and pepper- To taste.
The Instructions
Start by chopping your rutabagas into thin 1/4-inch slices and place them in a mixing bowl.
Next, drizzle with olive oil, before adding the rosemary, salt, and pepper, and mixing well.
Now, place the fries on a lined baking sheet and bake for 15-17 minutes, or until golden brown. Serve immediately with ketchup, bbq sauce, or your favorite keto condiments.
Can I make these in the air fryer?
For air fryer keto fries, prepare them as instructed. When ready to cook, add them to a single layer in an air fryer basket and air fry for 12 minutes, flipping them halfway through.
What can I use instead of rutabaga?
If you don’t have rutabaga on hand, use turnips. It’s quite similar with a slightly milder flavor.
Tips to make the best recipe
- Shake the pan every 5 minutes for them to cook evenly and be extra crispy.
- For extra crispy and crunchy fries, soak them in cold water for at least 30 minutes before seasoning them.
- Change up the flavor by adding different spices, like taco seasoning or cayenne pepper, for a spicy kick!
Storing, freezing, and reheating instructions
- To store: Leftover fries should be stored in the refrigerator, covered, for up to 3 days.
- To freeze: Place uncooked fries in a ziplock bag and store them in the freezer for up to 6 months. You can cook them from frozen, but increase the bake time to 25-30 minutes.
- Reheating: Either reheat in a preheated oven or a non-stick pan. Avoid microwaving them or else they will be limp and soggy.

I’ve been reading a lot lately about using jicama to make fries but I’ve read you need to boil the fries first. I bought one over the weekend and it’s been sitting on my counter because it seems so labor intensive!
