Not only is this the simplest dough recipe ever, but it also has the perfect texture. It’s bouncy and pillowy, and its subtle tangy flavor that suits everything from cast iron pizza to flatbread and garlic knots.
What is Greek yogurt dough?
Greek yogurt dough, or ‘magic dough,’ was made famous as part of the Weight Watchers diet program, though its popularity has made it a household staple. It uses two ingredients (self-rising flour and Greek yogurt) to create a high-protein, low-carb dough.
Some recipes call for equal parts flour and yogurt, but through my trials and recipes, I’ve found that this does not yield the best dough possible, so my measurements are different!

- No yeast needed. Which means no resting time, leavening, or constant kneading.
- No fancy kitchen gadgets, either. I usually use a bowl and a plastic spatula.
- Endlessly versatile. It’s often used for 2 ingredient pizza dough, 2 ingredient bagels, and homemade pretzels without yeast, but it also works well for desserts.
- Easy to make diet-friendly. With basic substitutions, you can make this dough vegan and gluten-free.

Ingredients needed
- Self-rising flour. Essentially all-purpose flour with baking powder and salt already added. This is the key ingredient in the recipe, and it can not be substituted. Luckily, it’s easy to make your own (a la homemade self rising flour).
- Greek yogurt. Use non-fat, low-fat, or full-fat yogurt.

How to make Greek yogurt dough
Step 1- Prep. Sift the self-rising flour to remove any clumps.
Step 2- Mix. In a large mixing bowl, combine the flour and yogurt. Using your hands, press the mixture into a dough ball. Then, transfer it to a floured surface and use it as desired.
How to cook 2-ingredient dough
It depends on your recipe, but generally, a 2-ingredient dough takes 17-20 minutes to cook.
For recipes that use smaller portions of the dough (like donut holes), the cooking time will be less. For bigger recipes that use the entire portion (like my 2 ingredient pizza dough recipe), the cooking time will be closer to 20 minutes.
Arman’s recipe tips
- Make it gluten-free. Use gluten-free self-rising flour with xanthan gum.
- Make it vegan. Use vegan coconut yogurt.
- For sweet recipes, feel free to use a flavored Greek yogurt.
- Add seasonings. The beauty of this dough recipe comes down to how customizable it is. Feel free to sprinkle in a little garlic powder, onion powder, oregano, or even bagel seasoning to change the flavor.
- Use a stand mixer. While optional, it does make the process go by quicker.
Ways to use this dough
As I mentioned, there are really no limits to how you can use this dough recipe. Here are some ideas to get you started:
- Rolled into a pizza crust and topped with pizza sauce, mozzarella cheese, and pizza toppings
- Brushed with butter and baked into 2 ingredient naan
- Cut into sticks and topped with garlic butter for garlic breadsticks
- Rolled thin and filled with raspberries to make raspberry cinnamon rolls
- Mixed with cheddar cheese and baked into biscuits
Storage instructions
To store: Wrap any leftover dough in parchment paper and store it in an airtight container in the fridge for a maximum of 4 hours. Any longer and it will become too sticky. I do not recommend freezing this dough.
Frequently asked questions
The only suitable substitutions I’ve found for yogurt for this are sour cream or Quark (a European-style cottage cheese). I can’t vouch for other types of dairy.
Thanks to the self-rising flour used, the 2 ingredient dough will rise beautifully.

Have you tried making pie crust from the 2 ingredients. Like Apple, Cherry, etc. I love this dough but can’t seem to find anyone who has made pie crust. (Guess I’ll give it a try myself.)

Okay, it took a little longer cus I had to mess with it quite a bit, but a mixture of Lupin Flour and Vital Wheat Gluten makes it perfect for a low-calorie high protein option. The conversion for flour to lupin flour is 1 cup to .5 cups and the lupin to gluten ratio is 1:1 so for this recipe it is: 58g lupin, 58g gluten and 6 oz. greek yogurt. Resulting in 515 calories 7g fat, 40g carbs, 81.6g pro. Made an amazing moist dough/bread

Hi yes it works- I recommend Doves farms self rising flour- It’s the only gluten free one that works well 🙂 (I also always use coconut yoogurt).
Can I use regular full fat yogurt instead of Greek yogurt?
I don’t recommend that, the dough will be too sticky.
Can I use fat free ricotta instead of yogurt.
I haven’t tried, but provided it is smooth and void of any clumps, I don’t see why not.

I do have a question, I do not want to waste flour experimenting. Would non fat Greek yogurt work if flavored? Accidentally purchased vanilla flavor. Will eat the yogurt..love it. But am just curious. Seems might be good in rolls or sweeter items.

I’m curious about where 1 3/4 C of flour came from? Even the WW website says 1C self-rising flour to 1 C Greek yogurt. That’s what I always use and it turns out perfectly. It seems that 1 3/4 would be extremely dry. Not a criticism, just curious!

Forgot to mention – I scaled down the ingredients by 75% to test a small batch. Could that be the reason it got so sticky? Scaling down proportionately across ingredients (25% of each) won’t work the same way?
Arman, I’m so envious of everyone who’s posted success with your tweaked ratio of flour to yoghurt.
I’ve attempted it THRICE, but it’s turned out insanely sticky on every occasion.
Just couldn’t work the dough with my fingers even after increasing the flour by a tablespoon.
The yoghurt is high fat Greek. The flour is SRF. The ratios are exactly what you say. The room temp is kinda cool so the yoghurt doesn’t warm.
Please advise. What could be going wrong?
sounds like the brand of flour is not of good quality… the Greek yogurt shouldn’t make much of a difference at all.

Worked out pretty good as a garlic pizza dough. Will try the pizza or a sweet next time. It’s so simple. I rushed it a bit but it still worked out and even the leftovers from the next day were still tasty. Thank you 😊

Armin, This is THE most versatile dough. I have made savory pinwheels, replacing the sweet fruit filling with sun dried tomatoes, garlic, onions and shiitakes, as well as left over crock pot chicken carnitas, jalapeño, cilantro and Chita for Cinco de Mayo, adding a bit of cornmeal to the dough.
